The Name
Where did “Yippee Ki-Yay” come from? Is it a real expression of joy popular with cowboys in the 19th century Western United States? Is it part of the greatest one liner in movie history? Was it influenced by the phrase ‘Yippie-yi-yo-ki-yay’ from the 1936 hit song “I’m an Old Cow Hand from the Rio Grande” about a 20th-century cowboy who has little in common with cowpunchers of old and sung by Bing Crosby in the film “Rhythm on the Range” (also sung later by Roy Rogers and Frank Sinatra) and considered one of the Top 100 Western songs of all time? We’re not sure. But we are sure we like how we feel when we say it... and recommend you use it every chance you get.
Back Label Story

We confess...we didn’t coin the term “Yippee Ki-Yay”. Moreover, we didn’t paint the picture on the front label. It’s an historic poster (Gift of The Coe Foundation and Henry B. Balink) now at the Buffalo Bill Center of the West in Cody, Wyoming (centerofthewest.org, you really ought to visit). Furthermore, we didn’t distill the whiskeys in this bottle - it’s our Double Rye! However, we did come up with a combination that we think will make you say...Yippee Ki-Yay drinkers of horrible tasting cheap flavored uisge beatha! One day, just for fun, we put Double Rye! into oak barrels that had originally been used to age two different types of wine and discovered an all-natural, not disgustingly-sweet sipper for the rest of us.

Mizu Shochu



Mizu Shochu Saga Barley...$26.99
Handcrafted in the traditional way, this classic shochu is single distilled from tasty Japanese two-rowed barley, black koji rice, and the pure, famous waters of Black Hair Mountain (Kurokami-yama). At 70 proof it is more concentrated, like shochus of old, to enhance the subtle complexities, body and finish.
TASTING NOTES: Delicate, earthy, lively, delicious. Floral, sake-like aroma with notes of banana bread and fresh grains. Buttery texture. Drinks like a young whisky with hints of ripe melon and vanilla custard.
DRINKING SUGGESTIONS: Enjoyed best on the rocks with a single large ice (you can try with a slice of cucumber). Or enjoy as a highball, topped with soda water and garnished cucumber slices. We also suggest mixing with fresh ruby red grapefruit juice and a splash of soda, or mixing with iced green teas.


Mizu Shochu Lemongrass...$29.99
In the small onsen town of Takeo, just to the east of Arita, lies a tiny cluster of lemongrass fields that have become a source of local pride, and inspiration for this unique shochu. Handcrafted in the traditional way, it is single distilled from a mash of locally farmed rice, freshly harvested, organic lemongrass and the pure, famous waters of Black Hair Mountain (Kurokami-yama).
At 70 proof it is more concentrated like shochus of old, yet the introduction of lemongrass is a first in shochu production; an innovative twist by master distillers Shinji Wada and Hirofumi Okoba. Grown organically atop nearby mountains, the freshly cut lemongrass is added to a rice-based mash just three days before distillation. Oils from the leaves commingle with local rice and white koji to create a distinctively refreshing shochu.
TASTING NOTES: Bright, citrusy, delicate, delicious. A blend of sake-like aromas and lemongrass on the nose. Silky mouthfeel. Hints of meyer lemon and a light sweetness that brings to mind rice pudding.
DRINKING SUGGESTIONS: Enjoyed best on the rocks, or as a highball, topped with soda water and garnished with a slice of lemon. Also enjoy with citrusy soft drinks like lemonade, iced green tea, or a variety of tropical mixers like coconut water (with a spritz of lemon).



