For us, the weeks leading up mean one of our favorite Stone Enjoy By IPA beers is available. That’s 30 full days of celebrating the glory of those magical resinous green buds we call hops. This uber-fresh, specifically-brewed-not-to-last double IPA is the perfect way to pay homage to our favorite brewing ingredient. Distilled, aged, and bottled in Kentucky, Chicken Cock Kentucky Straight Bourbon Whiskey has a rich, elegant mahogany hue; a nose which balances oak tones with sweet notes of dried fruit, caramel, and vanilla; and a palate that opens with soft tannins. A creamy, almost buttery mouthfeel is complemented by butterscotch notes and toasted oak, resolving with a vanilla finish. At 90 proof, there is a slight, welcome bourbon heat. The bourbon is bottled in a replica of the Prohibition-era Chicken Cock bottle.

THE HISTORY OF THE FAMOUS OLD BRAND​
Established in 1856 in Paris, Kentucky, a town tucked away in the heart of Bourbon County, the original Chicken Cock American Whiskey rose to popularity during the 19th century. James A. Miller built a distillery and started making Chicken Cock, a type of whiskey unique to the bluegrass region. It was an infamous staple of prohibition-era speakeasies, like the Cotton Club, and was smuggled inside in nondescript tin cans. Unfortunately, the original distillery where Chicken Cock was made, burned down in the 1950s. Known as The Famous Old Brand, Chicken Cock Whiskey has now been resurrected, because good spirits never go out of style. Staying true to the rich 160-year-old brand identity while modernizing it just a touch, the products we’ve created are an unsurpassable collection of heritage whiskies.

2015 Il Poggoine Brunello di Montalcino....$74.99

The Il Poggione 2015 Brunello di Montalcino shows a darker and more concentrated appearance than many of its peers. The wine is beautifully abundant and fragrant in the most exuberant and expressive manner. You will recognize aromas of moist soil, tobacco and smoke. Candied cherry hovers over the entire bouquet. Fruit is sourced from older vines (all over 25 years old). Il Poggione occupies a special spot within the Montalcino appellation, and the area always produces slightly more concentrated and powerful wines. I find that to be particularly true in this gorgeous 2015 vintage. I am also very attracted to that almost dusty note of crushed mineral that rides long on the full-bodied finish. Il Poggione's Brunello is also distinguished by firm, youthful tannin that need a few more years to unwind.

2018 Chateau Fontana Bordeaux Rouge...$14.99
Blend of Cabernet Sauvignon, Cabernet Franc and Merlot
This one we tried to get last year, but the importer says it sells out so fast each year we already missed out. We are excited to be able to get the sought after 2018 vintage. This one is a fraction of the cost for Fontana’s neighbors, the wine is from Bordeaux, which is regarded as the best wine producing region in the world.
Fontana’s old-vine Merlot (36 years old!) are thriving where others are struggling and exquisitely expressing their character, blended with Cabernet Sauvignon and Cabernet Franc flesh out into a champion bottle with violet aromas and a rich palate ripe red and blueberries, spice, and earth. Just as much an everyday drinker as it is a celebratory one or one to lay down, the 2018 Chateau Fontana as it is now is the very definition of an easy drinker of which, vintage after vintage, we’ve been repeatedly stunned on how superbly it exemplifies its terroir.

Premium quality selection of the most beautiful berries and the most mature from the oldest vines. This wine delivers a pretty red color, a fine nose of red fruits. On the palate, the attack is clear, the material is dense and supple. It offers a very long finish, pleasant and flowery on powerful cheeses. Great with cheese!

This Rhone is the real deal and a sensational value!
Floral notes accent fresh mixed berries in this 2017 Cotes du Rhone Villages that is made from Old Vine Syrah, Grenache and Mourvedre. The Syrah dominates and leads to a full-bodied wine but with silky tannins. It has a slight pepperiness to add some dimension and complexity. This wine is produced by the third generation on this estate and it is a fruit driven Cotes du Rhone with great roundness and complexity.

2016 Château Pineraie "Cuvée des Dames" Cahors...$14.99
A plush and voluptuous 100% Malbec. Dark purple in color with flavors of blueberry, blackberry and cassis surrounded by a nice toasted spice that rounds out the wine. Enjoy this one with a variety of food.
Château Pineraie, a vineyard of 50 hectares, is located in Puy-L’Evêque, near Cahors. Six generations of the Burc family have cared for this vineyard. The sisters, Anne and Emmanuelle, the current generation to oversee Château Pineraie, work together to carry on a wonderful family history, always with a strong will to fulfill their commitment to an ever improving quality. We believe that the diversity of our vineyard’s soils is one of the most significant assets of our wines. Little wonder that Cahors is the cradle of the Malbec grape.

2017 Comte de Langeron Cote de Brouilly...$19.99
The appellation of Côte de Brouilly sits on the high slopes of the extinct volcano Mont Brouilly and is surrounded by the larger appellation of Brouilly. Cote de Brouilly is bigger and riper than regular Brouilly.
Gorgeous nose of rose petals, violets and a hint of dark roast coffee. On the palate, it has great body with a deep and generous core blueberries and ripe cherries. Drinks very well now but will age 4-8 more years. Very small production.

The 2017 Chardonnay Puerta del Mar Special Selection is a blend of barrels that spent more time in oak and saw more new wood. Not surprisingly, those choices bring out a more tropical set of aromas and flavors. Orange peel, spice, vanillin and passion fruit all develop nicely in the glass. I find the greater oak influence here works very nicely to complement the naturally more austere leanings of Puerta del Mar. The result is a gorgeous, expressive super-classic Santa Barbara Chardonnay loaded with personality. I loved it.

The 2017 Chardonnay Puerta Del Mar Vineyard Special Bottling was brought up in 50% new French oak whereas the regular release sees just 5% new oak. It also spent 16 months in barrel versus 11 months for the base cuvee. I don’t always find the Special Bottling superior to the regular bottling, but in this case, the change in elevage has resulted in a deep, richer, more textured wine. Offering plenty of tropical and orchard fruit interwoven with hints of crème caramel, white flowers, and brioche, it hits the palate with medium to full-bodied richness, a rounded, layered texture, and a great finish. Its oak is beautifully integrated, yet it will still benefit from a year or so of bottle age and keep for over a decade.

This sour fruited ale was brewed in collaboration with our friend Tom, from Big Island Brewhaus. This beer is part two of a three-part series and includes Amarillo, Cascade, and Citra hops followed by additions of cherry and grapefruit. The tart cherry accentuates the dry grapefruit, leaving a lingering bitterness on the tongue. Full of grapefruit pith, oak, and funk, with a very subtle dry cherry finish.
Tom and I are both naturally shy and reserved, but eventually we become friends. At least I’m pretty sure we became friends… ;-) And we decide to brew a beer together. We plan and plan, brainstorm and brainstorm, choose the perfect local ingredients…
The fruit is decided, the hops and grains ordered. All in plenty of time. Because the one thing you don’t want to come up short on, is time.
