Castle & Key Gins

 

In 1887, Colonel Edmund Haynes Taylor, Jr. built a new kind of distillery destination in Millville, Kentucky. Inspired by European architecture, the site featured a Castle, a classical Springhouse, and a Sunken Garden. What he built became the birthplace of bourbon hospitality and tourism.

Prohibition forced the closing of the distillery in 1920. Over the next century, the property changed owners and occupants several times, eventually falling into ruin.

In 2014, Will Arvin and his team purchased the Old Taylor Distillery, in ruins. Then they got to work, building a consortium of like-minded people, often from outside the industry, who shared their vision. Together, they did not renovate the distillery - they restored it.

Taking up Colonel Taylor’s sensibilities for excellence, they source local ingredients to inspire our product. They make everything that we sell from carefully selected grains. They choose to do things the thoughtful way – even though it's not the easy way – because waiting to sell the spirits we make is worth it.

Starting from a base of our rye whiskey newmake, our Roots of Ruin Gin is vapor distilled drawing bright and complex flavors from a series of eight botanicals.

Mashbill: 17% Yellow Corn / 63% Rye / 20% Malted Barley

Botanicals: Juniper, Chamomile, Ginger, Rosemary, Licorice Root, Lemon Verbena, Coriander, and Angelica Root
Aroma: Bright and floral, subtle baking spice, and soft pine

Fruit is foremost: Marasca cherry meets ripe plum in a gutsy, full-bodied package. On the palate there is ample fruit, freshness and quite a bit of body: the tannins are bold but countered by so much fruit that they attain an almost mocha vanilla sweetness and come across smooth on the dense, full body. The finish is warming and rounded, a mouthful of big, fruity exuberance that keeps its mojo for quite a number of years. - winery notes


This wine has seen several name changes (from Il Toro to RomiTòro and now Romitorio). The Castello Romitorio 2021 Romitorio is a hearty, full-bodied red blend with the muscle and power to mimic the beautiful Sandro Chia drawing of a raging bull on the front label. Fundamentally, this wine shows an all-Maremma spirit with rich concentration, big fruit weight and a whole range of savory and black fruit aromas. This wine is a delight to drink; it has a soft texture and is just raring to go straight out of the gate.

OUR MAIDEN VOYAGE
Maiden was the first beer ever brewed at Siren and is the first new batch brewed each year. It was always designed to represent everything we’re about as a brewery; creativity, experimentation, good fun, and most importantly, great beer.
The Story Behind The Beer
Maiden is a labour of love. Our American style Barley Wine is aged in a variety of spirit and wine barrels, before being blended back together with a percentage of fresh beer, to create that year’s vintage. The barrels that have been used are left with 10% aged beer in them before being topped up with fresh Maiden, in what is a form of the Solera system. This means every vintage can be a totally different creation, despite coming from the exact same base. We believe that the beer improves each and every year because of the additional depth and complexity we're able to call on from the barrels as time goes by.
Maiden 2022
Last year we sourced a heritage barley for the Maiden recipe for the first time, known as Chevallier. This variety was the first true malting barley, dating all the way back to 1824, and has been brought back to life by Crisp Malting Group for commercial use.
This year, as a 10th Anniversary special, our team also had a second fresh Maiden to utilise - a ten hour boil Maiden - which is rich in flavour and slightly bigger in body. Such was its impact that it actually makes up 19% of the final blend, with another 9% fresh Maiden 2022. The generous proportion of fresh Maiden has contributed to a real minerality in the blend.
There are rich fruitcake, spicy wood notes and a vanilla caramel character that the bourbon barrels have imparted. Expect a rising of complexity, age and fortified wine character as all the flavours build in harmony, before a tone shift, as an almost fresh, clean bitterness kicks in and brings everything back down to kilter. Keep an eye out for more on Maiden this year... this is just the beginning.

A collaboration with Pete Slosberg using cocoa nibs from Belgian chocolatier Frederic Blondeel

Pete's Wicked Tripel is the result of a collaboration with our friend Pete Slosberg. Pete is a legend in the USA. He is one of the first brewers to have launched a "craft" beer on the American market in the '80s: Pete's Wicked Ale, the start of a real revolution! After beer, he entered with success the world of chocolate. This is why he proposed us to combine both of his passions and to use cocoa nibs to flavor a Triple.
We didn't need to search far away to find cocoa nibs of excellent quality: a few minutes away from our brewery, our friend Frédéric Blondeel, one of Belgium's finest chocolatiers, carefully selected a very aromatic variety of cocoa nibs, which he then roasted in his atelier in Koekelberg. We added the nibs to the beer during fermentation, similarly to dry-hopping, so that our yeast could extract and transform their flavors. Beware: it's cocoa nibs, not chocolate, so we shouldn't expect to find chocolate notes in the beer, that's not the point! The point is to get very subtle flavors.
The result is very complex and easily drinkable at the same time, in spite of its 8% abv. We perceive flavors of green coffee, then fruity fermentation flavors, a malty side, and a touch of citrus. It's in the aftertaste that the cocoa develops all of its complexity, its persistence, and its comforting aspect. Also, the nibs give the beer an interesting texture. To enhance its flavors, we recommend you drink it at 8-10 degrees, or even a bit more according to your taste.

