Having first been distilled in 1997, Hazelburn is the newest whisky to be produced here. By using malt that is air dried only and distilling the whisky three times in our old copper stills, we achieve a spirit that is light, fruity and subtle. Like Longrow, Hazelburn is named after one of the distilleries of Campbeltown’s past.

Our Hazelburn Sherry Wood, always bottled at cask strength, is released annually in small quantities after being matured in varying types of sherry cask.

The 2017 release is 13 years old, matured in Oloroso Sherry casks and bottled at 47.1%.

Nose:  Initially raisins, marzipan, Demerara sugar followed by treacle, sticky toffee and wood shavings.
Palate:  Homemade strawberry jam, sugary and filled with cream, orange zest, brandy snaps and a white chocolate creme brûlée.
Finish:   Chocolate orange, creamy coffee liqueur, buttered popcorn, cocoa beans and mocha coffee with a delicate finish of sweet orange marmalade.

About Pechuga
Pechuga has a nose of basil, lemon, ocean, and fruit. It is almost scotch-like in its smoky taste. And yes, in addition it is salty, very soft, and tastes a wee bit like chicken. The Pechuga production season is limited to year end due to the special ingredients: Wild mountain apples and plums that must be in season and cannot be substituted. This mezcal is the most rare we have ever encountered.

Pechuga begins with Minero mezcal that has already been double distilled. In preparation for a third distillation they place about 100 liters of mezcal in the still and add about 100 kilos of wild mountain apples and plums, big red plantain bananas, pineapples, a handful of almonds and a few pounds of uncooked white rice. Next, a whole chicken breast (pechuga), skin removed, bone structure complete, is washed in running water for about three hours to remove any grease. This is then suspended by strings in the atmosphere of the still and a 24 hour, third distillation is begun. The vapor passes over the pechuga and condenses into a crystal clear liquid that has an amazing taste and smoothness. The reason for the breast they say, is so the mezcal is not dominated by the fruit…a balance. Upon completion the pechuga is removed from the still and hung in the family Altar room…the most important space in the house.

Del Maguey brings you a collection of Single Village Mezcal made in the lush, remote mountains, plains and valleys of Oaxaca (wa-haka), Mexico. Each mezcal is named for the village where it is made.

Chichicapa has a medium nose and a complex taste with lots of citrus and a long, smooth finish with overtones of mint. The pueblo elevation is 5052 ft. (1540 meters) in a broad valley with a desert and tropical micro-climate.

Del Maguey mezcals are twice distilled and unblended from 100% mature agave Espadin and are produced the original, 400-year-old hand-crafted way. Production is limited to exclusive quantities per year to preserve quality. There are no chemicals, colorings or additives ever used in any Del Maguey, Single Village Mezcal.

Claverach Farm Pet Nat Sparkling Rose




2017 Claverach Farm Pet Nat Sparkling Rose...$18.99
Pét-Nat is short hand for the French term pétillant-naturel, or naturally sparkling. Pét-Nats are made using the méthode ancestrale, an ancient method of producing sparkling wine by bottling the wine just before the end of primary fermentation. This process captures the carbon dioxide that is naturally released.

Our 2017 Pét-Nat Rosé is 50% Chambourcin, 20% Bianca, 10% Cabernet Franc, 10% Marsanne, and 10% Petit Manseng. 100% of the fruit was grown here at Claverach.

This is a more extracted style of rosé (i.e, a deeper pink color, almost a light red) due to the three-day maceration time. It is very gently sparkling (think vino verde level of bubbles) and bright, with tart cherry and red clay earth. Unfined and unfiltered. No sulfites added.

200 cases made. 12.5% abv. Please store upright in a cool place.

We move from Spain to…Missouri? Sam Hilmer‘s Soif debut came on soft, pouring just one wine at the fair, but I heard buzz growing throughout the afternoon. A native of Eureka, Missouri—some 30 minutes or so outside St. Louis—Hilmer’s Rosé Pet-Nat is drawn from grapes like Norton, Chambourcin, Seyval, and Petite Verdot, using only natural yeasts and minimal sulfur. The result is a kind of technicolor party punch, effortlessly moreish and delicious—a wine you might find yourself going back to again and again for more, as I did throughout the festival."

Jacob Spears, our 6th Great Grand Uncle, is credited as the first distiller to label his whiskey “Bourbon.” He built his distillery in Bourbon County Kentucky in 1790 — 203 years before we began brewing. While obviously a bit too late to produce Uncle Jacob’s wash, we’ve instead created something far more complex. In his honor, we present this robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest Bourbon barrels. This explains a lot about our penchant for big brews! It’s in our blood!
