The paw paw is a native North American tree known for the fruit it bears in the late summer through early fall. The fruits are green on the outside, yellow on the inside and grow to a length of up to six inches. Many Missourians use the pulp, which is roughly the same consistency as a banana, to make bread, pie, jelly and custard. The flavor is often compared to that of a banana, mango or kiwi. Pawpaw trees themselves are short and serve as forest undergrowth.

Rare and elusive, the Paw Paw is a fruit like no other with a taste reminiscent of banana and mango. When we poured the charcoal out onto the ground for sorting, we all hardwood charcoal with nothing that shouldn't have been there. As you can see from the following chart, the distribution of sizes was exceptional with the percentage of chips and dust falling below 5%. This is very low compared to all other charcoals we have tested. The bag contained almost an extra pound of charcoal, so we ended up with almost 20 pounds of usable charcoal.
There was no sparking or popping when lighting the charcoal in a chimney starter and the fire was somewhat slow to spread. The smoke coming off the charcoal during lighting was very mild, as mild as we think we have ever noticed.
During our maximum temperature test, the charcoal burned at just over 900° which is high compared to other brands we've tested. Again, the fire was rather slow to spread and build up to the high temperature it achieved.
When it came to burn time, this charcoal came in as the fourth longest burning lump charcoal we have ever tested. The ash produced was very low compared to other brands.
You get a charcoal that doesn't over power the food, allowing you to control the smoke flavor yourself with chips or chunks, and a charcoal that burns a good long time producing little ash and delivering good value for money. This charcoal gets our Highly Recommended rating.

This whisky is from a Vatting of casks of Single Malt Whisky. It has been finished in an Oloroso Sherry Butt - bottled without chill-filtration and there is no added color.

Black snake starts its life in first-fill ex-Bourbon casks. We then put three of them into new Oloroso or PX Butts and leave them for about a year for further maturation before bottling two-thirds of each cask. We call these casks 'Vats' as they are a kind of mini Solera.

After each bottling, we add two more ex-Bourbon casks, always of the same whisky, and leave for around a year before again bottling two-thirds of the Vat. All future bottlings from each vatting of Black Snake will therefore contain some spirit that was in the previous expressions from the Butt. From time to time the Butt is renewed.

Each time we bottle we call it Venom, as in the poison from a snake's bite. The first bottling from each Vat is called First Venom, and the second bottling is called Second Venom, and so on.

Uncut the Younger -> now Desert Colt, our second expression in the entry level category is finally here! Consisting mainly of 4 year 36% rye bourbon from several floors and warehouse locations. Desert Colt is blended to be fruit forward, with tons of candy flavor notes and finishing with some bold cinnamon spice with gentle heat. It’s non chill filtered so it’s buttery and creamy, drinking more delicately than one would think based on its proof.

The journey to create Uncut the Younger began around October 2020. I tried a Straight Bourbon blend before proofing it down and I was really impressed with the flavor profile. It was fruit forward with tons of delicate candy flavors and big cinnamon spice on the finish. My original thought was to create a younger version of Uncut Unfiltered, and release it as a Rare and Limited batch. In December 2020, when the first Rare and Limiteds’ were announced, I quickly realized that a R&L would never retail for less than regular Uncut, so the idea was put on a back burner.
A few months later the company that makes our clear stock bottles for Straight, informed me they were coming out with an amber version. I was interested and I knew exactly what to use those for. I let them know I wanted as many as they could get me. Releasing a Rare & Limited younger Uncut was one thing, but being able to offer an affordable cask strength bourbon that could be one of our core expressions AND a high proof lover’s daily sipper, really got me excited. I truly believe having superior and affordable bourbons is essential. Also I wanted Straight to have a cask strength sibling the way Small Batch has Uncut Unfiltered, it all just made sense.
A year and a half later - Uncut the Younger -> now Desert Colt, our second expression in the entry level category is finally here! Consisting mainly of 4 year 36% rye bourbon from several floors and warehouse locations. Desert Colt is blended to be fruit forward, with tons of candy flavor notes and finishing with some bold cinnamon spice with gentle heat. It’s non chill filtered so it’s buttery and creamy, drinking more delicately than one would think based on its proof.
