Chapoutier Bila-Haut is back....

People went crazy for the last vintage of this wine...the 2011 is finally here---

2011 Chapoutier Bila-Haut Rouge....$11.99

St. Louis Post-Dispatch on the previous vintage....
"While I often question wine scores given by critics, I have to admit that I am influenced by them. It's particularly hard for me to ignore a bottle of wine that costs less than $15 and has won more than 90 points because such a high rating indicates an unusual level of quality and taste. Regardless of whether I end up thinking the wine is terrific or a bit overrated, it's usually still worth trying.

Such was the case with the Michel Chapoutier 2010 Les Vignes de Bila-Haut Côtes du Roussillon Villages that received 92-94 points from Robert Parker. (The range indicates the wine was from the barrel, while a single score is given to wines tasted from a bottle.) The Wine and Cheese Place, 7435 Forsyth Boulevard in Clayton, advertised the wine for $11.99, so I couldn't resist. I'm glad I bought it, because this is a delicious wine....." -- Gail Appelson St. Louis Post Dispatch -- read the full article

Silly Scotch Ale Barrel Aged

Brasserie de Silly Scotch Ale Barrel Aged....$13.99 / 750ml
Bordeaux Barrel Aged

Info about the brewery.
Brasserie de Silly, a sixth generation independent family brewer, is located South West of Brussels in the Hainaut Province of Wallonia. Silly is a little dormant farming village just outside the old city of Enghien, which was once world famous for its tapestries. Larger farms used to have their own brewery up to well into the 20th century.

The written history of the Brasserie de Silly starts in 1852, when Nicolas Meynsbrughen bought the farm and started to keep records on his brewing activities. All farming activities were ended around 1950, when the focus turned to brewing quality beers.

One of the greatest Scotch Ales of the world. Since WWI destroyed the hops growing in Belgium, and the British army had access to hops from Kent in England, this beer has been brewed since it creation exclusively with Kent hops.

The velvety mouth feel, the darker red-ruby color, and the licorice undertones are typical for a real Scotch Ale. Candy sugar is added with the yeast in the bottle, and in the keg, for the refermentation.

This extra touch of sweetness is clearly present.

Only after aging for over 10 years, does it diminish and does a dryer taste emerge.

One of the best lace-producing beers of Belgium. Lace, meaning the sticky and beautiful foam traces left on the inside of your glass while you savor the beer in small sips.

The Wine and Cheese Place has been promoting great Artisan Spirits for some time now and we are proud to have Sonja Kassebaum, co-founder, of North Shore distillery will be on hand to taste through the following products.

North Shore Distillery from Chicago
North Shore Distiller's Gin No. 11....$29.99 / 750ml
Classic Dry Gin
Our Ode to Traditional London Dry Gin
We love to rave about our Distiller's Gin No. 6, but we didn't stop there. We also created another gin - Distiller's Gin No. 11 - which appeared for the first time in March 2007. This gin is based on the traditional London Dry Gin profile. If you are a fan of abundant juniper flavor, this may be your new favorite gin. We created No. 11 for those looking for a warm round nose, and an unmistakable dry gin flavor.

The botanicals in No. 11 add fullness to the gin without taking away from the leading role of the juniper berries. The balance is remarkable and lends itself well to classic cocktails from when gin was king.

•94 pts Gold Medal/Exceptional Rating - Beverage Testing Institute, 2008
Tasting notes: "Clear. Dense, compacted aromas of honeycomb, lime soufflé, peppery juniper, and sweet spices. A soft, silky entry leads to a fruity medium-full of citrus custard pasty, pink peppercorns, fresh herbs, and honeyed juniper berries. Finishes with an long interplay of flavor with a touch of eucalyptus and minerals. A lovely, deeply flavorful, and elegantly styled gin that will be sensational in vintage cocktails."
This makes it the second highest rated American made gin. The only American gin rated higher? Our very own Distiller's Gin No. 6.

