No fillers. No additives. No kidding.
Like artisans of yore, Carlton Farms handcrafts its delectable award-winning bacon and sausage from the freshest all-natural meats. We hold our farmers and growers to a higher standard and ensure that only the best cuts become Carlton Farms bacon and sausage.
See what real flavor is all about.
Award-winning. Delicious. Irresistible. Carlton Farms thick-cut Regular Bacon bursts with flavor thanks to our sweet-curing, dry-aging, and slow-smoking. We select only the finest pork bellies, dry age them for almost two weeks, then slowly wood-smoke them to perfection for melt-in-your-mouth bacon that’s flavorful, lean, and, yes, irresistible. We craft Carlton Farms Pepper Bacon with the same care and craftsmanship that makes our regular bacon a sought-after favorite — and then add a little kick. After we hand-trim and dry-age fresh pork bellies, we smoke them and add just the right amount of black pepper for lean, mouthwatering bacon.
Carlton Farms: high quality meat that is antibiotic-free, grown by a hand-picked team of farmers who respect their animals and the environment. For those products that are minimally processed (bacon, hams, etc.), we use only our own natural ingredients when curing or smoking.
Our animals come from proud growers — some of whom we’ve known for multiple generations — who practice sustainable farming and follow our strict standards for quality. We source as much as we can from a small group of farmers here in the Willamette Valley, and also a hand-picked group of farms and ranches in the Pacific Northwest that we’ve certified. It’s just one of the ways to ensure that the Carlton Farms meat you serve will be the best you can buy.

Nøgne Ø Andhrimnir Barley Wine Ale...$8.49 / pint
"Andrimne is the chef of the Aesir and einherjar in Norse mythology. Every day in Valhalla, he slaughters the beast Saehrimnir and cooks it in Eldhrimnir, his cauldron. It is also the winner of Norwegian national championship for homebrewers. We at Nogne O want to make this great barley wine available commericially, so beer drinkers will have an opportunity to experience the best Norwegian homebrew. Though made in Nogne O brewery, this beer was brewed by its creator, Gahr Smith-Gahrsen." -- label
Nogne O DunkelWit....$8.49
"Imperial DunkelWit from Nogne O is an attempt to combine the best of many brewing cultures. Indeed we hope to please the Belgian ale partizan, the dark ale enthusiasts as well as those who love big ales with this one product. That is a tough ambition. At least we had fun brewing it......" -- label
Ingredients: Grimstad Water, wheat, malted barley, coriander, orange peel, hops, and yeast.
Nøgne Ø Sunturnbrew......$9.49 / pint
"Just before Christmas we brewed a new beer to honor the Norwegian legend that says that the sun turns on December 21, the shortest day of the year. Of course, the rest of the world argue that the sun doesn’t turn at all, but we do belive this Norwegian stubbornness is worth to salute with a beer! This smoked barely wine is brewed with 30% smoked malt and 20% rye and we know Kjetil had great fun playing with the recipe and finally ending up with a beer way out of style.
The batch turned out to be rather small and Sunturnbrew will therefore only be available at our regular draft-locations in Norway and in US, where Shelton Brothers receive it in near future."

