This product is made by taking our Red Line Cask Strength Straight Bourbon and then aging it for an additional period in a second custom made barrel. This second barrel is assembled from 18 month air dried wood and then toasted not charred as your normal bourbon barrel would be. This process allows for the sugars in the wood to be drawn to the interior surface where the bourbon will be making contact, adding amazing flavors to the bourbon. 99 Point Italian White!

2021 San Marzano Edda Bianco Salento...$19.99 / 750ml
Vine variety: Predominantly Chardonnay with native white grape varieties at about 100 meters above sea level. Shallow soil, with medium-fine texture. The grapes are destemmed and left in cryomaceration for a few hours. The next phase is the gentle pressing of the marc followed by static cold decanting so that it happens naturally. The alcoholic fermentation takes place in French oak barriques. Ageing: On yeasts in French oak barriques for 4 months, with weekly bâtonnage. Tasting notes: Straw yellow colour with golden reflections; mellow citrus fruits and delicate vanilla floral notes fill the nose; to the taste it is generous in its elegance, fresh, delicate and mineral. Best served with: Starters, first courses with fish, cheese.
In the glass, the EDDA Bianco has a straw yellow color with golden reflections; soft citrus fruits and delicate floral vanilla notes fill the nose. The taste is generous, elegant, fresh, delicate and mineral. The finish is long and soft. The wine goes well with starters and intermediate dishes of fish and shellfish, chicken or shrimp. But above all, great with soft cheeses.

New wines from Yves Cuilleron!

New wines from Yves Cuilleron!

One of the most important, highly-regarded, and prolific estates in the Northern Rhône, the Cuilleron estate is made up 75 hectares in total, (8 in Côte Rôtie, 12 in Condrieu, 27 in Saint-Joseph, 4 in Crozes-Hermitage, 3 in Saint Péray, 1.5 in Cornas, and 19.5 in the greater IGP). Winegrowing is natural, with minimal treatments and an overall unique approach to soil management and pruning developed by Yves over the past several decades. During this time the domain has remained staunchly traditional on the winemaking side, with fermentation taking place with only wild yeasts, a commitment to traditional cap-punching, disdain for enzymes and shortcuts, and an overall commitment to NOT use technological aids of any kind.

2020 Yves Cuilleron Crozes-Hermitage "Labaya"...$26.99 / 750ml
Saturated garnet color. High-pitched, spice-accented red and blue fruits on the assertively perfumed nose. Juicy and focused on the palate, offering vibrant cherry and boysenberry flavors and suggestions of candied violet and cracked pepper. A smoky mineral nuance appears on a long, sweet finish that's framed by round, even tannins. Note this bottling's name change from "Laya", starting with the 2020 vintage.
Vinous: 93 Points
2020 Yves Cuilleron Saint Joseph Rouge "Les Pierres Sèches"...$27.99 / 750ml
Saturated garnet color. Pungent, spice-tinged cherry, blueberry and floral aromas are complemented by suggestions of olive, botanical herbs and smoked meat. Succulent and penetrating on the palate, offering concentrated red and blue fruit preserves and licorice flavors; a hint of vanilla and a violet nuance builds on the back half. Finishes long and smooth, with well-judged tannins and echoing spice and floral notes. No new oak.

SaturDAYdrinking with Dave-
Featuring Bitters and Apertifs

Saturday, February 25th
At the (IN)Famous Bar
Tucked in a corner of The Wine and Cheese Place
7435 Forsyth Blvd, Clayton
12 Noon-3pm

We're featuring some of my fave bitter liqueurs this Saturday. Come on by and taste
The difference between the two styles of liqueurs We may even pour a cocktail….

Bizzaro Bitter Aperitivo...$31.99 (Australia)
We take a neutral grape spirit, infuse it with an array of fruits, herbs and other botanicals, and use this concoction to fortify a dry white wine.
But, of course, we up the flavour ante, using organically grown Riverland oranges and lemons to create an intoxicating citrus hit. Traditional aperitivo ingredients such as rhubarb and gentian root provide the bitterness, while the base wine is our super aromatic, organic and biodynamic skin contact Vermentino.

Contratto Bitter…$29.99 (Italy)
Alcohol, water, sugar, extracts from 24 aromas deriving from natural herbs, spices, roots, seeds (of which 9 are secret). Carrot and beetroot extract give the Bitter its color.
Aloe, bitter orange, sweet orange, wormwood, cloves, cardamom, gentian, hibiscus, elecampane, juniper, mint, rhubarb, sage, nettle.Suze Aperitif…$29.99 (France)
Suze is a French apéritif made from gentian—an aromatic plant used as a bittering agent in a whole slew of French digestifs. It tastes very vegetal, like eating dandelion greens, but it also offers citric tones, like pomelo and perfume-y citrus—not lemon or lime.

Liquore delle Sirene Bitter Artigianale…$34.99 (Italy)
A bittersweet aperitivo liqueur made from 23 botanicals, most of them grown near Lake Garda and around the historic city of Verona; others cultivated and shipped from the south of Italy and some, like Chinese rhubarb root, from around the world. Botanicals include olive and lemon tree leaves, linden and acacia flowers, wild rose berries, sweet and bitter orange, absinthe, gentian and ginger. All infusions are done individually, blended according to Elisa’s recipe and then rested for a short time in small oak cask. A light filtration is performed with paper filter to preserve color and aroma. No chemicals or artificial coloring are used.

