"The Marble Brewery is a microbrewery in Manchester, England which makes cask ale from organic and vegetarian ingredients.
The brewery consists of a five barrel plant, designed and installed by Brendan Dobbin, former proprietor of the West Coast Brewing Company. The copper and hot liquor tank are situated in the back of the Marble Arch pub behind glass observation windows. The fermenters and conditioning tanks are in the cellars.
In 2000 the beers became strictly organic and later the same year they became strictly vegan. Marble's ingredients are sourced from non-intensive agriculture and they do not use isinglass finings, usually made from the swim bladder of the sturgeon, to clear the beer. Despite this the beer is seldom cloudy. Marble's head brewer, James Campbell, has said "We're busier than ever. The beer sells because it tastes good, but the vegetarian side is proving good for business. I've had people tell me that they hadn't been able to drink a pint of beer since they became vegetarians 10 years before. Then they found us." -- Wikipedia

"Our fifth vintage of this appellation Cabernet, which represents a blend of hillside and valley floor vineyards. This year included the J. Davies Vineyard on Diamond Mountain, 21%; the Somerston hillside vineyard, 20%; DeSantis on the valley floor just north of Zinfandel Lane, 21%; Lamoreaux in Oak Knoll, 34%; and 4% from two small parcels. Aging on the fine lees incorporates the oak so that the two years spent in two-thirds new barrels (a mixture of French and American) is barely noticeable. As with all of our wines, it was fermented with native yeasts and bacteria and bottled without filtration. "To some ears, the term, "imperial pilsner" might sound like an oxymoron.  How can a style as cleanly balanced and refined as a pilsner be "amped up" to imperial status?  Pilsner is arguably, just fine the way it is.    Where do you go from there?  The answer, of course: You go to eleven.
With its classic recipe and impeccable craftmanship, Reverb Imperial Pilsner echoes our Collaboration Number 1 Imperial Pilsner, produced in 2009 when with esteemed Orval brewmaster Jean-Marie Rock.  Like its predecessor, this new Summer Seasonal release is a study in delicately balanced contrasts.  A strakly simple recipe, using only Pilsner malt and Saaz hops, combined with a painstakingly complex brewing process, produce a beer of subtle elegance.  The venerable technique of "first wort hopping," -- adding hops at the beginning of the boil and allowing them to steep for a much longer time---gives the beer a refined hop aroma and flavor.  Pilsner malt makes a clear yet restrained statement up front, answered by try steady, harmonious hum of hop bitterness, traces of which linger in the dry, crisp finish.   Our Reverb Imperial Pilsner pairs melodiously with grilled seafood or chicken, or a wide variety of cheeses.  Really, though, it goes great with whatever is being served backstate.
