Bainbridge Distillery

Bainbridge - read more about their story on their website

Bainbridge Legacy Organic Vodka...$25.99
This is a full-flavored vodka four-times-distilled from organic soft white wheat and evocative of the grain vodkas distilled in Eastern Europe during the late 19th and first half of the 20th centuries. It has a wonderful grain character, with a hint of sweetness derived from the wheat, followed by both citrus and berry notes, and finishing with the aroma of grain and vanilla.
JUDGED THE WORLD'S BEST VODKA from a field of more than 1000 competitors at the World Drinks Awards in London.
“DAMN NEAR LUSCIOUS, 4, quite possibly 5 stars - superb, sophisticated distillate of complexity and approachable tastes that keep unfolding with time but never losing in intensity or quality”
F. PAUL PACULT, THE SPIRIT JOURNAL

Bainbridge Vanilla Organic Vodka...$29.99
Our first flavored vodka combines the lush and sensuous flavor of genuine organic Madagascar vanilla with our award winning four-times-distilled Bainbridge Legacy Vodka.
The process is simple. We take 3 or 4 of the highest quality hand-harvested USDA certified organic Madagascar vanilla pods and place them in each bottle by hand. The vodka and vanilla beans spend at least 4 months ”getting to know each other“ in the bottle. As the vodka slowly seeps into the pod it liberates its lush vanilla essence.
Unlike artificially flavored vanilla vodkas, or vodkas flavored with processed vanilla extracts, our vanilla vodka's flavors are rich, full and complex, with a taste and aroma like no vanilla vodka you've ever tasted.

Bainbridge Heritage Organic Doug Fir Gin...$29.99
A wet gin by definition, this American wheat gin features 10 organic botanicals including juniper, orris and angelica root, 2 types of citrus peel, whole licorice root, coriander, cardamom, fennel seed and Douglas fir, freshly harvested in northeastern Washington State a day prior to the final distilling of each small batch.  The flavor is full and lush, without being harsh or astringent, with pronounced essences of juniper, licorice and cardamom with a heady evergreen fir aromatic. Our gin's unique green tint comes from the Douglas Fir, extracted from the needles by our still's Carter-Head inspired set up.
GOLD MEDAL WINNER, BEVERAGE TASTING INSTITUTE'S INTERNATIONAL SPIRITS REVIEW
“KEENLY CEDARY, SPICY, AND HERBAL, a dry gin whose ABV warmth appears on the tongue, sweet, with definite herbal and botanical touches, especially juniper, coriander and caraway.”
F. PAUL PACULT, THE SPIRIT JOURNAL

Bainbridge Battle Point Organic Wheat Whiskey...$47.99
A single-grain whiskey, fermented on estate-grown soft white wheat utilizing a unique combination of yeasts usually employed to make Irish and Scottish whiskies, double distilled and aged for 2 years in new, No.3 charred, ten gallon American white oak barrels.
The flavors are rich and complex, with notes of vanilla, eucalyptus and sherry, and a nose redolent of fresh barrel char, and a lingering finish with a bit of salt-air brine.
JUDGED BEST AMERICAN WHEAT WHISKEY by World Drinks Awards in London.
“Brilliant delivery, full of quick-tempered spicy attitude. The oils are sublime and sugars mostly of the muscovado bent. Some vanilla and butterscotch show light oaky intent while the sugars remove the spices completely. Soft and satisfying, The spices demanded from wheat whiskey hit all the right spots. Very well made and impressive.”

Bainbridge Yama Mizunara Cask Whiskey...$499.99
SOLD OUT - Trying to get more

BAINBRIDGE YAMA
Bainbridge Yama is the first-ever non-Japanese whiskey to be aged exclusively in hand-crafted barrels made from rare Mizunara oak harvested from the Japanese island of Hokkaido.

THE BAINBRIDGE YAMA PROJECT
Bainbridge Yama Single Grain Japanese Mizunara Cask Whiskey takes its name from the village of Yama, founded on Bainbridge Island in 1883 by Japanese immigrants coming to Bainbridge Island to start new lives and realize new opportunities. The small Yama village was a thriving place, with a traditional Japanese teahouse, Japanese baths, Buddhist temple, a hotel and shops and populated by Japanese families with lots of children. The closure of Port Blakely Mill in 1922, an employer for many of the men living in Yama, caused village residents to relocate to different parts of the island where they took up farming or opened shops and other small businesses.