North Shore Gin No.6...$29.99 / 750ml
Modern Dry Gin
"Distiller's Gin No. 6 is extremely smooth, with a complex blance of citrus, spice and floral notes. We create No. 6 (90 proof) by infusing our grain-based spirit with hand-selected botanicals from all over the world, along with fresh lemon zest and lavender blossoms.
If you have never tasted this gin, or you think you don't like gin, we strongly recommend trying No. 6 neat (straight) before mixing it into a cocktail or martini. This will allow you to smell and taste the complex nature of this gin. We know you will be amazed at how much you like this gin.
Distiller's Gin No. 6 is fantastic in a traditional martini - we recommend an 8:1 ratio of gin to vermouth, although this gin works well with more vermouth if you like it that way. It also adds character and intriguing flavor to a range of cocktails, such as those you'll find in our
cocktail repository.
This gin has received several awards, including:
95 pts Gold Medal/Exceptional Rating
- Beverage Testing Institute, 2008
"A superb gin that virtually bristles with fresh, 3-D flavors. Very impressive!"

North Shore Vodka....$28.99 / 750ml
"Almost every high-end vodka claims to be a "small batch" vodka. How is this possible when you see them on every shelf, in every store in the country and on the shelves of many stores overseas? Small is obviously a relative term. The daily production capacity of most of these "small batch" imports is comparable to our distillery's yearly capacity. Our small batch production is actually that.
But enough about the others. North Shore Vodka is elegant and refined. Made from distilled midwestern grain, our vodka has a smooth, refreshing taste with a pleasant clean finish. Through our proprietary process, and our focus on the quality of each and every batch, our master distiller ensures that our vodka has the individual character and quality required to be enjoyed on its own or in your favorite martini or cocktail.
We proudly share with you this wonderful vodka and truly believe that you will enjoy drinking it as much as we enjoy making it.
Visit our Cocktail Repository for favorite drink recipes using North Shore Vodka.

A Rare Creation - U.S. Made Aquavit
North Shore Aquavit....$29.99 / 750ml

Most common in Scandinavia, aquavit is a truly enjoyable spirit. In that part of the world, you can find many small and large-batch aquavits with widely varying flavors. In the U.S., the selection is far more limited. In Chicago, we have only found five aquavits (and only 3 are common), all of which are imported. We thought it was high time one was produced on this side of the ocean.

By the U.S. government's definition, aquavit's dominant flavor must be caraway seed (most commonly found in rye bread). Beyond that, the distiller uses his or her own artistic flair to add additional flavors and qualities to the spirit.

Aquavit - Private Reserve has a complex balance of spices and flavors. We begin with hand-selected botanicals from all over the world, including caraway, cumin, and coriander. These botanicals are macerated and distilled with the alcohol, and we age the spirit in new American oak to soften and meld the flavors. Unlike other aquavits, we do not add caramel coloring. All of the flavor and color is natural, and are the direct result of our process.

Enjoying Aquavit - Private Reserve
Aquavit is traditionally enjoyed chilled and straight, but it can also be sipped neat. Being avid mixologists, we have some fun and savory cocktail recipes with it as well. Visit our Cocktail Repository to find some favorite recipes with Aquavit - Private Reserve.
This spirit received 95 points - Exceptional Rating from the Beverage Testing Institute in November 2008 and was the Highest Rated Aquavit
Tasting notes: "Yellow straw color with a chartreuse cast. vibrant and stimulating aromas of pink peppercorns, cardamom, lemongrass, medicinal roots and herbs, and sandalwood follow through on a silky entry to a dryish medium-to-full body with a touch of tilled earth a long, spicy fade. Excellent flavor, purity and depth.
This spirit also received a Gold Medal in the 2007 San Francisco World Spirits Competition, and in July 2008 the folks at Spirits Review awarded it a 9 out of 10, and described it as "[i]ncredibly smooth and seductively aromatic - especially for an aquavit."

Woodford Master's Collection No. 7

Woodford Master's Collection Four Wood No.7....$84.99"Woodford Reserve announces the latest extension of its acclaimed Master's Collection which will be released in early November. This seventh release, called Four Wood, is part of the limited edition bottlings that push the limit of what Kentucky Whiskey offers by crafting rare and innovative products.

Four Wood is a unique batching of mature Woodford Reserve bourbon which has been aged in American Oak and has been finished in barrels made from Maple Wood, Sherry Wood and Port Wood. In 1999 Woodford Reserve began to experiment with wood finishing. Over the years a great deal of knowledge has been compiled on how fully matured Woodford Reserve interacts with still wine barrels, other spirit type barrels, exotic wood barrels and fortified wine barrels.

