Japan’s first dedicated artisanal gin distillery. We’re located in Minami-Ku, in the south part of Kyoto City, close to the Fushimi region, famed for hundreds of years for its production of delicious nihon-shu (Japanese sake).
Our aim is simple: we want to produce the best dry gin that we can,
utilising local botanicals wherever possible. We want every element of our final product to be completely authentic, from the local sourcing of the ingredients through to the designand craftsmanship of the packaging.
Our journey to bringing this first bottling of KI NO BI to you has been fascinating and educational and has thrown up a myriad of exciting possibilities for future products and collaborations.

The first Japanese gin made in Kyoto.
KI NO BI (‘The Beauty of the Seasons’) is inspired by tradition and is distilled, blended and bottled in Kyoto. Our gin is made in a recognisable dry style but with a distinct Japanese accent. KI NO BI Kyoto Dry Gin is created with Japanese botanicals such as yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries. Bottled at 45.7% ABV, KI NO BI uses a rice spirit base and peerless water sourced in the famous sake–brewing district, Fushimi.

Mastering not only the science of distillation as others have done before, but also the age-old art of blending, we separate the botanicals in our gin into six different categories: Base, Citrus, Tea, Herbal, Spice and Floral and distil each category individually. Then we blend them in perfect balance and create the distinct KI NO BI flavour.

Jeppson’s Malört...$18.99
Jeppson’s Malört is Chicago’s local beskbrännvin — a style of bitter, wormwood-based, Swedish schnapps. First developed during medieval times for its supposed medicinal benefits, it’s traditionally associated with the farms of Skåne, in Sweden, where wormwood grows wild. In the early 1900s, it was the most ubiquitous drink in Sweden and accompanied the nearly 1 million Swedes who immigrated to the U.S. during that period. One of those immigrants was a man from Ystad, Skåne named Carl Jeppson.

During Prohibition, Mr. Jeppson was into the business of producing legal “medicinal alcohol,” and sold his brand of besk bar-to-bar. After repeal, Malört was a staple of every Swedish bar on Clark St and by that time he had sold his recipe to Bielzoff Products Co., a Chicago distillery. George Brode, Bielzoff owner, helped push Jeppson’s Malört beyond its Swedish origins by introducing it to Chicago’s Polish population, who in turn introduced it to the rest of Chicago.

Through the decades, Jeppson’s Malört has been thought of as a rite of passage and even a purported hangover cure. But we think it is more than that — Jeppson’s Malört is a drink that has helped define the Chicago bar experience. So, join us for a shot, or a cocktail! A well-balanced, dry gin made from a base of sweet potato shochu resulting in extra body and a touch of sweetness that is balanced by the bright, tart notes from the yuzu, exotic citrus, and sansho pepper from the locally sourced botanicals. The locally sourced and very rare citrus fruit, hyuganatsu and hebess, give YUZUGIN a remarkably unique flavor profile.

Michael grew up and went to school in the little town of Trimble, TN. It was a great place to raise kids--so his mom says. Michael was...well let's just say...full of life. The chief of police and Trimble judge called Michael: little Al Capone. At the age of 12 Michael was sneaking into the back of the Silver Dollar Cafe. This is where his interest for liquor started. The owner of the bar, Lewis Drummond, sometimes would want to throw Michael out because he was so young but Michael's uncle, Ralph Alford, was the bars number one customer and would tell Lewis to, "leave that boy alone."
Everybody within four counties used to come to Trimble to visit the Silver Dollar and that's where Michael's fascination with alcohol started. He would hang out and watch older people come into the bar, (I should hope so he was only 12) sit down with friends, and start drinking.
It was amazing what drinking did to them from Michael's point of view. They would go from being normal to getting real happy then loud to dancing. Michael still remembers family members going from drinking together to fighting each other back to drinking together. "It's all in a good time," is what Ralph would tell Michael. So from that point Michael wanted to be in the liquor business.
His first step, which was a huge one, was building the world's largest biker bar the Full Throttle Saloon. Now the Full Throttle Saloon is a house hold name (as seen on TruTV) and he plans to do the same with his Full Throttle S'loonshine (an authentic Tennessee Moonshine)
Michael, like a lot of people, had to leave Trimble to make his living but it's great that he is returning back to his hometown to build his moonshine distillery. It's also great how all the people of Trimble have welcomed him back. This will bring lots of tourists to Trimble and put some of the small town people to work. The distillery is set to open for business in the Fall of 2013 but the moonshine will hit the stores this June (2012). If you do not see it in your liquor stores or bars, ask for it!

A four barrel blend of Pinot Noir from Santa Barbara County, Babs is a collaborative effort between The Wine and Cheese Place and Pinot Noir legend Adam Lee of Clarice Wine Company and previously Siduri. Juicy red fruits dominate the nose, with subtle notes of umami and sandalwood. The palate reveals a fruitier side, with notes of bing cherry and pomegranate at the forefront. Bright acidity and minerality are balanced by partial whole cluster fermentation, and a small amount of new oak creating a long juicy finish. Fruit for the project was sourced exclusively from cooler blocks of the Sierra Madre and Peake Ranch Vineyards located in the Santa Maria and Sta. Rita Hills Appellations. A beautiful representation of central coast Pinot Noir!




The Blending Session

We did a zoom tasting and blending with Adam Lee with the barrel samples!

Our goal was to showcase the sophistication of Adam's wines while making an approachable blend that our customers would enjoy in every setting, with or without food. We began our blending session by tasting five distinct barrels; each had its own personality.


Barrel #1 was jammier than the others and very juicy. 
Barrel #2 was similar to the first, but with stronger structure and balance. 
Barrel #3 had wonderful umami flavors. 
Barrel #4 had a strong backbone and fresh notes of cranberry and cherry. 
Barrel #5 was bold and spicy.

After mixing and tasting many blends, we decided on a combination of Barrels #2 (structure/balance), #4 (acidity/berry flavors), and #5 (spicy notes). It was a great experience that yielded a fantastic wine!
