We met our first producer for our Vino De Mezcal series, Fernando Caballero Cruz five or six years ago at the annual Dia de los Magueyeros. He and his family live in the Mixteca Alta region. The trip in to Teozacoalco is about 5 hours on the worst rock and dirt road we have ever been on. The maguey Papalometl is named in Nahuatl for the butterfly (papalotl), Scientific name: agave Cupreata and looks like a giant Tobala. Distillation takes place in a stainless pot with a clay condensor and Carrizo (Mexican bamboo) tube. Earthy, dark and delicious. The nose is like sinking into a rich leather chair. A palate of leather, slate, a hint of black olive and meatiness. A medium long finish starting with slightly sweet notes of dark dried black cherries that gives way to an earthy, savory mushroom. Their “palenque” (site of production) is the most well organized we have seen, including a cistern to cool and recycle the water used in the condensation process.The most unique facet of this pueblo that gives the fruitiness to Minero, is that the still is made of clay with bamboo tubing, rather than the usual copper stills and tubing.

This Special Edition of 360 bottles made from giant semi-wild, maguey Arroqueño is dedicated to Thor Heyerdahl, Biologist, Explorer and Great Human Being. The magueys were roasted in a conical pit over hot rocks, buried with earth for three days, fermented with nothing but airborne microbes for thirty days, then twice -distilled very slowly in an ancient clay still with bamboo tubing the original, centuries-old Oaxacan, hand-crafted way. Arroqueño has notes of luscious melon on the palate, like cantaloupe and a bit of baking chocolate in the background. It is very vegetal, reminiscent of fresh green beans, with savory medium to long finish.

Distilled in the country for hundreds of years, low-proof “Korean vodka” is the most important guest at social gatherings, parties, and celebrations. These days, most sojus are mass-produced and mixed with artificial flavorings, sweeteners, and other tongue-twisting chemicals. Vastly different from the juniper-heavy gins of the past, No. 209 opens with a beautifully aromatic nose of predominately citrus and floral notes with a hint of spiciness. First across the palate are the citrus high notes, with lemon followed by a hint of orange. As the spirit warms in the mouth, delicate floral notes are liberated from the bergamot and coriander. Mid-palate, there is a pepper-like warmth from the emerging cardamom and juniper. As the cardamom continues to bloom across the palate mint-like components further emerge. The cassia and other warm spice notes become prominent on the finish. The cassia in particular lingers, encouraging another sip.

Claverach Farm Is 300 Acres Of Rugged Ground In The Ozark Hills Just Twenty Miles Outside Of Saint Louis, Missouri. We Have Been Farming This Land Using Organic And Biological Methods For Twenty Years, 

This red wine is 100% Chambourcin. Grapes were hand-harvested in September and carefully sorted. They were then macerated on the skins for 5 days, pressed, and fermented in stainless steel with native yeasts. Unfined, unfiltered, minimal sulfite (30 ppm added preferment). Only 28 cases made.

A great lighter-bodied red for summer (takes a chill nicely!). Toasty stem tannins on the nose. Herbaceous and earthy, with black raspberries and violets. Good acid. Reminiscent of Syrah. Pairs well with farm-fresh fare.

Here at Claverach, we grow grapes very differently than most Missouri vineyards. Most Missouri vineyards grow grapes on flat ground at low density so that most of the work can be done by machines. Vines can be mechanically cultivated, mechanically pruned, mechanically sprayed, and even mechanically harvested.

We grow grapes at high density (up to 2500 vines per acre) and often on steep ground so that more of the vine's energy is concentrated into low-yielding, high quality fruit, and less of the energy is focused on being a big, jungly canopy with loads of poor quality fruit. The trade-off is that almost all the work here must be done by hand.

Is Orange the New White?
  • Let’s clear this up first: orange wine is not made from oranges, it refers only to the wine’s colour ;)
  • It’s also known as amber wine and skin-fermented white wine
  • Although orange wine seems new and trendy, it’s actually an ancient style of wine that’s been used for thousands of years to make white wines, often fermented without temperature control for long periods in qvevri (clay vessels or amphorae), in regions such as Georgia and Armenia.
  • Modern white winemaking with temperature-controlled fermentation in stainless steel tanks has only been practised for the past 40-50 years.
  • The re-emergence of orange wines started in the early 1990s with Italian winemaker Josko Gravner in the northern cool region of Friuli. He was trying to get away from over-manipulated wines and get back to ancient methods.
  • Today, orange wines are produced in Europe, North America, Australia, Chile, South Africa, New Zealand.
  • Orange wines are white wines made like red wines: confused yet?
  • They start out like making white wine, but then they leave the grape skins on during fermentation just as red wines do and white wines do not.
  • This imparts distinctive colour, flavour and texture whereas the skins are removed to ferment white wine
  • orange wine is also exposed to more oxygen which adds a savoury character called umami, the fifth taste along with sweet, salty, sour and bitter
  • The VQA law specifies that the wine is a table wine (still or effervescent) made from fresh white or pink vinifera and permitted hybrid grapes.
  • All of the grapes are macerated and fermented on their skins for at least ten days to achieve the character of orange wine.
  • The words “Skin Fermented White” must be on the label and optionally “Orange” or “Amber” can also be printed. appear alongside), but the essence is that the wine must ferment on the skins.

  • And not all orange wines are also natural, organic or biodynamic wines
  • You won’t find an orange wine category on most restaurant lists: they’re usually lumped into the white wine category, and sometimes rose, except of course, on the hippest lists in San Francisco, New York, Paris, Tokyo and Florence.