The Absolute Best Bourbon Whiskey Between $70-$80, Ranked

The Absolute Best Bourbon Whiskey Between $70-$80, Ranked by Uproxx - read the full article here

Here is what we have in stock now of the top 20!
1. Peerless Small Batch Kentucky Straight Bourbon Whiskey...$69.99
Kentucky Peerless Distilling takes its time for a true grain-to-glass experience. Their Small Batch Bourbon is crafted with a fairly low-rye mash bill and fermented with a sweet mash as opposed to a sour mash (that means they use 100% new grains, water, and yeast with each new batch instead of holding some of the mash over to start the next one like a sourdough starter). The barrels are then hand-selected for their taste and bottled completely un-messed with.

2. Jack Daniel’s Single Barrel Barrel Proof Tennessee Whiskey...$62.99
Where the Single Barrel Select is cut with soft limestone water to bring it down to proof, this is the straight whiskey from the barrel. These barrels are all hand-selected from the vast Jack Daniel’s rickhouses. What’s left from the angel’s share then goes straight into the bottle. That means the ABVs and tasting notes for this bottle will vary depending on which bottle you snag.

3. Barrell Vantage....$74.99
This new release from Barrell Craft Spirits really leans into unique and rare finishings. The blend is a mix of Indiana, Tennessee, and Kentucky bourbons finished in three different oaks separately before blending. In this case, that’s Japanese Mizunara casks, French, and American oak. Different toast and char levels were used for the barrels to achieve a unique palate that builds on the heritage of Barrell’s other triple cask-finished whiskeys (Dovetail, Seagrass, and Armida).

5. Knob Creek Single Barrel Kentucky Straight Bourbon Whiskey...$49.99
We have "Our Missouri Customers" Single Barrel

This single-barrel bourbon is from Beam’s private barrel pick program for retailers/bars/etc. at the distillery. That means your local retailer goes out to Clermont, Kentucky, and picks a single barrel for their store only. Beam then cuts the bourbon to 120 proof (if needed), bottles it, and delivers it to the store. That also means these will vary from store to store ever so slightly.

8. Penelope Architect Straight Bourbon Whiskey French Oak Staves....$65.99
We have Build No. 5

This bourbon is all about precision blending. The MGP barrels create a four-grain whiskey that’s finished in oak staves from Tonnellerie Radoux in France. Those staves are added to the barrels to create a unique finish that’s part Kentucky and part France.

13. Hidden Barn Kentucky Straight Bourbon Whiskey Small Batch ...$67.99
We have both Series 1 and Series 2
Jackie Zykan’s (former Master Taster for Old Forester) first release at her own shingle is a sourced whiskey from Neeley Family Distillery in rural Kentucky. The bourbon is made from a sweet mash (a brand new mash with every cook instead of reusing mash for a sour mash) with a high-ish rye content in pot stills (a true rarity in bourbon these days). Those barrels aged for four to five years before Zykan picked a handful for this batch-proof release.

14. Jefferson’s Ocean Aged At Sea Straight Bourbon Wheated Mash Bill....$79.99
Jefferson’s Ocean is deeply skilled at crafting unique and very tasty drams. This expression uses a wheated mash bill (instead of high rye) that’s aged for six to eight years on land. Barrels are then loaded onto a ship and sailed around the world where the spirit and wood interact the whole time thanks to the choppy seas, creating an incredibly unique whiskey in the process.

15. Pursuit United Blended Straight Bourbon Whiskeys Finished with Toasted American and French Oak...$73.99
The latest release from the Bourbon Pursuit team is a blend of four to six-year-old bourbons. The three bourbons involved are a Finger Lakes whiskey (70/20/10 corn/rye/malted barley), an MGP bourbon (60/36/4 corn/rye/malted barley), and an undisclosed Tennessee whiskey (80/10/10 corn/rye/malted barley). Those whiskeys were finished in both American and French toasted oak barrels before batching and bottling with a touch of Kentucky water.

17. Red Line Cask Strength Single Barrel Straight Bourbon Whiskey...$74.99
This whiskey from Red Line is sourced from hand-selected barrels from MGP of Indiana. The team at Red Line picked six-year-old barrels of MGP’s iconic high-rye bourbon mash of 75% corn, 21% rye, and only 4% malted barley. Those barrels were vatted and then bottled as-is at cask strength.

2018 Shafer Relentless Napa Valley...$97.99
The 2018 Relentless might be the finest vintage of this I’ve tasted. Based on 90% Syrah and 10% Petite Sirah, this beauty boasts a saturated purple hue as well as a full-bodied array of ripe blackberries, peppery herbs, smoked game, and spring flowers. Pure, concentrated, and plush, it nevertheless stays graceful and light on its feet, with a great finish. I love it today, but it’s going to keep for 10-15 years.
Rated 97/100 Jeb Dunnuck

2019 Shafer Napa Red Wine TD-9...$65.99

An incredible value, the 2019 Cabernet Sauvignon TD-9 includes slightly more Merlot and is 47% Cabernet Sauvignon, 37% Merlot, 11% Malbec and the rest Petit Verdot. Round, sexy, full-bodied, and opulent, it has terrific aromatics of red and black currants, tobacco, chocolate, and lead pencil shavings. Drink this hedonistic yet balanced, elegant beauty over the coming 10-12 years.

In the dry and sunny climate of the Limarí Valley (Chile) our pisco chileno is made with a single process of discontinuous distillation in a copper still. Its floral and citrus notes give Pisco El Gobernador a versatile and diverse character, ideal for the creation of numerous cocktails.
El Gobernador, born in the Limarí Valley, brings the spirit of adventure to northern Chile, with a reserve pisco made from Muscat Rosada and Muscat of Alexandria grapes that has an alcohol content of 40% ABV. It is produced using a process centered on a single distillation as the best way of preserving the terpenic aromas of the grapes.
Colourless and bright pisco with a silver glimmer. A lush floral aroma with tinges of roses and jasmine, as well as candied citrus skins. On the palate it is sweet, round, and even creamy, with a long and persistent finish.