Rated A- onBeerAdvocate (rare - only 2 reviews so far)
Nøgne Ø Toshi Double IPA....$8.49 / pint
"The brewers of Nogne O recently worked with Toshi Ishii of YoHo Brewing in Japan on a double IPA or W-IPA (as it is referred to in Japan). Most of the cases will ship over there though Head Brewer, Kjetil Jikiun, notes that it would be likely that some would make it over here to the states as well. Talks with the Shelton Brothers, Nogne O’s importer, have not gone beyond the preliminary stages yet.
The hops were Millenium for bittering, (Amarillo, Centennial and Brewers Gold) for late additions and Chinook and Centennial for dry hopping. Five hop varieties in all for a beer that will feature 100 IBUs and 8% alcohol. [ed: I wonder if that would make it one of the hoppiest if not the hoppiest Norwegian beers ever brewed?]
Toshi Ishii has built a strong legacy in craft brewing worldwide. He learned American brewing philosophy with Stone Brewing years ago and has taken that experience overseas with him to complement the rest of his brewing knowledge…" --- www.beernews.org
Nøgne Ø Dugges Sahti....$8.49 / pint
"A special twist on the Finnish style Sahti, brewed at Nøgne Ø in cooperation between Dugges Brewery, Sweden, and Nøgne Ø of Norway. Brewed with rye and wheat, sea wormwood from the Swedish archipelago, juniper twigs from the Norwegian forests, honey from heather flowers in Telemark and three selected yeast strains from Belgium, Germany and Britain, and of course, some malt and hops too." -- Nogne Brewery
"...the collaborative Dugges-Nogne O Sahti was brewed in mid-September: “Mikael Dugge from Dugges visited us last week in an attempt to abolish the border between Sweden and Norway. The result is a Sahti brewed with rye and wheat, sea wormwood from the Swedish archipelago, juniper twigs from the Norwegian forests, honey from heather flowers in Telemark and three selected yeast strains form Belgium, Germany and Britain. There is actually some malt and hops added into it as well! This is Sahti the Norwegian and Swedish way – Sahti reinvented.” -- www.beernews.org

Nogne-O Tiger Tripel Norwegian Ale...$8.49 / 750ml
ABV = 9%
Ingredients: Malted barley, wheat, malted wheat, sugar, hops, yeast and local Grimstad water.
"It is very difficult to brew a complex and balanced Belgian-style tripel ale, but we have made an attempt at brewing one anyway! Our respect and admiration for those who master the skill and art of brewing excellent ale of this style is limitless. Tripels often pair will with cheese, seafood and fresh vegetables." -- Kjetill Jikiun - Head Brewer
Nogne/Mikkeller Tyttebaer Ale...$11.99 / 500ml
ABV = 8.0% A collaboration between Nogne and Mikkeller Ingredients: Malted barley, unmalted wheat, malted wheat, Lingonberries, hops, Brettanomyces yeast, Lactobacillus and Grimstad water. "Tyttebaer is also known as a lingonberry or mountain cranberry. This ale is full of Tyttebaer, and fermented with wild yeasts and bacteria. Feral at heart, it sat in fermentation tanks for 9 months and in bottles for 6 more months before we felt it was ready to be released. Who knows what it will do before ending up in your glass...It is, and always will be, wild." -- Kjetill Jikiun - Head Brewer

Askinosie Chocolate -- Springfield, Missouri
Askinosie Chocolate -- some of the finest in the world!
Cocoa Butter made from Soconusco, Mexico beans.
"The main ingredient in our white chocolate is 34% natural, non-deodorized cocoa butter. The cocoa butter is pressed in our factory and we are the first small-batch chocolate maker to do this. After pressing our Soconusco, Mexico beans to create the cocoa butter, we combine it with goat's milk powder and organic cane juice, and then craft it for days in our 85-year old German melanguer, making ours one of the only single origin white chocolates in the world. It is available in a Nibble Bar and a bar with organic roasted and salted pistachios.
“…Askinosie is the only small-batch chocolate maker in the United States that makes white chocolate. Askinosie's white chocolate is 34% cocoa butter, making it one of the richest in the world and because they don't process their cocoa butter it has a distinct buttery/nutty chocolate flavor that seems less sweet than other white chocolates."
-Clay Gordon, author of Discover Chocolate and thechocolatelife.com