Mizu Shochu Green Tea...$33.99
It is said that the very first seedlings of green tea in Japan were planted by the Zen Buddhist monk Myoan Eisai on a mountain in Saga Prefecture more than 800 years ago. This heritage is a great source of pride for the local farmers in the nearby town of Ureshino, which is well known for producing some of the most sought after sencha in all Japan. The legacy also serves as our inspiration for this wonderfully rich and fragrant Green Tea shochu.
Hand crafted in the traditional way, the shochu is single distilled from a mash of local harvests; two-rowed barley, black koji rice, and freshly picked, then steamed, Ureshino green tea leaves. At 70 proof it is more concentrated like shochus of old to enhance the aroma, complexities, body and finish. Rich, bold, fragrant and delicious.
GREEN TEA DETAIL: origin: Ureshino, Saga variety: yabukita harvest: nibancha (2nd flush/picking)
TASTING NOTES: Rich and fragrant with notes of matcha, passion fruit, unripened banana, fresh grass and cacao. Buttery texture with a long, delicious, lingering finish. Green tea ice cream, banana and hints of white peach.
DRINKING SUGGESTIONS: To savor the beautiful flavors of this Green Tea shochu, we suggest the traditional methods of shochu enjoyment; neat in a small snifter; ‘mizuwari’ (with a splash of cold water); ‘oyuwari’ (with hot water), first added to a ceramic cup, followed by the shochu in a 1:1 ratio; or ‘sodawari’ (with soda water) in a highball glass over ice.

One of the vintage's top wines, the 2008 Chateauneuf du Pape la Combe des Fous continues to drink splendidly. It does dry out a bit as it sits in the glass, but it should continue to drink well through 2020 at least.

Other people may add flavoring to achieve a desired result. But that’s not our style. This unique spirit was born the hard way, with time leading to full maturation. The story of this spirit is as much about the barrel itself as the RallyPoint Rye Whiskey that went into it.

The SPIRIT-
This whiskey started life being distilled twice, then aging in a charred American Oak barrel from right here in Missouri. At this point, it was well on it’s way to becoming another standout Single Barrel of our RallyPoint Rye Whiskey. We intentionally select a barrel that has special traits and ideal flavors to compliment the finishing barrel. But this particular spirit is destined for something more…

The FINISHING BARREL-
This special barrel we use to add delicious flavors and nuance to our RallyPoint changes from batch to batch. However, we always use an old bourbon barrel that was used a second time to age actual maple syrup. When it is emptied after this second fill, we get our hands on it and fill it with a hand-chosen matured RallyPoint. Time alone dictates the length of maturation in the finishing barrel. It’s not ready until all the flavors achieve harmony and compliment each other.

From Dave (the Other Guy): Hard to remember the last time I drank an Oud Bruin, or Flanders brown. As this project progressed, we realized our blend was going to essentially be an Oud Bruin other than unconventionally using the young beer to provide the acidity rather than the aged component. So prior to blending, I picked up a La Folie from New Belgium. It was transcendent and set an upsettingly high bar. The feeling of inadequacy lasted until tasting our final blend. Staveyard came out just as we hoped with multiple balancing layers of complexity integrating malty sweetness, rounded acidity, honey oxidation, and wood tannins with light mahogany hues. We even added the bubbles! The final beer is a blend of batch lactobacillus soured, malty young ale and biere de garde aged in neutral oak barrels for 50 weeks. This is the famous Brooklyn Black Chocolate Stout. In the 18th century, Catherine the Great, Empress of Russia, ordered a stout to be sent to her from England. This beer was brewed strong and hoppy to survive the sea voyage, and it arrived in perfect condition. Soon "Russian Imperial Stout" became the toast of the Russian aristocracy. Brewed since 1994, our Black Chocolate Stout has itself become a modern classic, heralded the world over. It achieves its dark chocolate aroma and flavor through the artful blending of six malts and three distinct mashes. Properly kept, it will improve in the bottle for many years. This stout is the toast of the winter season in many countries, and there is nothing better to enjoy with chocolate desserts, cheesecake, ice cream, fine cheeses and roaring fireplaces.

Given this beer’s higher ABV and sturdy character, we think it’s a prime candidate for cellaring. Find a cool, dry spot away from light sources, and see how it changes in the years to come.
