The 2014 Châteauneuf du Pape is a beautiful wine in the vintage, and Marc Perrin compares it to the 2012. I’m not sure I agree, but there’s no denying the quality in this 2014. Sporting a deep ruby color and terrific notes of blackberries, ground herbs, pepper and Provençal spice, it shows the more forward, charming nature of the vintage and is medium to full-bodied, pure and balanced. Drink it anytime over the coming decade.

As with much of Europe the 2016 Vintage in Tuscany has proved a more than worthy follow up to the much hyped 2015's. Showing more elegance and lift than the more brooding 2015's we are very excited to offer the highest scoring wines of the vintage!



2016 Sassicaia Bolgheri...$229.98
The 2016 Sassicaia is a wine of soaring achievement. I tasted this wine several times during the course of its creation in both barrel and bottle, and the highly deserved 100-point score you see here was enthusiastically assigned at the conclusion of a mini vertical in which I tasted and compared the 2016 vintage against 2015 (which I scored 97 points). It makes perfect sense to present these two excellent vintages in back-to-back comparison fashion because they are two of the best to emerge from Bolgheri, and indeed Tenuta San Guido, in recent memory. These are very similar vintages with long, hot summer months that fueled a long growing season. There was a bit more rain in 2016, and in analytical terms this vintage has a tad more acidity. However, the results in the glass are extraordinarily different. The 2015 vintage is exuberant, round, succulent and immediate, whereas the 2016 vintage shows pinpoint sharpness and precision (with similar grit and texture at the back). That acidity will carry it long into the future as the wine completes its slow evolutionary course. This wine is chiseled and sharp with blackberry, ripe cherry, grilled herb and barbecue spice. The aromas flow from the glass in a continuous stream and are all marked by radiant intensity. The mouthfeel is long and powerful. The crisp linearity of the wine's tannic backbone is perfectly measured to the volume and depth of the fruit flavors. To my mind, the 2016 Sassicaia stands tall next to the epic 1985 vintage that set the ultimate benchmark for vino italiano.

2016 Ornellaia Bolgheri....$219.99

The 2016 Bolgheri Superiore Ornellaia is a wine of extreme complexity and precision. It offers monumental depth with profound layers of black fruit, coffee, licorice and baking chocolate. I tasted this 2016 vintage beside the less-impactful 2015 vintage (which was reviewed last year). These two editions are very different when compared side to side, and this 2016 release is clearly superior in terms of the quality, clarity and intensity of its offerings. This Ornellaia delivers glossy shine and a polished texture that segues to important richness, concentration and textural fiber. It wraps thickly over the palate, imparting waves of sweet dark fruit and dark spice that linger for many long minutes. This beautiful wine is hitting the market now, but collectors will want to put it straight into their cellars for safekeeping.

2016 Antinori Guado Al Tasso....$114.98
This stunning vintage of this landmark wine marks a slight adjustment to the blend. The 2016 Bolgheri Superiore Guado Al Tasso is no longer made with Petit Verdot. The blend is now 60% Cabernet Sauvignon, 20% Merlot and now 20% Cabernet Franc. This small change does not go unnoticed, as this wine is absolutely seamless now—like the finest Asian silk fabric. That profound textural softness and suppleness changes the way the wine smells and tastes, with hints of momentary sweetness that are more tactile than anything else. Generally speaking, the 2016 vintage offers more elegance (slightly less concentration) and a hair more freshness compared to the 2015 edition. When I tasted this wine, the bouquet was still timid, but it will no doubt become more expressive and open as this beautiful wine continues forward along its aging trajectory.

We focused on a rye. This whiskey is a blend of 60% rye, 15% caramelized rye and 25% smoked barley malt. I am collaborating with a small local distillery that makes several other fine spirits, Square One Distillery in Lafayette Square, to make the whiskey. 4 oz Gosling’s Black Seal Rum (in stock at TWCP)
4 oz Gosling’s Gold Rum

5 oz Pineapple Juice
5 oz Orange Juice
¾ oz Grenadine or 2 oz Bermuda Falernum

METHOD:  Into a pitcher ⅓ full of crushed ice add Gosling’s Black Seal Rum, Gosling’s Gold Rum, pineapple juice, orange juice, Grenadine or Bermuda Falernum and Angostura bitters. Churn vigorously until a frothing appears or mix in a cocktail shaker. Strain into a martini glass.

It is hard to believe that we started working with the Black Slate lineup all the way back with the 2010 Vintage!  I wonder if any of our customers still have a 2010 Black Slate Porrera or La Vilella Alta in their cellar? If so we would love to hear how they are tasting. Looking back on our original blog post from 2013 I am amazed that the prices for these gems are still under $20. It was true then and it is true now, the wines represent some of the greatest values from any region in the world.

White Cheddar vs. Yellow Cheddar - What is the difference?
The only difference in color is the result of a coloring additive. Typically the color comes from a plant extract of the achiote tree called annatto.  Does not mean one is sharper than the other.   It is totally up to the producer.  As you might notice the practice did not catch on in Vermont, you do not see many yellow vermont cheddars.
Why did they start coloring cheese?  It started back in England.  Cheese that had a higher fat content would be darker in color.   Cheesemakers found out that they could skim the cream of their milk and sell the cream it at a premium before making their cheese.  This resulted in a cheese with less fat content and less color.  So some started adding coloring to their cheese to make up for the loss of color and to make their cheese stand out at the cheese markets.  So the story goes.....