Herbs for Cheese gives you quality, quantity...all at a much better price!
If all you do with the Herbs for Cheese package is to make the cheese spread, you will get seven 12 oz. batches. Hanley Hollow spreads offer the same or better flavors as similar brand name spreads, but give you almost triple the spread while staying well under half the price!
Hanley Hollow Products are multi-use. Remember, a little goes a long way. Make your own salad dressings and discover the wonderful difference from brand name spreads. You control the fat, the flavor ... and your budget.
Sedona Sunrise
Fiesta time can be every day. Sedona Sunrise is EASY to use! Use about 1 tablespoon per pound for shrimp through beef and all meats in between. Add fresh limes and cilantro to your taste and you will indeed make a name for yourself as a great cook.
Change the taste mix 2 Tbs. of cocoa and ITb. of Sodona Sunrise mix and rub on your staek.
Try about a cup of packaged french fried onion rings crushed into about one tablespoon of Sedona Sunrise. Dip your meat, fish, or poultry in an egg wash, roll it in the onion ring/Sedona Sunrise mixture, then bake at the proper temperature for the meat you have selected. Fabulous!
Onion Soup Seasoning...Plus much more.
Use the French Onion Soup seasoning as a dry rub to season your carmelized onions for French Dip sandwiches or to enhance the flavors of hamburgers and steaks. I like to make a big batch of French Onion Soup using 4 lbs. of onions. This isn't just "dump and go," but is wellworth the time and effort. When your soup is finished, you can eat it then or freeze it and thaw it out later for a wonderful, nourishing meal! This is really a unique but terrific company meal (and if you have frozen/thawed it, most of the work is already done). You can spend less time in your kitchen so you and your guests can enjoy each other!

2005 Juslyn Cabernet Sauvignon Spring Mountain....$89.99
"More backward, but also revealing the noble sweetness of tannin that is so important for this varietal, the 2005 Cabernet Sauvignon Spring Mountain Estate exhibits a dense ruby/purple hue as well as sweet aromas of black currants, white chocolate, camphor, and spring flowers. Beautiful purity, ripe tannins, full body, and a 45-second finish result in a dazzling example of Spring Mountain Cabernet. However, patience is warranted. Give this wine 2-3 years of bottle age, and drink it over the following 15+ years.
As proprietors Perry and Carolyn Butler move toward virtually all estate fruit from their 42 acres on the slopes of Spring Mountain, the quality of their wines has increased dramatically. Juslyn has been a solid performer for many years, but the most recent vintages exhibit a profound rise in quality, yet prices remain realistic for high end Napa wines."
Rated 95+/100 Robert Parker, The Wine Advocate
2005 Juslyn Perry's Blend....$69.99
The full-bodied 2005 Perry’s Blend (88% Cabernet Sauvignon, 7% Merlot, and the rest Cabernet Franc and Petit Verdot) is a combination of estate fruit and purchased grapes. It is a wine of extraordinary elegance and precision, displaying a sweet, expansive nose of spring flowers, black currants, and hints of blueberries as well as crushed rocks. An ethereal lightness and overall harmony give the wine a Bordeaux-like framework. It possesses terrific purity and depth, and a sweetness to the tannin that suggests it can be drunk now or cellared for 15+ years.
Rated 95/100 Robert Parker, The Wine Advocate

Les Trois Mousquetaire - new releases
Just arrived at Forsyth
Microbrasserie Les Trois Mousquetaires
"The Three Musketeers Microbrewery"
Québec, Canada
Another brewery from Quebec, home of the delicious and famous Unibroue nectars. This brewery has only been in business for a few years (2004), but there is a lot of buzz about it on the internet. They specialize in German style beers with their own twist added. Head brewer, Jonathon Lafortune, likens himself to a chef that cooks with passion and feeling.
Les Trois Mousquetiares Rauchbier....$8.49 / 750ml
"Voilá! A beer from chilly Québec inspired by the 'rauchbier' you find in Bamberg Germany - a dark beer made partly from smoked malt, aged slowly at low temperatures, and put in the bottle unfiltered, with a fine yeast sediment.
All for one!" -- importer
Les Trois Mousquetaires Doppelbock....$10.99 / 750ml
"This Doppelbock, or 'Double Bock' is a dark, extra full-bodied lager after the best Bavarian tradition. Such beer was created by monks for the tough fasting period of Lent. They called it 'liquid bread'. Look for flavor notes of chocolate, candied fruit, and roasted malt." -- importer
Les Trois Mousquetaires Weizen Imperial....$11.99 / 750ml
ABV = 8.0%
"Wham! Here it is...the world's first - and still greatest imperial wheat beer. The unfiltered Weizen Imperiale is immensely flavorful, with twice the malt and hops of ordinary wheat beer. Thanks to its special yeast, you'll taste vanilla, clove, orange, and of course, the classic banana flavor of a great Hefe-Weizen." -- importer
Rated #8 best Wheat beer on RateBeer.com
Les Trois Mousquetaires Kellerbier Lager....$7.99 / 750ml
ABV = 5.5%
Kellerbier, meaning 'cellar beer' is a type of unfiltered lager made by dozens of tiny breweries scattered around Franconia - Germany's most prolific and highly regarded brewing region. Les Trois Mousquetaires' Kellerbier is a full-flavored, unfiltered Pilsner that brings together the richness of Quebec barley and the smoothness of noble German hops, to create the perfect apertif.

