Grand Teton Grand Saison Farmhouse Ale....$8.99 / 750ml

Saison is the original summer beer. Originally brewed in southern Belgium for thirsty farm hands, these crisp, bubbly, and refreshing brews demand to be consumed on hot summer days. Our Saison follows centuries of tradition, using European hop varieties—Hallertauer Magnum, Styrian Goldings, and Strisselspalt. We also use a very light base malt accented by just a touch of Wheat and Munich malts. Finally, we ferment the beer very warm with a well-known Belgian yeast strain to bring out the spicy flavors that are common to Saisons. This style pairs well with an astonishing variety of foods. Drink it with grilled sausage or chicken, green curry with coconut milk, or a summer salad with vinaigrette and crumbled bleu cheese.
The Grand Saison is a beer to commemorate warm weather. As its flavors will diminish with time, this is not a beer to be cellared. We recommend you savor it during the long summer days while it is fresh.

Note: from 55+ year old vines totaling .29 ha with .125 ha in Charmes and the other .165 ha in Mazoyères
Tasting note: An elegant and admirably pure nose offers up notes of cool red berries, earth, humus and a smoked meat character that leads to rich, serious, mouth coating and broad-shouldered flavors that possess ample volume and muscle on the hugely long and intense finish. This is even more backwards than the Cazetiers and should be capable of rewarding up to 15 years of cellar time as the tannins are fine but dense. If there is a nit, this is actually no more complex than the Cazetiers at present though it may be in the future. Either way, this is a terrific effort.

"Tasting note: A completely different expression is on display here as the typically overtly animale side of Cazetiers is readily evident along with fresh dark berry fruits that merge into rich, full-bodied and quite serious flavors that are supple but detailed, all wrapped in an overtly mineral-driven and powerful finish. This is much more primary than any of the prior wines but it already delivers pitch-perfect Cazetiers character. This is really quite good and absolutely worth considering."

Tasting note: Here the very fresh and distinctly sauvage nose speaks of primarily dark berry fruit aromas that lead to richer and riper medium-bodied flavors that are mouth coating, serious and sappy as the old vines character is well and truly in evidence, particularly with respect to the structural elements on the long, balanced and energetic finish. A very high quality villages.

Tasting note: A completely different expression as there is a bit less aromatic elegance but more complexity to the layered and discreetly earthy red berry fruit aromas that precede the equally stony and beautifully detailed middle weight flavors that offer excellent intensity but the primary structural difference between this and the Baudes is the longer finish. Lovely and harmonious with very ripe phenolics that should permit this to age very well.

Tasting note: Here the nose is clean and fresh with a discreet touch of wood framing overtly earthy and attractively layered dark berry fruit aromas that possess a hint of animale that can also be discerned on the rich, full and mouth coating flavors that possess obvious volume and punch plus I like the texture of the vibrant finish that offers fine depth and length. The other aspect that I like is all of the Gevrey character this exudes. In a word, lovely.

2008 Serafin Gevrey Chambertin 1er Cru Les Corbeaux....$93.99
Tasting note: Mild reduction knocks down the nose somewhat so be sure to decant this if you're going to try a bottle young. Otherwise, there is good freshness and vibrancy to the earthy and slightly animale middle weight flavors that possess a mildly more refined tannic spine and a superbly long finish. I very much like the overall sense of depth and this is very Corbeaux as the hallmark sauvage character is quite strong.

Tasting note: A very fresh nose speaks clearly of pungent Gevrey style earth with a mix of upper and lower register aromas of red and dark berry fruits and underbrush hints that carry over to the supple, detailed and lightly mineral suffused flavors that are delicious, persistent and reasonably complex. Lovely and this should reward 5 to 8 years of cellar time.

We are buying our own barrel of Knob Creek 9 Year Old Reserve.  We are excited to be choosing and bringing in the first Single barrel of Knob Creek to St. Louis.  

We want your valued opinion, after all you will be the ones ultimately purchasing the bottles.  We are all casting our vote also and with your help, we will pick the best barrel.   Come in and give us your opinion.

I just got confirmation that will taste both the Deschutes Version and the Boulevard Version of the Collaboration on Friday August 5th at The Wine and Cheese Place in Clayton for Craft Beer Week.   Plus you get to talk to Boulevard's brewer Jeremy Danner about the project!!!