More than 90 years later the Yama village site, overgrown and reclaimed by nature, represents the last undisturbed Issei (First Generation Japanese immigrant) village site in the United States not destroyed by development. Bainbridge Organic Distillers' founder Keith Barnes first envisioned Bainbridge Yama Single Grain Mizunara Cask Whiskey as a way to draw attention to this piece of history from the distillery's Bainbridge Island home. To this end the bulk of the profits from the sale of Bainbridge Yama Mizunara Cask Whiskey will support ongoing efforts to document and preserve the unique Japanese and American history and heritage of the Yama village site for future generations. BAINBRIDGE YAMA JAPANESE MIZUNARA CASK WHISKEY
Bainbridge Yama Mizunara Cask Whiskey begins its journey from grain to glass in the fertile fields of Washington state's Skagit Valley where organic Full Pint and Alba barley is grown on a family farm near the saltwater confluence of the Skagit River and the Puget Sound. After harvest the barley is trucked 77 miles to Bainbridge Organic Distillers facility, where the un-malted grain is milled, mashed and fermented.

After fermentation the mash is double-distilled. Cuts are made "by hand" and based on the qualities of the spirit as it flows from the still. After the second distillation the whiskey is diluted to 126.5 proof in preparation for being introduced into the virgin Mizunara casks.

Bainbridge Organic Distillers' Mizunara casks begin their life in the forests of the northern Japanese island of Hokkaido. A very small number of Mizunara oak trees (Quercus crispula) are hand selected for harvest based on the vitality of the tree and the straightness and quality of the wood. After harvest the Mizunara oak is quarter-sawn and then air-dried in Japan for at least 3 years. When the rough wood has fully seasoned Bainbridge Organic Distillers imports the wood to the United States.

After inspection the rough sawn wood is sent to a small 4th generation family-owned barrel cooperage where it is expertly fashioned into 10 and 15 gallon barrels. Bainbridge Organic Distiller's Japanese Mizunara oak casks are made from some of the most rare and celebrated wood in existence today.

After barreling Bainbridge Yama whiskey will rest in 100% virgin Japanese Mizunara oak cooperage until it is mature and ready for bottling. The combination of small barrel size, oxidation encouraged by the porous nature of Mizunara oak and storage in the warm stillhouse within sight of the copper still creates what we think are the perfect conditions for maturing whiskey in this incredibly unique and special wood. The finished whiskey bears this out. Ruddy copper in color, Bainbridge Yama Whiskey is un-chill filtered and free from additives, flavor enhancers and coloring agents, and bottled at 90 Proof or 45% ALC./VOL.
TASTING NOTES
Bright aromatics of mango, vanilla, toasted sandalwood, tropical flowers, marzipan and star anise. Flavors open on nutmeg and clove, pear and toasty wood notes, settling out to honeyed vanilla and toasted marshmallow. Finish is warm and lingering with fading spice and a pleasant oak grip.

Still 630 first BOURBON - Monon Bell

Still 630 Monon Bell Bourbon...$35.99
Monon Bell Bourbon is our very first bourbon recipe. We are proud to release this spirit as a tribute to those who do battle in this legendary football game between Wabash College & DePauw University. Steeped in tradition and heroism, this battle is for pride. Undying glory awaits the victors as the Monon Bell’s beautiful, clear ringing sings of their victory. In honor of these Indomitable Spirits, we humbly offer this bourbon as tribute. May tales of your valor live on and be shared over a glass of Monon Bell Bourbon!

Wabash is my alma mater, and though it is a tiny Div III school in the middle of a small town in the heartland of Indiana, it has left an indelible mark on me. I would not be the person I am today, nor be lucky enough to count the quality and character of my friends, had I not gone to school there. This football game played every year as the last game of the season is the definition of sport. These student-athletes, competing not for national audiences nor million dollar endorsements, instead lay it all on the line for their school, their teammates, and themselves. If the definition of character is what you do when no one is looking, then these players who compete at their very best as the eyes of the nation are elsewhere are great examples of the fabric that makes this country great. Quiet heroes toiling in obscurity. They seek not fame, the beautiful ringing of the Monon Bell sings more sweetly over the years. This bourbon honors them.