"This year's Master's Collection brings together a unique combination of exotic wood (Maple) and fortified wine (Port and Sherry) in a complex interplay of flavors unsurpassed in our craft," said Woodford Reserve Master Distiller Chris Morris. "The batching ratios of the three finishing barrels were painstakingly chosen so that no one character dominated the final product. Instead, Four Wood is so balanced that the palate effects of each of the four woods plays a discernible role in the final flavor presentation."

With each release, one of the five sources of flavor is changed for the Master's Collection expressions. These five sources - grain, water, fermentation, distillation, and maturation - are unique to bourbon whiskey, and altering just one of them creates a totally new flavor profile.

"By changing the way Woodford Reserve is matured we have created a distinctly unique bourbon for this year's Master's Collection," said Brand Manager Laura Petry. "As far as we know, Woodford Reserve is the first and only Kentucky Whiskey to use four unique barrels in the maturation process."

Four Wood is the seventh in the Woodford Reserve Master's Collection series following Four Grain, Sonoma-Cutrer Finish, Sweet Mash, Seasoned Oak, Maple Wood Finish and Rare Rye Selection offerings. Released periodically at the master distiller's discretion, the Master's Collection whiskeys are extremely limited in quantity and bottled only once, in a proprietary package inspired by the copper pot stills of The Woodford Reserve Distillery.

The inspiration for the Master's Collection is rooted in the rich history and tradition of what is today known as The Woodford Reserve Distillery. In the mid-1800s distillery owner Oscar Pepper and Master Distiller James Crow studied and recommended use of key processes like sour mashing and charred barrel maturation at the historic Woodford County distillery. These practices are still maintained in the bourbon industry, and today the distillery receives more than 130,000 visitors annually.
Tasting Notes for Woodford Reserve Four Wood

Color: Rich Orange Caramel

Aroma: Full, rich and buttery with an intensely fruity (apple, dried cherry, baked peach) character that is sweetened with hints of maple syrup and toffee.

Flavor: Warm and full-bodied with a medley of baked fruit character that layers over a nutty, spicy range of honeyed oak and caramel.

Finish: Long warm and sensuous

Just arrived...TIPA!!!!

Fresh Batch -- bottled October 23
Schlafly Tasmanian IPA -- TIPA....$8.99 / 6pk

ABV: 7.2% |   IBU: 60
APPEARANCE:  Golden, Bright
PROCESS:  Dry hopped; single hop/single malt beer
HOPS:Galaxy (AU)
MALTS:2-row malted barley
YEAST:American Ale

Schlafly Tasmanian IPA is brewed with 100% Australian hops. The Tasmanian hop, Galaxy, is a strong, aromatic variety that is different from traditional strains of the Pacific Northwest. Our brewers developed a recipe that showcases the hop’s unique flavors of citrus and pineapple.

India Pale Ales (IPAs) were first brewed in England during the late 1700s for export overseas to British soldiers in India. To keep their beer from spoiling during the long voyage, English brewers fortified their traditional pale ale recipes with natural preservatives: more malted barley, for a higher alcohol content, and more hops. In recent decades, with growing appreciation for highly hopped beers, American craft brewers have revived the style, embraced it, and incorporated new hop varieties. Our Special Release IPAs further those traditions and showcase the distinctions of hops from different hemispheres.

Bunnahabhain Toiteach

Bunnahabhain Toiteach...$83.99
Toiteach (pronounced Toch Chach) embraces a powerful proposition: the foundation for a variation on the famous Bunnahahain Islay Single Malt Scotch Whisky. What if a touch of smoke from our peated malted barley was introduced in the distillation process? The Islay character is quite distinctive from that of the Bunnahabhain single malt, known for its gentle taste. Toiteach means smoky in Scots Gaelic, reflecting the seeming contradiction that this peaty paradox represents.

This bottling offers the connoisseur an opportunity to try something truly unique and beguiling in nature. The liquid has been masterfully distilled and quietly matured at the distillery, never for a moment leaving Islay during this process.

Tasting notes:
The nose has a charming subtle peatiness with prickling strength emanating from the dram.

The taste has immediate warming flavours drifting towards a slightly sweet sherry influence with delicate peppery notes.

