Very dry and very floral. Aging under flor in Sanlucar de Barrameda, in a humid microclimate under the influence of the sea breeze from the mouth of the Guadalquivir River, which marks his character extremely dry, light and sharp. A unique manzanilla sherry within that year after year has earned the highest awards in competitions most prestigious international wines.
The origin of the name Papirusa is Argentina and means “beautiful and elegant” and was the name of Emilio Lustau doll gift to the daughter of the manager of Bodegas Lustau in the 40s.

Dark mahogany in colour with green-amber edge. It offers vibrant notes of maple syrup, brown sugar, shoe polish, raisin and chocolate beer nuts, all very well integrated. On the palate it is smooth and rich at the beginning, full of prune and burned oranges peel flavours. Provocative spicy notes appear just before its nuttiness and terrific acidity cuts through the sweetness. With a truly unforgettable finish.
Each wine (Oloroso and Pedro Ximénez) is matured, separately in its own solera for 12 years. Once blended together, the resulting sherry is returned to a 45-cask solera for a further 3 years ageing. In centuries gone by, casks with sherry were lashed to ships sailing for the Indies and were found to develop an extraordinary smoothness and complexity. Lustau has revived this style of sherry in the East India wine.

Light, soft and round on the palate, with a long aftertaste.
There were two arches at the entrance to the winery at Plaza del Cubo, where this Amontillado was aged. Each one was dedicated to one of Emilio Lustau’s sons’ wives: Arco de Zuri (for Emilio Lustau Ruiz-Berdejo’s wife) and Trini (wife of José Luis Lustau Ruiz-Berdejo)

Crafted from estate-grown Pedro Ximénez grapes from Jerez Superior’s renowned Pago Balbaina and Carrascal vineyards, the grapes are sun-dried for 15 days before pressing, fortification, and aging for 15 years in oak casks using the traditional Criaderas y Solera method. The result is a mahogany-black sherry with intense aromas of raisins and figs, offering a rich, velvety palate that is deeply sweet, low in acidity, and endlessly long on the finish. A benchmark PX, it is both a testament to Williams & Humbert’s dedication to traditional solera aging and an indulgent choice to pair with desserts, blue cheeses, or simply enjoyed on its own.

Bright Lemon’s rich flavor is made from seven types of lemons and yellow stone fruits like peaches and apricots. It’s rounded out by bitter barks and roots, artichoke, wild thyme, jasmine and a touch of sea salt. Blended with a Spätlese Riesling from Nico Espenschied of the Rheinhessen, it’s a complex next-level aperitif. The ODE aperitif is macerated in organically sourced neutral spirit using botanicals, herbs, bark, and citrus whose flavors are extracted in various different combinations. Some together, some on their own, whatever is best for each botanical. From Jerez in southern Spain

In 1835 in Jerez, Spain, Manuel Maria Gonzalez, an ambitious 23 year old, set up the first manifestation of the company that was ultimately to become Gonzalez Byass. Young Manuel was mentored in this by his uncle, José Angel de la Pena, (affectionately known as Pepe), already a renowned authority on sherry and its production. It was natural therefore that in 1837 Manuel should give the first, tiny bodega (cellar) over to his uncle so that the older man could potter away at his passion to create a delicate sherry to his own, personal taste. (At the time dry, Fino sherries were enjoyed only by a very few locals in Jerez).
Later, Manuel sent a couple of barrels of his uncle’s new, dry wine over to his London agent, one Robert Byass. The future company partner was sceptical: “We shall see what can be done with the very, very pale wine that you so highly recommend”.
But the beautifully dry taste of José Angel’s wine proved a great success and in 1849 Manuel named what is now the world’s best-selling Fino after its creator, (tio being Spanish for uncle) – TIO PEPE
