Our 2016 Alexander Valley Cabernet Sauvignon is ruby in color with a magenta rim. It has an enticing nose of cassis, blackberry, vanilla, sage and spearmint. Upon entry, this wine builds from potpourri and bramble to a bright pop of raspberry on the mid-palate. A juicy finish with chewy tannins and a medium length, it will provide drinking pleasure through 2042 with proper cellaring
Our 2016 Alexander Valley Cabernet Sauvignon is comprised of 94.6% Cabernet Sauvignon, 4.0% Merlot, 0.5% Petit Verdot, 0.5% Cabernet Franc and 0.4% Malbec. In early 2017, the final blend was transferred to American oak barrels from our cooperage, The Oak, where it aged for 24 months. Half the barrels for our 2016 Alexander Valley vintage were new, providing a subtle, layered expression of bay leaf, coconut and vanilla to our wines. Blending before barrel aging—a signature of our winemaking style—allows blends to be based on the inherent qualities of their vineyard components before oak influence. Vintage to vintage, the resulting Cabernets emerge integrated and ready to drink upon release.

Our 2015 Napa Valley Cabernet Sauvignon has a deep, rich red color with a purple rim. Terret Blanc info from Wine-Searcher
Terret Blanc is a very old white wine grape variety native to the Languedoc, southern France. Along with its sibling Terret Gris, it was once widely used to make dry white wines and base wines for Vermouth (particularly when Piquepoul and Clairette grapes were in short supply). In the late 20th Century, Terret Blanc plantings dwindled in line with declining demand for both Vermouth and aromatically neutral wines.

Terret Blanc is just one of several mutations of Terret, which is one of southern France's oldest vine varieties. Terret is highly prone to mutation, and grape color can vary from vintage to vintage. Some vignerons have even reported single vines bearing blanc, gris and noir grapes simultaneously.

Terret Blanc, like Terret Gris, is extremely high yielding, and produces easily more than double the average yield of most vines. Its wines are light, fresh, dry and crisp, with subtle fruit and floral aromas.

The Minervois, Corbieres and Languedoc AOCs all permit the use of Terret Blanc in their white wines, in proportions varying from 10 to 30 percent. Classic southern French varieties such as Bourboulenc, Grenache Blanc, Maccabeu (Macabeo), Marsanne and Roussanne typically make up the remainder of these wines. A small number of single-variety Terret Blanc wines are produced, typically classified as Vin de Pays or Vin de Table. Few (if any) producers grow Terret varieties outside southern France.

A little info on our guest
Amir Peay, Owner / operator of the James E. Pepper Distillery in Lexington, Kentucky, is a proud steward of the iconic Pepper whiskey brand. Amir started early in the alcohol business with multiple jobs in the restaurant and bar industry. During his he developed a deep appreciation for both American history and Kentucky bourbon, which were furthered by his own family background. On one side of his family his 5th great grandfather, Captain John Cassin, fought in the American Revolution alongside George Washington, and then later co-founded Navy Yard in Washington, DC. On the other side of his family, his roots are traced to Butler County, Kentucky, where the Peay family cemetery remains and his 2nd great grandfather, Thomas Jefferson Peay, a Civil War veteran, is buried.
These interests led him to discover the lost legacy of the iconic Pepper whiskey brand and distillery, both of which had been abandoned for over 50 years.. He acquired the rights to the brand in 2008 and embarked upon a decade long campaign of historical research and collection of historic materials so so that the brand could be re-launched in a proper fashion. Peay partnered with existing distilleries to relaunch the brand under the James E. Pepper“1776” label, then built it into an award-winning product distributed around the world. The Success of the 1776 label allowed him to build an independent whiskey company, which in turn allowed him to fulfill a years-long mission to rebuild the abandoned and historic James E. PepperDistillery in Lexington, Kentucky. The distillery re-commenced production in December of 2017 using the original bourbon recipe last used at the distillery when it ceased production in1961.

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.

The barley variety Optic was grown in the South fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa during the summer of 2007.
These six first fill ex bourbon barrels that make up this bottling, casks 028/2007, 029/2007, 030/2007, 031/2007, 034/2007 and 036/2007 were distilled and filled in November 2007.

Round and highly finessed on the palate, this is a sweet but very subtle, finessed and salty WSU with a piquant and highly stimulating finish. Fabulous. 375-milliliter bottles. The 2016 Bernkasteler Lay Auslese (Gold Capsule) displays a discreet bouquet that needs its time to open up. It's pretty reductive at this early stage (March 2018). The attack on the palate is racy and fresh, and the wine is filigreed and precise, very clear and fresh in the well-structured finish. This (AP 05 17) is a lovely Auslese version that is on par with the bright, light and filigreed Badstube Kabinett. It's a delicious Riesling bottled at 7.5% alcohol.

Brooklyn Black Ops is a legend. We can neither confirm nor deny its existence. However, if it did exist, it would be a robust stout originally concocted by the Brooklyn brewing team under the cover of secrecy and hidden from everyone else at the brewery. Supposedly this vintage of Black Ops is aged for months in Four Roses Small Batch Bourbon barrels and re-fermented with Champagne yeast. Such a beer would raise a rich, fluffy dark brown head, and combine big chocolate and coffee notes with a rich underpinning of vanilla-like oak. Is Black Ops real? We can’t say. But we think you’ll love it.

Given this beer’s higher ABV and sturdy character, we think it’s a prime candidate for cellaring. Find a cool, dry spot away from light sources, and see how it changes in the years to come. You never quite know what will happen when you age a beer: perhaps the body will smooth out, notes of vanilla, oak, and tannins will come to the front, or hints of leather and soy sauce will make themselves known. No matter what, remember that beer is meant for drinking, so don’t keep it to yourself for too long.

This is the famous Brooklyn Black Chocolate Stout. In the 18th century, Catherine the Great, Empress of Russia, ordered a stout to be sent to her from England. This beer was brewed strong and hoppy to survive the sea voyage, and it arrived in perfect condition. Soon "Russian Imperial Stout" became the toast of the Russian aristocracy. Brewed since 1994, our Black Chocolate Stout has itself become a modern classic, heralded the world over. It achieves its dark chocolate aroma and flavor through the artful blending of six malts and three distinct mashes. Properly kept, it will improve in the bottle for many years. This stout is the toast of the winter season in many countries, and there is nothing better to enjoy with chocolate desserts, cheesecake, ice cream, fine cheeses and roaring fireplaces.

The brand offered over 100 alcoholic products and took pride in maintaining a quarter of a million unique customers by offering mail-order delivery services. The use of Sherry in American Whiskey was commonplace in the 1800s, but was lost after prohibition..