The finish has a good robust length with an extremely pleasant aftertaste – beautifully peated Bunnahabhain single malt for the discerning palate.

2009 Jadot Beaune 1er Cru 150th Anniversary Blend….. $44.99 750ml
2009 Jadot Beaune 1er Cru 150th Anniversary Blend….. sold out
The 2009 Beaune 150 th Anniversary Cuvee is a commemorative wine created to celebrate Jadot’s 150th birthday. The 150th Anniversary Cuvee is a selection of the maison’s best parcels in the Cote de Beaune. It boasts extraordinary richness and length, not to mention fabulous overall balance. Seemingly endless layers of intensely fragrant dark red fruit build to the effortless, huge finish. This is a fabulous showing from Jadot. It is just as impressive from bottle as it was from barrel. I think it is safe to say Jadot hit it out the park with this effort. Readers will be tempted to drink the 2009 early, so immense is its appeal, but opening a bottle before its tenth birthday is likely to be nothing more than an academic exercise. Anticipated maturity: 2019-2039.

Crown Royal Maple Finished

Crown Royal Maple Finished...$22.99 / 750ml
The legendary taste of Crown Royal with a touch of natural maple flavor. Our master blender finished our celebrated whisky with maple-toasted oak to yield a uniquely smooth experience.

It’s a perfect blend of Crown Royal's signature caramel and vanilla nose with the elegant aromas of light, fresh maple that creates a flavor profile that finishes on an authentically warm and woody note. Whisky Started, Maple Finished.

The next Colonel Taylor....

Colonel E.H. Taylor Jr Straight Rye...$61.99 / 750ml
"While most rye whiskeys are made with corn as an ingredient, this is a unique rye whiskey made only with rye and malted barley. This spicy and full-bodied 100 proof Straight Rye Whiskey pays tribute to the classic American whiskey style and the Bottled in Bond Act of 1897. Colonel Edmund Haynes Taylor, Jr. was instrumental in passing this act that safeguarded consumers from bogus bourbons being sold in the industry. With its passage, drinkers could trust that a bottle labeled “Bottled in Bond” was genuine crafted whiskey. The label required that a bottle contained only barrels distilled by a single distillery, in a single season, stored in a bonded warehouse for four years before bottling, and bottled at 100 proof. This bourbon follows these regulations and is worthy of the quality of its namesake.

On the nose, this whiskey is full of dried fruit, black pepper and a touch of fresh dill. A small sip brings an array of flavors both sweet and savory with a terrific balance of dark spices and subtle caramel overtones. The finish is especially pleasing with an oaky dryness that lingers just long enough." - website

2010 Louis Jadot great Burgs!!!

New 2010 -- very limited!!

Call 314.727.8788 to reserve

2010 Jadot Corton Pougets Grand Cru…$82.99
The 2010 Corton Pougets is a beautifully focused wine laced with sweet red cherries, raspberries, flowers, mint and crushed rocks. The Pougets is all about nuance, detail and clarity. It comes across as quite elegant, but there is an understated weight that fleshes out on the finish. Anticipated maturity: 2020-2030
(92-94) Wine Advocate (90-93) Burghound

2010 Jadot Corton Charlamagne Grand Cru…$139.99
Brilliant pale yellow. Precise, penetrating aromas of green melon, ginger, quinine and dusty stone. Silky on entry, then sappy and deep in the middle, with a powerful crushed stone character and strong limey acidity combining to give the wine uncanny energy. This is almost painful today. This extremely dense, long wine may ultimately surpass Jadot's Chevalier-Montrachet.
97/100 Tanzer, 95/100 Wine Advocate, (92-95) Burghound

2010 Jadot Batard Montrachet Grand Cru….$277.99
Jadot’s 2010 Batard-Montrachet, from the Puligny side, boasts stunning minerality. Intense notes of crushed rocks and slate caress the palate. The Batard is all nuance and class. There is a level of pure delineation and crystalline definition here that is simply striking. Today the aromas and flavors are quite bright, but the wine should fill out nicely and take on richer tones as it ages. Over the time I followed it, the Batard opened up beautifully. Anticipated maturity: 2020+.
96+/100 Wine Advocate, (92-95) Burghound, 94/100 Tanzer

