Rockwell Vermouth offers a fresh American take on a classic European spirit.
    We’ve spent years on a quest to find the right ingredients, partners, and processes for the perfect American Vermouth. Along the way, we discovered golden cane sugar caramelized for the impeccable balance of bitter and sweet by experts in the Carolinas; California black mission figs sun-dried by a family with over ninety years’ experience; a UC Davis-developed grape clone to serve as our base; and supportive local ranchers who allowed us to forage Artemisia Californica herbs from their Carmel Valley hillsides.
    We conducted more than three hundred herb extract trials across more than one hundred recipe batches. The result is an herbatious and aromatic vermouth worthy of modern American cocktail culture.
    Handcrafted in California, each small-batch production of Rockwell Vermouth is a testament to what's possible when passionate artisans from around the country work together toward a shared vision.

SERVING SUGGESTIONS

    Traditionally prepared by using a fountain or brouilleur to drip ice-cold water into a glass of absinthe. Start with 1 oz. of absinthe and add water until it becomes entirely cloudy – usually about 3-4 oz. of water.

    Monsieur Henri Vallet emigrated to Mexico from France during the brief reign of Maximilian, the ill-fated French monarch who was deposed by Mexican nationalists three short years after his 1864 ascent as Emperor of Mexico. Like other French émigrés of the era, Mnsr. Henri Vallet chose to remain in his adopted homeland, and by the 1880s had emerged as Mexico City’s preeminent distiller of liqueurs and elixirs, including Fernet-Vallet and Amargo-Vallet, that continue to be crafted today according to his specific recipes and formulation guidelines.

     Granada-Vallet is an herbaceous bitter liqueur from Hidalgo, Mexico, inspired by traditional red Italian bitters. Jeppson’s Malört is Chicago’s local beskbrännvin — a style of bitter, wormwood-based, Swedish schnapps. First developed during medieval times for its supposed medicinal benefits, it’s traditionally associated with the farms of Skåne, in Sweden, where wormwood grows wild. In the early 1900s, it was the most ubiquitous drink in Sweden and accompanied the nearly 1 million Swedes who immigrated to the U.S. during that period. One of those immigrants was a man from Ystad, Skåne named Carl Jeppson.

During Prohibition, Mr. Jeppson was into the business of producing legal “medicinal alcohol,” and sold his brand of besk bar-to-bar. After repeal, Malört was a staple of every Swedish bar on Clark St and by that time he had sold his recipe to Bielzoff Products Co., a Chicago distillery. George Brode, Bielzoff owner, helped push Jeppson’s Malört beyond its Swedish origins by introducing it to Chicago’s Polish population, who in turn introduced it to the rest of Chicago.

Through the decades, Jeppson’s Malört has been thought of as a rite of passage and even a purported hangover cure. But we think it is more than that — Jeppson’s Malört is a drink that has helped define the Chicago bar experience. So, join us for a shot, or a cocktail! About Pechuga
Pechuga has a nose of basil, lemon, ocean, and fruit. It is almost scotch-like in its smoky taste. And yes, in addition it is salty, very soft, and tastes a wee bit like chicken. The Pechuga production season is limited to year end due to the special ingredients: Wild mountain apples and plums that must be in season and cannot be substituted. This mezcal is the most rare we have ever encountered.

Pechuga begins with Minero mezcal that has already been double distilled. In preparation for a third distillation they place about 100 liters of mezcal in the still and add about 100 kilos of wild mountain apples and plums, big red plantain bananas, pineapples, a handful of almonds and a few pounds of uncooked white rice. Next, a whole chicken breast (pechuga), skin removed, bone structure complete, is washed in running water for about three hours to remove any grease. This is then suspended by strings in the atmosphere of the still and a 24 hour, third distillation is begun. The vapor passes over the pechuga and condenses into a crystal clear liquid that has an amazing taste and smoothness. The reason for the breast they say, is so the mezcal is not dominated by the fruit…a balance. Upon completion the pechuga is removed from the still and hung in the family Altar room…the most important space in the house.

The Inspiration: Our recipe for Darnley’s Original was inspired by elderflower growing wild around the Wemyss family estate in Scotland.

We knew we wanted to create a light, floral, citrus flavoured gin in the London Dry Style which honours our distillers past.
Uses six botanicals including Elderflower, coriander, lemon peel

Nose:  Pine needles, juniper, elderflower, cloudy lemonade, floral notes
Taste: Grapefruit, juniper followed by a mellow spice
Finish: Long and dry, with a twist of floral and fruit characters from the elderflower.

Bottled at 40% ABV, this London Dry Gin has a long and dry finish and is perfect for a G&T.

OUR STORY

Casa Del Sol is a luxury sipping Tequila, inspired by the magic of golden hour and the legend of the Aztec goddess of agave, Mayahuel.

Tequila is a romantic, ritual spirit steeped in tradition and mysticism. Legend has it that in order to protect herself and her lover, the God of Wind, from her spiteful grandmother, Mayahuel created an agave with long green spires that could defend them. Enraged by their defiance, her grandmother wielded a bolt of lightning and burnt the agave to the ground. What was left amongst the ashes was a single green spire, at the base of which was a piña filled with the sweet nectar of agave, completing Mayahuel's transformation into the Goddess of Tequila.
OUR PROCESS
Grown in the Altos de Jalisco region of Mexico, the rich red clay soil and cool climate produce the best agave in the world. Cultivated using natural and sustainable practices that rely solely on rainwater and the rays of the sun, we hand-select the finest 7-year-old 100% Blue Weber Agave, ensuring the highest quality of every piña used to produce our precious spirit.
Our piñas are hand-cut masterfully by our jimadores, then halved and cooked for 8-10 hours in an autoclave that is heated using steam produced sustainably by burning the trimmings from our process. The piñas are removed from heat and crushed to extract the sugars from the agave, which transforms into alcohol, or mosto. We distill multiple times, first in stainless steel and then in copper stills to reduce harshness and remove any natural impurities. With the experience, knowledge, skill and intuition of generations, we carefully navigate the delicate balance between capturing the essential alcohols, and draining off the other components to achieve the absolute best in quality & flavor.
