This Whisky is distilled from malted barley from the own fields in upper Austria. It matured in a combination of hand-selected Chardonnay and Trockenbeerenauslese oak casks for minimum 7, 12 or 15 years. These casks are hand-selected by master-distiller Hans Reisetbauer, from wellknown austrian winemakers Heinz Velich and Gerhard Kracher.

Hans Reisetbauer
In 1990 Hans Reisetbauer planted his first apple orchard of 1.5 hectares in Kirchdorfergut and on September 16, 1994 Christian Carl of Göppingen built a still from plans designed by Hans himself. Quickly Hans gained notoriety in 1995 by winning “Schnapps of the year” at the Destillata specialist trade fair. Reisetbauer has been named “Master Distiller of the Year” by the Austrian gourmet guide A la Carte in ’04, ’07, ’08 and ’09. Most recently he won the Falstaff’s “Spirits Trophy Award” in 2010.

Hans Reisetbauer’s dedication in his orchards, detail in distillation and constant quest for new innovations has led him to be considered one of the finest producers of Eaux de Vie in the World. In order to control the quality of his products, Reisetbauer mostly uses fruit grown on his own property. Hans has also done careful comparisons to find the best water for use in his process, exclusively using spring water from Mühlviertel. As Hans explains, “Temperature, time and aeration during fermentation, as well as condition of raw material are important factors influencing the quality of the final product.” Following fermentation, the mash is distilled twice with the heads and tails being discarded. Only the “heart” of the distillate is kept as it contains the most prized volatile and aromatic components from the raw material and is responsible for creating distinctive aromas. Lastly, the product is diluted with water to bring it to 41% alcohol. Reisetbauer’s Blue Gin follows the same detailed approach, utilizing a recipe of 27 botanicals from 10 different countries, and strictly Mulan variety wheat harvested from Upper-Austria.



Heinke Darting
Though Darting has a history of grape growing dating to 1780, it was not until 1989 that the winery began to sell all of their grapes as wine under their own label. The family also maintains a highly regarded vine nursery, selling their grafted vines throughout Germany.

Vineyards in the hills around Bad-Dürkheim are prime sites, planted on south facing slopes of marl and chalky limestone. Current winemaker Helmut Darting is a protégé of famed winemaker Hans-Günter Schwarz, having completed his studies with a practicum at Müller-Catoir. You can see this influence in the reductive winemaking techniques Helmut employees at the winery. He believes firmly in minimal-intervention winemaking as he feels that “every time you handle a wine, you diminish it.” These practices include fermenting as slow as possible at a cold temperature in stainless steel, using only natural yeasts, and avoiding the introduction of oxygen in the winemaking process. Red wines are fermented on their skins in stainless steel and then transferred to large oak casks. The only time the wine is handled after the first racking is to finish the wine by bottling. Resulting wines preserve the original grape character and showcase the outstanding vineyards they hail from.

A Master Blend of 70% single malt, and 30% premium grain whisky made from unmalted barley in the Dunedin distillery. Aged for 21 years in American oak, ex-bourbon casks.

The Story:  Years ago, in the Willowbank distillery in Dunedin, a batch of whisky was made in the distillery’s pot-stills using unmalted barley. This “single grain whisky” was then blended with 70% of their single malt, and placed into American Oak, ex-bourbon barrels. Twenty-one years later, we have carefully selected casks and bottled them as “High Wheeler”.

We mature Laphroaig in seasoned oak barrels, charred before filling to impart a slight sweet vanilla nuttiness. Original Cask Strength Laphroaig is barrier-filtered only just, to remove the small char particles present. This means you will enjoy Laphroaig exactly as we made it.

In extremes of temperature and when you add water it may appear a little cloudy – this is the natural condition of a malt of such a peaty pungence and uncompromising purity. Adding a little water releases a rich aroma of peat smoke with some sweetness and strong hints of the sea.

Bottled in July, the 2015 Cote Rotie Ampodium is fairly full-bodied and quite rich. The black olive and raspberry notes verge on being jammy but are balanced by peppery spice and firm, savory tannins. Give it 5 years in the cellar to settle down, and drink it over the next decade and a half or more. For an entry-level wine, it's remarkable.

This wine has developed beautifully in recent vintages as the oak influence is less than it was just a few years ago. Bottled in July 2017 and composed of 86% Cabernet Sauvignon, 9% Petit Verdot and 5% Cabernet Franc, the Dominus 2015 Proprietary Red Wine leaps from the glass with notes of fresh wild blueberries, crushed blackberries and black currant juice with touches of wild thyme, underbrush, iron ore and aniseed with wafts of lavender and pencil lead. A few years back we went Mezcal crazy with a bunch of tastings to help educate people about Mezcal. This year is the year of the Vermouth for The Wine and Cheese Place.  Why, because we want to!  We are excited about Vermouth and have an amazing selection and want to share it with you. 
Vermouth is not just an afterthought in a Martini.  Vermouth can be the STAR of your summer drink.   If you have a good bottle of Vermouth, just pour it on the rocks with some club soda and an orange slice and you will be surprised how refreshing this drink is!

This was the distillery’s first product, invented by the founder, Philibert Routin. Made with 24 plants and spices, this vermouth is made with Cabernet Sauvignon and Jacquere, then aged in oak barrels to add complexity and depth of flavor.

De Muller Iris Vermouth



DeMuller Vermouths have been made using the same recipes since their founding, almost 70 years ago. Over 150 botanicals are used, many of which are native to the winery’s Mediterranean setting. Today, their winemaker is Gemma Martinez. The winery is located in Reus, near the coast of the Mediterranean Sea in Catalonia. Reus is considered the epicenter of Spanish vermouth and DeMuller is historically regarded as one of the top producers in the area. Their wines are made with a base of white wine, infused with 150 botanicals. The winery uses the actual plants for their infusions, rather than the concentrates used by many producers. Highly guarded, the recipes include] cinnamon, orange peel, chamomile, rosemary, ginger, oregano & vanilla. The wine is then fortified with Melazas, a liquor made from molasses, and lightly sweetened. Their Vermouth Reserva is produced in a manner similar to Sherry and was recently named “Best Vermouth in Catalonia.” The wine is aged for a year in used oak barrels, giving it more body and smoothness than traditional vermouth.