2010 Jadot Gevery Chambertin Clos St Jacques…. $134.99
The 2010 Gevrey-Chambertin Clos-Saint-Jacques is all about finesse and seamless beauty. A refined, aristocratic Burgundy, the Clos Saint-Jacques is endowed with the silkiest of tannins and flat-out beauty from start to finish. The wine fleshes out on the palate with layers of red berries, flowers and licorice that gain volume and breadth with time in the glass. There is plenty of brightness and minerality to lend a gorgeous element of vibrancy on the close. I loved it. Anticipated maturity: 2020-2030.
(93-95) Wine Advocate, 93 Tanzer, (92-95) Burghound

2010 Jadot Puligny Montrachet les Folatieres….$81.99
The 2010 Puligny-Montrachet Folatieres is pure class and elegance. Floral aromatics lead to beautifully sculpted, delineated fruit in this impeccable, nuanced Folatieres. The 2010 impresses for its centered, poised personality and terrific overall balance. Today, the 2010 is quite closed, but it should emerge more fully over time, although it is likely to remain feminine. I look forward to checking in the 2010 in another year or two. Note: This is the Heritiers de Louis Jadot bottling that is sold in the US. There is also a Maison Jadot bottling that I did not taste. Anticipated maturity: 2015+.
93+/100 Wine Advocate, (91-94 Burghound), 93/100 Tanzer

2010 Jadot Beaune Clos de Ursules....$59.99

The 2010 Beaune Clos des Ursules is dark, rich and gorgeous. Black cherries, plums and spices take shape beautifully in the glass, while the wine’s structure appears later. The balance of fruit, structure and acidity is so seamless that nothing really stands out here. The Ursules needs a few years in bottle to come together, but it is shaping up to be a gem. The Clos des Ursules shut down fairly quickly in the glass, suggesting it may be a number of years before the wine becomes truly expressive. Anticipated maturity: 2018-2028.
Rated 91-93/100 The Wine Advocate (91-93) Burghound

2010 Jadot Clos Vougeot Grand Cru...$134.99
The 2010 Clos Vougeot bursts onto the palate with a rush of dark red fruit. This is another wine that had a very slow malolactic fermentation (at the time of this tasting there was a portion of the wine still finishing its malo). The 2010 needs time to find its balance but the raw materials are superb. Anticipated maturity: 2020-2030.
Rated 91-93/100 The Wine Advocate (91-94) Burghound

2010 Jadot Puligny Montrachet Referts...$68.99

2010 Jadot Chassagne Montrachet Morgeot...$69.99
In contrast, Jadot’s 2010 Chassagne-Montrachet Morgeot Clos de La Chapelle, from deeper soils on the back of the Abbaye de Morgeot, possesses gorgeous depth, but it is also tightly wound and inward. Cool, saline notes dominate today, but there is more than enough fruit to allow the 2010 to develop beautifully in bottle over the coming years. The huge, textured finish leaves a lasting impression. It would be fascinating to taste both of the Jadot wines from the Abbaye de Morgeot in ten years’ time. Anticipated maturity: 2015+.
Rated 92/100 The Wine Advocate

2010 Jadot Meursault Perrieres...$95.99
A cool, inward and beautifully precise wine, the 2010 Meursault Perrieres is also the least expressive of these Meursault premier crus. Intense layers of minerality frame the fruit in this impeccable, pedigreed Perrieres. There is no question the 2010 needs time, but how much? Today, it is super-impressive. Stylistically, it melds together the intense fruit of the Charmes with the minerality of Genevrieres. The endless finish is simply breathtaking in its beauty. Anticipated maturity: 2015+.
Rated 95/100 The Wine Advocate (90-93) Burghound

2010 Jadot Beaune Bressandes...$41.99
Tasting note: Here too there is very gentle wood sitting atop the slightly curious nose that is mildly sauvage in character with an earthy and somewhat herbal nose that also evidences hints of pear and citrus. There is good volume and richness to the relatively full but refined flavors that display a subtle minerality on the solidly persistent finish.
Rated 89-91 Burghound

2010 Jadot Chassagne Montrachet La Romanee...$96.99
"There is nothing obvious about the 2010 Chassagne-Montrachet La Romanee; rather this is a wine that stands out for its superb textural finesse and pure elegance. The 2010 is a decidedly weightless, pure Burgundy endowed with stunning inner perfume and fabulous overall balance. Stylistically, it is the polar opposite of the Cailleret. Today, my sense is that the 2010 will age beautifully, but time will tell. In 2010, the La Romanee is all about finesse. Anticipated maturity: 2015+."

