2013 Domaine Faiveley Chambertin-Clos de Bèze Grand Cru "Les Ouvrées Rodin"...$799.99

Wonderfully scented, almost Musigny-like aromas of black cherry, licorice, violet and minerals. Boasts outstanding sappy energy and definition, with the dark berry flavors energized by piquant minerality and salty traces. These vines are actually on the Chambertin side of Clos de Bèze but the wine is less powerful than the estate's other Clos de Bèze, notes Hervet. The endless perfumed finish excites the taste buds. Just five barrels made.

This is very Nuits in character and will need 10 to 12 years to arrive at its apogee.

Full-bodied, opulent and multilayered, this is another stunner that brilliantly conceals the ten months it spent in 40% new French oak, as well as its rather hefty alcohol. Update on The Scribe and Merci!
Cory stopped by with a bottle of Merci Volume II to taste.  Merci is fantastic, but he wants it to bottle condition for another month at least.   So it looks like The Scribe will be the next Side Project release at The Wine and Cheese Place.  It is in the queue now pending with Missouri registration, so it should be very soon!!!!  It is bottled and ready to go.  


The Scribe will be release through our BRC program base on Beer only purchases starting from October 12 until its release.

The Scribe is the collaboration between Side Project and Perennial Artisan Ales. Its a huge, rich, soured Quad that was inspired by our favorited mead called The Heart of Darkness from Schramm's. It was aged in a Cabernet and bourbon barrels on black currants, sweet cherries and raspberries before being blended back and bottle conditioned... Drinks more like a mead or nice port than a beer!

A dry-hopped multigrain masterpiece
This hoppy, deep amber-hued beer was created to shine a light on rare, unexplored grains seldom used in the brewing world. In addition to barley, wheat, rye and triticale, we added malted millet and malted buckwheat to bring the total unique grain count to nine. The earthy, nutty notes of granola found in this experimental multigrain malt bomb are complemented by the citrusy, piney flavors of four classic American hops. We dry-hopped the beer with Cascade and Centennial hops at the end, adding more citrus notes and rounding out the grain bill’s rich, bready character.

In early spring of 2015, we brewed a 50-barrel batch of Hanukkah, Chanukah Pass the Beer with 8 malts, 8 hops and 8% ABV. After fermentation we filled first use Heaven Hill and Jim Beam bourbon barrels to age the luscious dark ale. Eight months later, Chanukah in Kentucky was born. Chanukah in Kentucky pours dark chestnut in color with ruby highlights and a creamy beige head. The nose is big and slightly tart with a mix of toasted malt, dark chocolate, woody oak, and the noticeable aroma of barrel bourbon. The first taste is slightly sweet with notes of dark cherry and a confection of toffee, caramel, and hints of vanilla. As it warms, the bourbon character fades making the toffee, chocolate, sweet caramel, vanilla bean and woody oak become more pronounced. Anbai literally means “Salty Plum” and the word is also used to describe the stat of taste and flavor. Ii Anbai means “just right”!
Hitachino Nest Anbai Ale is brewed based on the high alcohol version (7%) of the signature beer Hitachino Nest White Ale, infused with locally grown green sour plum (ume), and finished up with a pinch of Japanese sea salt (moshio). The balance of sourness, bitterness, comes from the plum and subtle saltiness, great umami taste of the sea salt is “Ii Anbai - just right!”

Hops: Tardif de Bourgogne [Origin and Description: Tardif de Bourgogne Hops is a natural variety from France. The USDA recieved their first sample in 1977, from the Institute of Hop Research, Pulawy, Poland. This variety is grown on limited acreage around the Alsace region. It is an aroma type associated with European Ales and Lagers. It is difficult to find on the market, and in commercial beers.

These 3 beautifully matched whiskeys are matured for at least 18 years in hand selected American bourbon barrels and European oak casks, where they complete their rite of passage and are finished in first fill bourbon barrels delivering subtle traces of vanilla on the palate. It is the outcome of the determined efforts of a distiller from Liege, Etienne Bouillon, who has put all his energy to this project for nearly two years with the best of his skills and know-how.

'The Belgian Owl', Belgian Whisky Single Malt is made from a distillate of the best Belgian malt, the barley beeing raised in Belgium.

Malt refers to sprouted barley whose germination is stopped by heat. This process, also called kilning, determines the aroma given off by the spirits produced from the still.

'The Belgian Owl', Belgian Whisky Single Malt will be a wonderful whisky with delicious aromas of spice, fruity and with flowers notes .

This is what distiller Etienne Bouillon, owner of The Owl Distillery has to say about it:

The distillation I practice gives a very flexible, smooth product. To obtain a top quality taste, I keep only the heart of the distillate obtained after a second distillation.

The malt distillate leaves our century-old stills in Grâce-Hollogne with an alcohol content of more than 70%, and is then aged in oak casks for at least three full years.

During the aging process it gradually takes on its lovely amber colour and develops its magnificent aromas.

At the end of the aging period, the product can be called Whisky. At this point it contains more or less 60% alcohol that is reduced to 46% by adding pure water.

Then it is bottled.

THE FIRST FAIR TRADE COLA!
“Cola Baladin” is a soft drinks which contains no coloring or preservative and is produced with the kola nuts bought from the Kola Slow Food Presidium” in Sierra Leone, and part of the revenues from the its sales will be donated to the Slow Food Foundation for Biodiversity to support the Presidium project. Another important and rather odd thing about this drink: the use of these nuts, and the necessary choice not to use artificial colorings, means that this new Baladin drink has a rather “unusual” color for a cola: IT’S RED! This red color sets it apart from more “commercial” products and makes it immediately clear that our intent is not only to make a profit: our drink is also a sign to show consumers that it often takes very little to play our part in supporting those who cannot even support themselves. Sierra Leone is one of the unfortunately too many African countries tormented by both political and economic wars and fights. Ours may be a niche production, but we believe it will help us give the word SUSTAINABILY its full and important meaning.