"The Haand brewers - four guys making beer in their spare time, on an absudrly small scale - specialize in recreating old Norwegian farm beers. Here's one made with a variety of different grains, and some typical fruits from the region, handpicked by the brewers. It is fermented by airborne wild yeast, unfiltered, and unpasteurized. Wild Thing, yo make everything...groovy." -- back label.
Haandbryggeriet Barrel Aged Porter (Aquavit)....$9.99
"Akevitt Porter is a very special brew, this is a powerful porter that has been aged in old Akevitt barrels for several months. We use this technique to blend the 2 flavours and the process has produced a very special beer. We think the flavour of this beer must be very
close to how historic porters tasted in the old days when all beers were kept in oak barrels. The wood aging has made this beer fantastically round and smooth, the spill over of the Akevitt flavours and of course the wood flavours play together. All this combined with the darker malts makes it unique. And the aroma is so powerful and interesting it just makes you beg for a sip." -- brewery
10% alc. abv, 32 ibu
Haandbryggeriet Hesjeøl (Multi-grain Harvest Ale)...$8.49
"Hesjeøl is our recreation of a traditional Norwegian farmhouse harvest ale. Farmers always served up refreshing harvest ale's for thirsty workers. Our Hersjeøl is a refreshing fruity and floral ale with a slight smoky and spicy flavour. Slightly supped up harvest ale. Made from 3 grains, barley, oats and rye and fermented with our special wild house yeast." -- brewery
6.5% alc. 28 ibu.

More Fantome...
8% alc. by volume, with a wonderfully musty and characterful aroma. “Absolutely gorgeous, complex summer refresher with enough interest to drink all year-round.” (The Beers of Wallonia). Both authors give this beer a perfect 10. We would not give it a 10 (even if we knew what that meant) but there are drinkers out there who believe this is the “Nectar of the Gods.” Certainly, no other brewer makes beer like this, in Belgium or anywhere.
How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

Edelster Distilled Aventinus Beer....$44.99 / 375ml
"Edelster Aventinus in its distilled form maintains its beautiful banana and dark strawberry nose combined with black peppery hop spice and hints of basil and clove. Its smooth, sticky mouthfeel compliments the fruity malt sweetness (strawberry/ pear/banana becoming vanilla) in perfect balance with the acidity and black-pepper bitterness."
More about the distillery....
"The distillery Schraml is an established family business located in the Old Provost’s Heritage Village, a former convent and rectory, with a rich history, at the foot of the Nature Park Steinwald. Mountains, strange rocks, white-water, ponds and plenty of forest characterise this beautiful area. In 1817, Johann Baptist Schraml settled down with his bride in the estate at the Heritage Village Kaiserberg 111 (today Kaiserberg 16), which came with the established right, conferred by the Kingdom of Bavaria, to distill brandies and liqueurs from fruit and grain. Fine liquors from fruit and grain and fine liqueurs have been produced here for six generations ever since. Raw materials
are fruit and cereal from the meadows and fields of Schraml’s own agriculture. The property also houses a bakery and a small communal brewery. Thus, in addition to fruit brandy and grain spirits, their own Zoigl beer is openly sold and served." -- importer