Snow Day -- Black IPA

A snow day stock now.
New Belgium Snow Day Winter Seasonal 6pk

In 2003, we had a massive 37-inch snowstorm over two days in Fort Collins. Everything shut down for a couple days – no work, no school, no cars. The only way you could get around was by ski or toboggan. When we began brewing Snow Day, we looked to this one storm for inspiration. The dark characters of the malt bill reflect the dark stormy sky at the beginning of the snowfall. But on the third day, the sun broke through and everything was glorious! The name Snow Day evoked joyful freedom. Everyone remembers waiting for the school report as little kids. When you heard your school was closed, you suddenly had all day to play in the transformed, white landscape. Well, that’s the kind of emotion we put into this beer.

Pleasantly hoppy, Snow Day carries the subtle chocolate and caramel flavors of a new brewing malt known as Midnight Wheat. The Styrian Golding, Centennial and Cascade hops bring the backbone of hoppy bitterness to complement the roasty undertones. This beer is the deep garnet of a roasted walnut and presents a creamy tan head, floating artfully atop. Snow Day is bold and hoppy, drinkable and strong.
It reminds you to enjoy the unexpected.

Just the facts Ma'am...

Lambics are truly the “wines” of the beer world. With wine one speaks of “gout de Terroir” because the land so influences a wine’s flavor. With Lambics, one must speak of “gout de Tonneau SM“ because each cask (tonneau) produces a lambic that matures and tastes different. Blending these Tonneau is such an art that there exist independent Geuzestekkerij (blenders) who buy young Lambic then age and bottle it under their own name.

Lambickx™ is Vanberg &; Famille’s brand of hand-selected and blended lambics. Every Lambic with the Lambickx™ name is made from casks personally tasted and chosen by Don Feinberg, one of the first importers of Belgian beer to America and founder of the first Belgian-only brewery in the U.S. Don chooses his Lambics for their complexity, brilliance and drinking excellence both by themselves and as exquisite accompaniments to food.

Blend of Lambics and Kombucha

De Troch Lambrucha....$8.99 / 750ml

"Vanberg & DeWulf’s Lambrucha is the first time that two different types of live yeast drinks have been blended together to create a completely new live yeast beverage. Lambrucha is the brainchild of Don Feinberg, with technical yeast management assistance from Dr. Roger Mussche (the Belgian brewing scientist who is the world’s leading authority on Brettanomyces yeast). Lambrucha is blended at Brouwerij De Troch in Wambeek — the heart of Payottenland. Lambrucha combines hand-selected house Lambics that are a minimum of one year old, and specially brewed organic Belgian kombucha.
Kombucha has been enjoyed in Central Asia for millennia. A deliciously tart effervescent beverage is created by pitching a mushroom into tea and letting it ferment. Kombucha is renowned for its probiotic, health-giving benefits. Lambic is the legendary spontaneously fermenting beer from the Senne River Valley in Belgium. Lambic contains some 500 different yeasts. Lambic is the signature contribution to brewing science practiced for centuries in Belgium.
At 3.5% alcohol by volume, Lambrucha certainly is closer to beer than tea—but we think it makes more sense to describe it as “two great yeast cultures, one great drink.”

Don’s notes: Beautiful pale gold color with hints of rose. Aromas of sage, rosemary, cucumber and sea spray come bracingly forward. A lemony sourness greets the palate but is quickly replaced by even more refreshing flavors of pine, mint, rosemary and cedar. A tight, small bubble carbonation cleans the palate completely leaving a sense of tonic refreshment.

Great with all manner of seafood
• raw, grilled and served in salads—from sushi and oysters
• grilled tuna to shrimp salad, to pickled and creamed herring
With composed salads—think pea shoots, baby carrots, salsify and artichoke…
With tourte ardenaise—crispy pork brawn with gingered endive apple stew chestnut crisp and spicy mustard sprouts
