So far we have elected to do no blending of barrels: all of our barrels are bottled as single barrel batches. We love this approach because while all of the barrels are delicious, there are some very interesting nuances from barrel to barrel.

Auchnagie Distillery existed for almost 100 years, starting work as a remote farmhouse distillery and ending its days as, arguably, the jewel in the crown of a global whisky empire. It had at least seven different owners and was silent for large parts of its life. This was not unusual for small-scale 19th century distilleries, as their precarious existence was often at the mercy of lack of water, lack of money, changes to duty laws and local demand for the product.

The early crispy Stevnsbær cherry is the ideal blend partner for the local pear Lucas variety to go into a cuvée with both lingering freshness and smooth wine character.
The basic blend – called „Cuvée“ – ferments stepwise, according to the fruit specific optimum picking time on its own yeast from the orchard. The ’Cuvée’ is a blend of 60% Stevnsbær cherry and 40% Lucas pear.
After natural clarification by gravity the wine goes into the process of the second fermentation to create the bubbles and the character of a sparkling wine.
After After a second fermentation in tank – called „méthode, charmat“ – the wine gains 4,0 bar of pressure and rests
for a period of approx. 3 months on the yeast. During this time the sparkling wine aroma develops to its

Rolling Thunder Stouted Whiskey is a first of its kind. It’s made with barley grown on Rogue Farms and distilled from a wash that began as Dead Guy Ale, brewed right next to the distillery in Newport, Ore. It was first aged one year in new Oregon Oak (Quercus garryana) barrels crafted at our Rolling Thunder Barrel Works before aging two more years in barrels that had previously aged Rolling Thunder Imperial Stout. Rogue grains, beer, whiskey, barrels and the magic of Newport’s marine climate make this American Single Malt as unique as the hands that crafted it.

Innovation is a cornerstone of the American ethos, and innovators have always shied away from the impulse to equate tradition with convention. In this spirit, our Rye, Barley, Wheat Whiskey is carefully crafted using the finest traditions in distilling—It has been distilled in hand hammered, direct fire, alembic copper pot stills and only the very best portion of the cuts, the “heart of the hearts” has been kept at the still—We have, however, chosen to flaunt conventions of category with our decisions about the mash bill and barrel program. Years of blending have convinced us that diverse mash bills produce whiskeys that are more evocative and interesting, so we worked diligently to craft a rich, complex palate of grain flavors by blending six grain components. To protect and enhance these delicate cereal flavors, we elected to forego the conventional heavily charred new oak in favor of used 60 gallon toasted French oak barrels, most of which formerly held Pinot Noir. These barrels contribute weight and depth to the spirit without erasing or obscuring the character of the grain, which we feel should define a premium whiskey. The result is a whiskey which we feel offers unprecedented depth, complexity, and body.

The fourth and final batch of Booker’s® Bourbon for 2018 is called “Kitchen Table,” named after one of my dad’s favorite places. There, Dad liked to read the newspaper, tinker with his projects, and notably, it’s where he gathered our family and friends to help him select batches of his namesake whiskey. Single Origin is a Sump Coffee collaboration project in which focused on single origin ingredients. We selected Ethiopian natural process coffee from the fine folks at Sump. We then added Madagascar vanilla beans, cacao from Tanzania and a touch of blueberry to accentuate the natural processed coffee. ABV 10.5%