This game pits two schools against one another in a rivalry that exceeds almost all others in the nation in time and tradition. The oldest rivalry west of the Allegheny Mountains where over 120 games have been played, the schools started competing in 1890 and have played every year since 1911. The 300lb Monon Bell, taken from a locomotive that connected the two towns, is the trophy. The inaugural release of Monon Bell Bourbon honors the 123rd Monon Bell Classic, which takes place at Wabash College in Crawfordsville, IN on Nov 12th, 2016. Wabash leads the overall series 60-53-9 and has won the last seven straight games.

Our very own Parker, of the cartoon and cat loving variety, created this cult classic character back in our 17th season. Appearing in several episodes under another stage name that was deemed inappropriate, our executive producers and editors decided that a name change and further character development— a 4-month hiatus in Bourbon barrels—were necessary to satisfy our most ardent and demanding viewers.

Also of note:
Just read an article that Avery is not producing their Demon Series anymore.  We still have some in stock.

The wort of this beer looks radio active. Pale, wheaty and green tinted from a post boil hop burst. After a short and efficient fermentation we dry-hop it as many times as it takes and carbonate it softly.  We love brewing beer, thinking about beer, dreaming about beer, talking about beer, breathing beer, changing beer, exchanging beer etc.  Chill it perfectly and crush it deductively.

Against the Grain CANS

Against the Grain Bloody Show..$14.99 / 4pk 16oz Cans
Come one come all, Welcome to the Bloody Show
A collaboration beer between Mikkeller and Against the Grain Brewery. Simply a Blood Orange Pilsner. Brewed with German Pilsner and munich malts, hopped with American Citra, Columbus, Amarillo and Czech Saaz and fermented with Danish lager yeast. Then we added the zest and juice from a shit-ton of blood oranges. The result is a nice easy drinking lager that exhibits a tart and citrusy aroma and flavor.
ABV 5.5% IBU 17.3

Against the Grain Citra Ass Down...$12.99 / 4pk 16oz Cans
Citra ass down and crush this beer!
This is a very hop forward American style IPA. Brewed with Pale, Vienna, Munich and wheat malt for a solid base for all American hops, focusing mainly on the variety “Citra.” Citra hops are a relatively new variety introduced in 2008. It was bred as a hybrid of a number of different hops, including Hallertauer Mittelfrüh, U.S. Tettnanger, East Kent Golding, Bavarian, Brewers Gold, and other unknown hops. The resulting hop, Citra, has a distinct citrusy and tropical fruit flavor and aroma. In Citra ass down we used American Columbus for bittering and 11# of Citra at the end of the boil for late kettle addition flavor and aroma. Then we added 6 more pounds Citra and 5# Centennial post fermention for aroma. Rebrewed for your tasting pleasure!

Against the Grain 35K Stout....$11.99 / 4pk 16oz Cans
With this beer, we’re putting in a swimming pool! And if there’s enough
left over, we’re gonna fly you all down here to help us dedicate it.
Not your typical “Jelly of the Month Club” beer. Dark roasted malt and bittersweet cocoa and coffee flavor and aroma burst from this pitch black milk stout. The full body and sweetness are derived from the addition of lactose (aka milk sugar) which is not fermentable by beer yeast. A healthy dose of Nugget and Crystal hops provides a counterpoint to this ale’s rich and complex maltiness.

Against the Grain Brown Note...$11.99 / 4pk 16oz Cans
Caution: so good it WILL make you shit yourself!!!!
The brown ale to end all brown ales. Enjoy it, because there is no longer any reason to drink another. You’ve reached the pinnacle. A healthy blend of traditional British malts give this popular style a semi-sweet, biscuity, slightly roasted flavor. Oats thicken the mouthfeel, and a handful of specialty malts add complex chocolate, toffee, and caramel notes. The hops are mostly traditional, earthy British hops, but we cocked it up a bit with some Cascade late in the boil just to show those snooty Brits that we don’t approve of that Constitutional Monarchy crap.

Marz Jungle Boogie

Marz Jungle Boogie...$19.99 / 4pk 16oz Cans
