An utterly majestic Shiraz, sleek and seamless, brimming with ripeness on a framework that allows for grace and expressiveness in equal measure. The intensity of fresh blueberry and plum fruit holds attention until the nuances kick in, offering glints of exotic spice, coffee, cocoa, bay leaf and mint. Shows tremendous presence without a lot of weight, the tannins present but not even close to getting in the way. A great wine now, with plenty of room to grow. Drink now through 2040. Deep purple-black in color, the 2008 Grange puts forward a very complex nose packed with aromas of mulberries, layers of baking spices, cloves and cinnamon with nuances of minced meat, anise, potpourri and whiffs of dried mint and chocolate. Medium to full-bodied, taut and very spicy in the mouth, it shows touches of sandalwood and Chinese five spice complementing the layers of dark fruit flavors. It is framed by firm, grainy tannins and a refreshing acid line before finishing very long with aniseed and lingering blackberry preserves notes. This is clearly a wonderfully opulent and a magic vintage for this label. Drink it from 2018 to 2035+.

Situated at opposite ends of the California Trail, pioneering breweries Sierra Nevada and Boulevard have once again embarked upon a journey into the unknown. It was in 2012 that we first convened to craft a beer for SAVOR attendees. And it’s that collaborative effort, aptly named Terra Incognita, which brought us together to relive our collective adventure in 2013—and this time we will release it out into the world.
Earlier this year, Sierra Nevada Head Brewer Steve Dresler and Boulevard Brewmaster Steven Pauwels met in Kansas City to create a blend of three components:
Terra Incognita aged in Templeton Rye barrels
Terra Incognita aged in a 2,000-gallon foudre
Fresh Terra Incognita dry-hopped with East Kent Golding


The end result is a, fittingly, earthy beer, celebrating the unique terroir of our two locations. The blend incorporates (roughly) 45% foudre-aged, 30% Templeton-aged, and 25% fresh dry-hopped beer—all aimed at showcasing some predominant oak characteristics with a subtle hint of earthy hops. Then just prior to bottling we added a dose of the wild yeast Brettanomyces, and allowed the beer to age for over three months.
In the spirit of two breweries joining forces, we encourage you to enjoy this beer with good friends (and good food), and then join us in eager anticipation as we wait for Terra Incognita to return yet again in 2014.

Pegau releases.....


2010 Pegau Chateaneuf du Pape Cuvee Reserve...$59.99 / 500ml
Yes, it is not a half bottle, it is a 2/3 of a bottle -- 500ml

The 2010 Chateauneuf du Pape Cuvee Reservee, which I tasted from several foudres, is essentially equivalent in quality, but it has not yet been bottled. If I understood Paul Feraud correctly, he tends to prefer the 2009, but says Laurence prefers the 2010. In any event, this is one of those “pick’em” dilemmas. The 2010 is a fabulous wine of exceptional intensity, tremendous flavor authority and full-bodied power. It is slightly more reserved than the more flamboyant 2009, but of course it is still in foudre. Very rich with lots of Provencal herb, smoky, meaty, kirsch, black currant and blackberry notes, it is a stunningly viscous, thick and rich effort with a slightly more vibrant finish. This magnificent Chateauneuf du Pape should age for three decades or more based on how well the 1989 and 1990 are maturing. This 2010 should be bottled early next year, and released in Fall, 2013.

2007 Pegau Chateauneuf du Pape Cuvee de Capo....$419.99
For the fourth time, the Chateauneuf du Pape Cuvee da Capo has been produced, and for the fourth time, it has received a perfect score although I might back off the 2000's perfect score based on the fact that it seems to be more of an upper-ninety point wine than pure perfection these days. The 2007 may come closest in style to the 1998, the debut vintage, although the tannins are sweeter and the wine is perhaps fatter and richer in the mouth. The alcohols in these cuvees can be very high, ranging from 16.1% in 2003, 15.8% in 2000, 16.3% in 1998, to 15.5% (the lowest ever) in 2007. An inky/purple color is followed by aromas of smoked meats, Peking duck, licorice, lavender, aged beef, grilled steak blood, black currants, plums, sauteed cepes and soy. Enormously concentrated, broad, expansive and massive but not over the top, this is a tour de force in winemaking that is impossible to imagine unless one has a bottle to work through over the course of 4 to 5 hours. Although they advertise using all 13 authorized varietals, this wine is over 90% Grenache, largely from the famed La Crau section of Chateauneuf du Pape. They do have other vineyards from which they pull some of the fruit that goes into the Cuvee da Capo, including St.-Jean, Esquilons and occasionally Monpertuis. The 2007 seems to be broader, fatter, more unctuously textured and more flattering to drink at this stage than the 1998 was. In that sense, the evolutionary development may resemble their 2003s. The 2007 was bottled in February, 2010, and my anticipated drinking dates are 2014-2030+.