Pete Slosberg created Pete's Wicked Ale back in the 1980s.  This was The Wine and Cheese Place's number one selling beer for about 4 or 5 years in a row back in the day!  It was shocking how much of this beer we sold.  Of course, this was back when there were no big liquor chains in town and the grocery stores did not carry craft beer.  The beer is no longer being made now!

QUITE WILD.
In 2017, we began to revive beers according to historical models. Not with a pure-bred yeast, as is common nowadays, but with our own house culture of wild yeasts and lactic acid bacteria. Our home culture can be compared to a sourdough in an artisan bakery. It tastes better, is more digestible and stays fresh longer.

CRAFT FROM THE VERY BEGINNING.
Our brewery and farm is located in the countryside near Münster (Westphalia). Our cultural landscape has much to offer. The ingredients come from our own harvest or from partners we trust - organic and regional whenever possible. We cultivate 4.5 hectares of meadow orchards with old varieties, as well as meadows and arable land.

PURE NATURE.
Old varieties of apples, quinces, mirabelles and other fruits grow in our orchards, which we harvest and process entirely by hand with a focus on perfect fruit. This care is also necessary, because we rely on spontaneous fermentation and do not use any added sulphur along the entire production chain. Genuine natural wine, in other words.

A first community of the Hospital Brothers of St. Anthony was settled in 1650 and lasted until the French Revolution, which closed the monastery in 1792. In 1826, a new community of Trappists was established, and this congregation has run the abbey ever since. A breakaway group of Trappist monks left Mont des Cats and settled in Westvleteren (Belgium). In 1848 the monastery built a forge and a brewery — 163 years after its first brewing, the abbey of Mont-des-Cats resumed it brewing tradition." - Importer

The new Trappist beer “Mont des Cats” was presented in June 2011: an enticing copper-colored beer with aromas of fruits, brown sugar, caramel, a touch of roasted malts. A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices, and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.

The first (and only) French Trappist beer, the Mont des Cats was brewed according to authentic methods developed in the abbeys, by or under the supervision of monks. Those of Mount Cats practiced this activity until 1905. Originally, they brewed beer for their personal consumption, but the variety of a brown beer that was a great success among visitors encouraged them to market their production.
In 1907, after the separation of the church and the state, a large number of Trappist brothers left the abbey to settle in Belgium. They founded a new establishment there that gave birth to a new beer, the St Bernardus. This brewing activity stopped for good after the destruction of the abbey during the First World War. The Mont des Cats beer, still brewed in the Trappist tradition, was created in 2011 by the monks of Scourmont Abbey in Chimay (Belgium) but it is bottled in Mont des Cats.

OWH is one of Hampden’s most recent marks, having been created by the Hussey family in the first decade of the 21st century. It is the lightest mark, but a faithful expression of the Hampden style all the same.

LFCH Lawrence Francis Close Hussey
LFCH is the other more recent mark invented by the Hussey family. Like OWH, it is made with molasses alone, but a longer fermentation enables it to develop a complex equilibrium of many different esters.

LROK Light Rum Over Kelly
LROK is a historic mark, created at the end of the 19th century and dedicated to the Owen-Kelly family, then owners of Hampden Estate. From LROK onwards all five raw materials are used.

HLCF Hampden Light Continental Flavoured
HLCF can be viewed as the threshold for the higher ester profiles and this too has deep roots in the history of Hampden Estate’s reputation as a high-ester but balanced rum.

The <>H mark expresses a high percentage of the intense flavors produced by ethyl butyrate, such as ripe bananas and pineapple, which are highly characteristic of the Hampden style. This mark is certainly the starting point for highly concentrated profiles.

HGML Hampden George MacFarquhar Lawson
With its high aromatic concentration levels and greater intensity, HGML was originally used for export market blending. It predominates with ethyl butyrate esters.

C<>H Continental Hampden
Its extreme intensity makes C<>H a rare mark. Its production process is similar to HGML’s and its aroma profile is similar but its ester levels are even higher.

DOK Dermot Owen Kelly-Lawson
DOK is the highest ester-content rum at Hampden Estate and the whole of Jamaica. A legendary mark, DOK reaches the highest legal ester-content levels for rum. Tasting DOK is an extreme but extremely informative experience.

Kentucky Straight Bourbon Whiskey Finished in Madeira Casks is a single barrel cask strength, with an ABV of 54.7% (109.4 proof). The second release was created with a hand selected, sweet mash, pot-stilled bourbon made with a four-grain mash and aged for five years in a traditional barrel rickhouse in Kentucky, before being moved to a madeira wine barrel, where it was aged for an additional 16 weeks.
The nose is spiced pear and apple with crisp Granny Smith apples on the front of the palate. Bubble gum and rum form in the center of the palate, and the finish has notes of peppery spice and madeira wine.

The Red Rocker is coming to St. Louis for concert on Saturday, August 31st, and we will have a limited number of signed bottles of his Santos tequila by Sammy himself.  Santos is co-owned with Guy Fieri!
When he arrives in town, he will sign some bottles for us!  (sorry no personal appearance by Sammy)
