The flagship is the 2017 Cabernet Sauvignon Poetry, which is based on 88% Cabernet Sauvignon, 7% Cabernet Franc, 4% Petit Verdot, and the balance Merlot. Straight-up awesome notes of black raspberries, blueberries, smoked tobacco, violets, spice box, and gravelly earth as well as a bloody, meaty character all emerge from this magical wine. With full-bodied richness, ultra-fine tannins, flawless balance, and a great, great finish, it doesn't have the sheer opulence of the 2016 or 2015 yet shows a more classical, elegant, style that still packs ample richness and depth. It needs 4-5 years of bottle age and will keep for 20 years or more. It's a candidate for the wine of the vintage and is an incredible achievement for this team. Bravo.

Casks have a huge influence on our whisky. As our fresh new make spirit slowly matures inside them, the casks use these long years to impart their vast array of robust flavours.

It only follows then, that when you bottle straight from the cask, without adding water to reduce alcohol content, you are going to taste our whisky - and the cask’s influence - in its purest form.

Cask Strength Release No. 1 is matured predominantly in sherry seasoned American oak casks of different ages, hand-selected by Gordon Motion, our Master Whisky Maker. It is then directly bottled - not chill-filtered - to ensure the essential DNA and natural colour of our whisky stays intact. There is nothing in this whisky other than the whisky itself. Nothing but the intensely balanced, award-winning spirit of Highland Park.

It is at once sweet and smoky on the nose, with aromas of violets and ripe vanilla pods amidst waves of aromatic peat smoke. This has been a pub favorite since we opened...but is something we typically only do once a year. This is the first time it's been packaged (only place outside the brewery you can get it). It's a 4.5% stout that's meant to have imperial stout flavors while remaining super drinkable. While it's a lower ABV, it still has solid body. This is coffee forward with additions of vanilla, cacao nibs, and cinnamon with very light maple in the background.
