8 Wired The Sultan Quadrupel...$9.49 / pint


The beer you hold in your hands is the result of years of practise and refinement. I have brewed it every year since I started homebrewing, and it was one of the first beers I ever brewed. In fact before the mere thought of 8 Wired was conceived. I always knew that one day I would brew this beer commercially.Every year the Sultan has been different, but it is always Belgian inspired, of course with a large dose of sultanas. This bottle contains the fifth version of the Sultan. I finally decided to base it on a Belgian style Quadrupel. The sultanas are more present than before, and it is brewed with a hefty dose of pilsner malt, Belgian specialty malts, dark candy sugar and a funky yeast strain. Experience and enjoy it now, or mature it for years to come.
I can’t personally guarantee it, but I bet that it will get better with time.

8 Wired Saison Sauvin...$8.99 / pint

Saisons have been around for ages. Traditionally brewed by Belgian and French farmers to provide refreshment during harvest. I’m guessing that flavour wasn’t a main concern back then; the priority was to provide a beverage that was safe to drink, because water usually wasn’t. Never the less, over time they developed a beverage chrarissed by beer geeks of the modern world.

The alcohol content was low, so the workers could consume enough to keep hydrated and still perform their job: To load the barn with enough barley for next years brewing season. I bet these hardworking, humble farmers never imagined, that centuries later, their style of brewing would inspire brewers from all over the world.

As all our beers, this is a very modern, you might say new world, interpretation of this style. Based on the tradition we have used a French Saison yeast, which provides a plethora of funky, earthy, very "Belgian" flavours. From there we have upped the ante a fair bit by doubling the amount of malt, and thereby the alcohol, and loaded the kettle with punchy Nelson Sauvin hops.

Unlike the original, this is not a beer meant to be drunk by the gallon. Moderation is the key for full enjoyment of all great beers.

It uses only malt, hops, yeast and water; no spices or sugar. It has some American hops -- the brewers work for the Yakima Chief hop consortium -- but they aren't over-used. This beer is a Belgian Tripel that lives up to its name. Smooth and carefully crafted like a fine velvet painting, but with an 8.5% ABV this bird has some spurs! The beer pours a golden straw color with brilliant clarity. Topped with a lofty pure white head the beer has a wonderful floral nose, with subtle fruit notes.

The taste is clean and crisp, with subtle fruit notes and a touch of candy like sweetness. The beer has a Champagne-like effervescent that provides a crisp offset to its sweet finish. While a pint glass is always nice, Velvet Rooster would also be at home in a tulip glass or Champagne flute.

Last week, in one of my regular weekly blind tastings, I came across a pair of wines that consumers will love....But one is also a wine that has to make Napa Cabernet producers nervous.    Beringer has another 2009 Knights Valley red, this one also a Cabernet, for $27, with 79,500 cases made.....damn good. These are the kinds of wines that get you excited about 2009 reds. So far there have been many exciting wines from this vintage, but also a few I've tried that show the difficulties of the growing season.
