The elongated finish suggests that while it can be enjoyed now, patience will be generously rewarded with additional years in the cellar. We find the typical aromatic and flavor spectrum of the typical Kiwi SB to be very abrupt and we find many of those wines lean in the mid palate. Consequently, we often find the back palate acid structures to be unnecessarily aggressive. So when Stuart and James Downes told us they were making SB that a Riesling drinker would appreciate, they had our attention. Sauv Blanc in Elgin can often be a bit green and vegetal. Most attempts to build the mid palate of these wines result in an overly pungent version of that aromatic component. By using a tiny amount of barrel fermented and aged SB, they’re able to create a wine with great length and raciness, drawing out these wonderful mineral notes, but with plenty of power and richness in the mid palate. Production is around 2500 cases.

The Murray McDavid "Mystery Malt" Speyside’s Finest 15-Year 

Nose:  Nuts (Candied & spiced), dried pitted fruits
Palate: Candied orange peel, chocolate covered dried fruits (dates, cherries, apricot)
Finish: Long, elegant finish, with cinnamon and other baking spices.

The term "Mystery Malt" in whisky refers to a single malt Scotch whisky whose distillery of origin is intentionally not disclosed. This is done due to a confidentiality agreements between independent bottlers and distilleries.

Pinpointing the distillery behind a "Mystery Malt" like this requires interpreting subtle clues in the whisky's description and tasting notes. The term "Speyside's Finest" suggests a well-regarded distillery in the Speyside region. Based on the details (15 years, Oloroso Sherry maturation, cask strength), a few distilleries come to mind:

This is a bitter apéritif liqueur created following the “Italian Bitter of Turin” recipe dating from the 1860s. It was originally produced in Turin, Italy under the name Torino Gran Classico. The recipe was purchased in 1925 by the small Swiss distillery E. Luginbühl, and a version has been produced for mostly local consumption ever since. Gran Classico was developed by reverting back to the original recipe; it is made from a maceration of 25 aromatic herbs and roots including wormwood, gentian, bitter orange peel, rhubarb, and hyssop. The maceration also creates a naturally attractive, golden-amber color, and no additional coloring is added.
