Odin, the chief god of Norse mythology, was a forceful but complicated being of many moods – the symbol of battle, victory, and death, but also of wisdom, poetry, and prophecy.

With this hearty, complex ale, the ‘Hand’ brewers imagine Odin in later years, when his victories on the battlefield were but shadowy memories, his reflections tended toward loftier themes such as life’s meaning, and his drink would have been a deep, dark, and contemplative one.

The beer was originally meant to be a Strong Ale, but the brewers decided to focus on making great beer without extreme alcohol. At approximately 11% ABV, Haandbryggeriet says Odin’s Tipple has a great body without being “old engine oil” and it “is still very drinkable due to the wild yeast we use”. The beer is made with a single strain of wild yeast and the brewers keep it simple. No added coffee or chocolate; the deep dark color and rich flavor come from lots and lots of chocolate malt.

Wadworth 6X Bitter

For 80 years 6X has been delighting discerning ale drinkers, so Wadworth resisted the temptation to tamper – they still use the original recipe, in a brewery that’s little changed from Victorian times. Copper coloured, modestly malty and with a hint of red berry fruit, it’s everything a traditional pint should be – but you probably know that already!

6X entices you in with a waft of malt and fruit on the nose and a restrained hop aroma. The same characteristics emerge on the palate but with more intensity, leading to a lingering ‘malt loaf’ finish. A fine balance of a rounded biscuity body with a gentle hop bitterness provides this outstanding ale with a refreshing drinkability.

Wadworth’s brewing books document the first 6X brew taking place on 16th June 1921, and it has been brewed in the Devizes brewery ever since. But Why 6x?

During the middle ages few could read so barrels of ale were marked with an X to denote strength (the more Xs, the stronger the brew). Between the two World Wars, Wadworth brewed an XX Mild, an XXX ale and an XXXX pale ale. When XXXXXX was introduced as a stronger variant it’s believed that one of the lads in the brewery shortened this to 6X – and the rest, as they say, is history.

Rated 95/100 RateBeerMon Dieu, that’s good! This is one rich and très hoppy golden ale.

In France, this beer is called Les Frères de la Bière. We thought that that was a bit much for Americans to get their tongues around, and the brewer agreed with us that it wasn’t such a good name, anyway. But there is a meaning to Les Frères de la Bière. The Friends of Beer is an interesting project carried out under the auspices of the European Community — a collaboration between brewers in England, France, and Belgium, in which Daniel Thiriez, the owner and brewer at Thiriez, is very involved.

This particular beer is an interesting joint effort with an English brewery. It uses one hop varietal, a rather unusual hop grown in Kent called ‘Bramling Cross.’ The malt is from 2-row spring barley grown in France. (The English brewer is brewing to the same recipe, with the same ingredients, for sale in the U.K., under the French name.) The result has certain characteristics of an English bitter: it’s not too strong, very dry, and eminently drinkable. The idea is of course that you should be able to drink a lot of it over the course of a long sit-down with friends, in the English ‘session beer’ tradition. The English, of course, excel at creating deeply flavorful beer at a low abv — the ideal beer really, since you can enjoy that flavor rolling over your tongue for hours without leaving your lunch on the floor — and Extra is in that vein. With all those hops, you might even see Extra as a more traditional English IPA. Yet since Daniel Thiriez is a little ‘Belgian-oriented,’ by his own description, and uses a Belgian yeast that he obtained from the Belgian brewing school where he studied, the beer also has a good bit of the earthy, spicy character of a saison.

In fact, Thiriez Extra is much more like the original hoppy saisons that were created by Belgian farmers in earlier times. Those beers, meant to sustain the workers in the fields in the heat of summer, were always low in alcohol. It’s only in recent times that the standard saison beer in Belgium has begun to creep up past 4% into the 5′s and 6′s, and even to 8% in some cases. We view Extra as a throw-back to that earlier era. It may well be a throw-back as well to the time when there was no clear border between France and Belgium, and French bière de garde was probably very much like the Belgian saison. (Scholars know very little about what bière de garde was like, since it ceased being brewed sometime between the two world wars, and has only been ‘revived’ in the 80′s, without benefit of any model to work from. Saison brewing has been more continuous, though, again, changes have occurred since the style has been commercialized.) The Thiriez brewery is itself a bit of a throw-back — a classic farmhouse brewery that Daniel Thiriez purchased from a pair of brothers whose family had operated there for generations. It has been outfitted with more modern equipment, but it is wonderfully picturesque, and the yeast that Daniel carefully chose lends a classic farmhouse character.
It helps also that Daniel is a brilliant brewer.

For the first edition of the Stillwater Import Series I traveled to the village of Beerzel, located in the Antwerp province of Belgium. Here I teamed up with brewmaster Jef Goetelen to craft an authentic Belgian version of my liquid interpretation of the Spring season. A recipe originally contrived a few years prior as a collaboration brew with my good friend Paul Kretzer. The base is German barley & wheat, with a touch of Belgian aromatic; accented with grassy hops and an array of spring botanicals (heather, chamomile, lavender, & dandelion). Like a fresh meadow in spring.

St. Feuillien’s Saison is what the Belgians call a “beer of the terroir”; a traditional farmhouse ale with all the rich flavors of the fertile land of southern Belgium. The region of Hainault, where St. Feuillien is located, is the traditional home for this style of beer. It originated as a beer made by and for farmers. Thirst quenching, not too strong, and great with food.  Despite their long and storied history, Brasserie St. Feuillien has never made a beer in this style. But after 138 years they put together a knockout! Winner of the Best Saison in the 2009 World Beer Awards, this is a beer with the pedigree and the quality to become a classic in the
style.

Tasting Notes
A warm, golden blonde with a beautiful farmhouse character featuring hints of melon and apricot. Full-bodied, fruity and yeasty, Saison has a rugged, charming character with a lot more flavor than it’s 6.5% ABV

The California Gold Rush lured thousands west to "see the elephant," a 19th-century metaphor for the hopeful but risky pursuit of happiness, adventure, and fortune. As early as 1849, India Pale Ale - prepared by British brewers for export to India by adding dry hops to barrels of hoppy ale - was also heading west, from England around the Horn to San Francisco. Thirsty ‘49ers savored the best imported IPAs, but it wasn’t until 1975 that Anchor, Americas' original craft brewery, pioneered the revival of dry-hopped handmade ales. Now, that tradition fast-forwards to an adventurous new brew: Anchor IPA™.

Anchor IPA™ is made with 2-row barley malt and fresh whole-cone hops, its bright amber color, distinctively complex aroma, spiky bitterness, malty depth, and clean finish unite to create a uniquely flavorful, memorable, and timeless craft IPA.

The elephant you see on Anchor IPA™ was hand-drawn by our label artist, James Stitt. To "see the elephant" was a popular 19th-century expression that originated with a tale that predates the California Gold Rush.

There once lived a farmer who had heard of elephants but had never seen one. He longed for the day when he might catch a glimpse of this rare, exotic creature. When the circus came to town, he loaded his wagon with fresh produce and headed to market. On the way, just as he'd hoped, he came across the circus parade, nobly led by an enormous elephant. The farmer was ecstatic, but his horses were terrified. They reared and bucked, overturning his wagon and scattering its precious contents in the road. "I don’t give a hoot," exclaimed the farmer. "I have seen the elephant!"

The elephant became the universal symbol of the Gold Rush, as evidenced by the journals, letters, and sketchbooks of the forty-niners. Whether or not they struck it rich in the diggings, those plucky pioneers would forever treasure their California adventure as the defining moment of their lives. Have you seen the elephant?
