Ama pét-nat tea is a new, lightly sparkling drink that’s low in alcohol but full of flavour, the result of fermenting carefully selected varieties of tea and herbal infusions. Due to its depth and complexity, BAT provides an ideal alternative drink for a variety of dining experiences.

Tasting notes Aromas of delicate herbs. Minerality, salinity, and umami with notes of seaweed appear in the mouth, with a very elegant silky texture.
A complex and harmonious drink, which is a clear expression of the land from which it comes, similar to a delicate sake. Silky on the palate. Long aftertaste. Fine bubble.

Tea Sencha Yabukita. Japan.

Origin Located in Shizuoka Prefecture, Japan, the Moriuchi Tea Garden was planted during the Edo period. It is the life work of the Moriuchi family who have passed their knowledge down from generation to generation. The steep gardens are cultivated organically to produce the finest, hand-picked sencha.

Elaboration Once in contact with cultures of bacteria and yeast, the infusions, prepared using spring water, begin to ferment. Both precision and balance are fundamental in the transformation of the kombucha. These factors, together with the continued evolution and aging in the bottle, are what allow Ama to become its own distinctive self.

Ageing Ama pét-nat tea is aged in the bottle for six months. It will continue to improve over time and can be aged for up to three years.

Pairings Versatile and adaptable. Ideal for accompanying oily fish, oysters, clams and other shellfish.
When to drink Ideal both as an aperitif or by the bottle to accompany different types of cuisine or as a cocktail mixer.
Serve Preferably at 9–11ºC/48–52°F in a white wine glass. Handle and open carefully to preserve the bubbles. The sediment (the small particles of lees resulting from fermentation) present in each bottle can be served or kept in the bottle.
Storage Store in a cool, dry place.

"Accendo Cellars is Bart and Daphne Araujo’s new project, following the incredible success and eventual sale of Araujo Estate, now known as Eisele Vineyard after the property’s jewel vineyard that dates back to the 1800s, which was purchased by Francois Pinault of Chateau Latour fame in 2013. So, what could the Araujo’s possibly do for a follow-up act to reestablishing one of Napa Valley’s most historic, iconic single vineyards? They decided to take inspiration from another era in Napa’s rich history—that of the mid-twentieth century, when blending wines from vineyards throughout the valley was the norm. The Araujos explained that Accendo Cellars is about getting back to “old style Napa,” somewhat in spite of global warming. Pale yellow with green reflections. The nose presents a good intensity from the opening. The first notes are expressed on the exotic fruits (passion fruit, guava and lychee). Notes of lime as well as a a touch of white pepper allows the nose to express a nice freshness. From start to mid-palate, the balance is frank, chiseled and fresh. A certain sweetness then coats the palate. A slight bitterness remains at the end of the mouth, recalling the citrus notes (grapefruit, bitter orange) on the nose.

Blended with a good chunk of Viognier (from the same vineyard and co-fermented), the 2018 Syrah Cailloux Vineyard offers a sweet nose of red and blue fruits, lavender, spring flowers, and bacon fat, with subtle classic Rocks notes of mulch and charcoal emerging with time in the glass. Incredibly complex, medium to full-bodied, and seamless, it reminds me of an old-school Côte Rôtie with its exotic, floral, yet meaty style. This cuvée is always one of the more up-front Syrahs in the lineup, yet it ages just as well as the others, possessing a solid 20- to 25-year drink window.

The only wine to be cofermented with Viognier, the 2015 Syrah Cailloux Vineyard is a perfumed, floral and honeysuckle-scented beauty that gives up more bacon fat, soot and dark fruits with time in the glass. It’s one of the most seamless and silky in the lineup, and I suspect it will be the most approachable on release as well.

100 Points. Incorporating a touch more Viognier than normal, the 2014 Syrah Cailloux Vineyard is 93% Syrah and 7% Viognier from the first vineyard planted in the stones region of Walla Walla. Sporting a surprisingly deep, inky color, it offers a heavenly bouquet of black olives, tobacco leaf, smoked meats, pepper, blackcurrant and black cherry notes. Deep, rich and ever changing in the glass, with incredible complexity and layers, this full-bodied masterpiece has building tannin, a stacked mid-palate and a great, great finish. It's pure perfection in Syrah, and the finest vintage of this cuvee ever made. As a bonus, it’s also the largest production Syrah they produce. Bravo!

Originally an Against the Grain Brewery and Brouwerij De Molen collaboration beer. For the first incarnation, De Molen head brewer Menno Oliver hopped in a muscle car and drove straight through from the Netherlands to Louisville, KY (that’s USA folks) to brew this bourbon inspired ale, and we liked it so much, we decided to do it again. We took the ingredients in bourbon whiskey (Barley, Rye, Corn) and then smoked them with cherry wood and brewed a huge imperial stout with them. Then to top it off we aged it in Pappy Van Winkle Bourbon Barrels. The resulting beer is rich, smokey and complex, with a bourbon character of caramel, vanilla and spice.

An aged brandy distilled from the Parellada and Ugni Blanc grape varieties. Both varieties are distilled separately twice in traditional stills.

Dark amber colour. Deep and warm aroma with notes of vanilla, cinnamon and nutmeg. Intensely velvety on the tongue with a brief finish and subtle oak notes.

This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow - fresh pineapple dressed with a scattering of sun-kissed lemon zest. There’s a hint of freshly-baked sponge cake too, warm from the oven, and you’ll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.
To create 15 Year Old Viking Heart, Gordon Motion, our Master Whisky Maker, selected predominantly sherry seasoned European oak casks to deliver warm, spicy notes and sherry seasoned American oak casks to provide a balance of sweet vanilla. Expertly adding just a few refill casks to soften and smooth the flavours, Gordon chose to bottle at 44% ABV to allow the whisky’s vibrant fruitiness and distinctive heathery peat smoke to shine through.

Why a ceramic decanter? Rewind a century or two and our whisky would have been stored in earthenware vessels. Inspired by examples found at our distillery in Orkney, we asked Wade Ceramics if they could work with us to create a modern version. Established in 1810 and based in Stoke-on-Trent in England (known globally as the traditional home of ceramics) Wade share our commitment to environmental responsibility, focusing on sustainable manufacturing and using locally sourced raw materials. The lead-free porcelain decanter is 100% food safe, glazed inside and out, and embossed with the lion and serpent design that appears on many of our glass bottles. Look closely at the back of the bottle and you’ll find the heart motif that inspired this whisky’s name.

We’ve been crafting our award-winning whisky at the Highland Park Distillery in Kirkwall, Orkney, since 1798. Age, experience and respect for tradition may define our whisky, but it’s Orkney that sets it apart. Something magic happens here and the result is the wild harmony of flavours found in our whisky.