RE: Chapter 4, Class and Type Designation for Spirits
We propose an amendment to the TTB Class and Type Designation under spirits for the category of gin under Title 27--Alcohol, Tobacco Products and Firearms (gin standard of identity is below) for the primary reason that historical categories of gin (ie. London Dry, Old Tom and Geneva gins) are not given specificity for their historical styles. This is an egregious disservice to the consumer. Consumers have the right to know from where and what style of spirit it is they are consuming. Current gin definitions are vague and ambiguous such that a Geneva gin could be labeled London Dry without any oversite. Our secondary reason to request an amendment to the standards of identity is to foster appellation of spirits within the United States which would give greater regional specificity to American spirits and define more precisely the style and quality each spirit. Consumers deserve to have stronger oversite on distilled spirits much as we have a robust appellation process for vineyard land and wines in America.

(c) Class 3; gin. “Gin” is a product obtained by original distillation from mash, or by redistillation of distilled spirits, or by mixing neutral spirits, with or over juniper berries and other aromatics, or with or over extracts derived from infusions, percolations, or maceration of such materials, and includes mixtures of gin and neutral spirits. It shall derive its main characteristic flavor from juniper berries and be bottled at not less than 80° proof. Gin produced exclusively by original distillation or by redistillation may be further designated as “distilled”. “Dry gin” (London dry gin), “Geneva gin” (Hollands gin), and “Old Tom gin” (Tom gin) are types of gin known under such designations.


Recipe of the week: Makers Mark Bourbon Bacon Cookies

Extra Notes:
This is one of my signature recipes, with two of my favorite things, bacon and bourbon, accented by chunks of rich, dark chocolate. The smoky, saltiness of the bacon pairs perfectly with the sweetness of the bourbon, chocolate and vanilla flavors. Honestly, these cookies will win you friends and admirers. No joke.

Prep Time: 1 hour
Cook Time: 20 minutes
Level: Intermediate

Makes 3 dozen cookies

RECIPE:

  • 3 tablespoons Maker’s Mark® Bourbon  ***
  • 3/4 pound bacon, 1/4-inch dice (We used Jones Heritage)   ***
  • 2-1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt   ***
  • 1/2 cup unsalted butter, softened
  • 1/2 cup reserved bacon fat, chilled 
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup packed dark brown sugar
  • 1 teaspoon vanilla extract   ***    
  • 2 large eggs     ***
  • 8 ounces dark chocolate, chopped into small pieces   ***
We drizzled Sweet Sophie Bourbon Barrel Aged Maple Syrup on top right after they came out of the oven!!!!!

In a large sauté pan, cook out the diced bacon until the bacon pieces are golden and crisp. Remove the bacon pieces from the fat and drain on a paper towel. Strain the fat through a fine sieve and measure out a ½ cup of bacon fat and chill the bacon fat until it congeals and is set.
Preheat the oven to 375°F. Combine the flour, baking powder, baking soda and salt in small bowl. Beat the butter, chilled bacon fat, granulated sugar, light and dark brown sugars, vanilla and Maker’s Mark® Bourbon in large mixer bowl until it is well combined.
Add the eggs one at a time, beating well after each addition; gradually beat in the flour mixture. Stir in the cooked bacon pieces and chopped chocolate bits. Drop by rounded tablespoon onto parchment-lined baking sheets at least 3 inches apart.
Bake in the oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely. Keep in a dry, airtight container for up to 5 days.

* A fattier sliced bacon is preferred, as lean bacon and turkey bacon will not work for this recipe.
** Use a dark chocolate with 65% cocoa or higher. Anything from a 65%-85% chocolate will work well.

Everything we do revolves not only around the finished product, but how it comes into being. Our processes, traditional in nature, have been learned, honed, and crafted into a modern day replication of traditional methods. We still do most everything by hand. From malting our own grain, to our hand-crank grain mill, to actually stirring our mash, we focus on what is best for our product.Located in Union, Missouri, Shawnee Bend Farms has been in the family for nearly 50 years and serves as the backdrop for the Distillery. It is a serene place where the neighbors are as close as family. Which is good, since we value our community, our friends, and our family. We work diligently to maintain a good relationship with the surrounding residents and include them in our plans when possible. We also work to ensure that they, if they are able and willing, are looked to first before looking to outside local vendors. We try to keep it “in the family.”