This is probably the only chance you will be able to taste the same beer brewed at two different breweries at the same time.  We have heard that the Deschutes Conflux No.2 version will not be distributed here.  


We will have the Boulevard Collaboration No.2 available for sale.  The Deschutes Conflux No.2 will be for tasting only -- not for sale

North Coast Brewing Co., Fort Bragg, CA, is releasing its newest premium beer, Grand Cru. Reminiscent of the brewery’s Gold Medal-winning Twentieth Anniversary Ale, North Coast Grand Cru is brewed with pilsner malt and agave nectar, then aged in oak bourbon
barrels.

“We’ve had a good time exploring the brewing possibilities outside of the standard beer styles,”
said Mark Ruedrich, Brewmaster and President. “Grand Cru doesn’t fit neatly into any established category. We brew it exclusively with Pils malt with an addition of agave nectar in the kettle. The beer is then fermented with the same Belgian yeast that we use to ferment Le Merle. It’s subtle, complex and lightly hopped with a deceptive 12.5% ABV, and aging it in oak gives this unique beer an extra dimension. Boulevard Collaboration with Deschutes!





Boulevard Brewing (Kansas City, MO) has teamed up with Deschutes Brewery (Bend, OR) to produce a Collaboration beer---actually two!  (This rumor has been out there for awhile).  Each brewery will brew the same recipe for the "White IPA" at their respective breweries.  Boulevard will release theirs in the 750ml Smokestack Series and Deschutes will release theirs in 22oz Conflux series.

The big question -- will we see Deschutes version of this beer is released so that we can get both beers?



Boulevard Smokestack Series Collaboration No.2.
"Boulevard Brewing Company and Deschutes Brewery are jointly crafting a beer described as a "White I.P.A.," slated for release in Summer 2011.  Combining Boulevard's expertise at making Belgian-style witbiers with Deschutes' skill at brewing hop-forward ales, the beer puts a new spin on the idea of collaborative brewing.   Working from a single recipe, brewmasters Steven Pauwels of Boulevard and Larry Sidor of Deschutes are producing two separate beers, more than 1,600 miles apart.
Pauwels and Sidor first began exploring the idea of working together after they frequently crossed paths at the craft beer events around the country.  The two have much in common in their brewing philosophies, each pushing the envelope whenever possible, yet remaining dedicated to the time-honored traditions that keep them consistent and grounded.
Despite the beers' shared recipe, each of the two versions will develop a distinct, unique identity, to be reflected in their naming and packaging.  Boulevard's half of the equation, christened Collaboration No.2, will be distributed throughout their 20-state region in kegs and 750ml bottles, as part of the Smokestack Series seasonal lineup.  Brewed at their Bend, Oregon facility, Deshutes' effort will be the second beer in their new Conflux collaboration series, and will be distributed throughout their 18-state region in kegs and 22-ounce bottles.

Ludwig Farmstead Creamery Raw Milk Cheeses

Handcrafted cheeses with a distinctly firm texture, which become more flavorful as they age for three to four months.  Made in single batches from day-fresh milk from our own cows, and traditional starter cultures custom blended by cheese maker Fons Smits who uses old-world customs and state-of-the-art technology imported from Holland.


Jake’s Wheel - Named after the founder of the creamery and based on his favorite cheese, the Havarti.  This is a mild semi-soft cheese  known for its creamy, buttery consistency.  We make this cheese in wheels instead of the classic brick shape and finish it a bit harder to give it more character. A great cheese for any occasion that is well liked by many. We use this as a base for many flavored cheeses including Habañero, Dutch Garden Herb, Italian Garden, Bacon, and Asian Spice. 


Feather Ridge - Our first cheese, from a recipe inspired by the great European mountain cheeses like Fontina, Vacherin, and Mobier. The combination of special cultures and the high quality of our raw milk creates a semi-hard to hard cheese which is aged for four months. It has a nice firm consistency but tastes creamy, with complex flavors and a mildly sharp finish.



Kickapoo - This cheese is inspired by the German Buterkäse, then the recipe is tweaked and mixed with special cultures resulting in a semi-soft to semi-hard cheese. The flavor of this cheese is surprisingly fresh. As the cheese ages for three to four months it develops a hint of pineapple flavor, similar to the great Italian cheese Piave.
