Released in October of last year, Pol Roger's 2008 Cuvée Sir Winston Churchill is showing brilliantly, unfurling in the glass with a complex bouquet of waxy citrus rind, dried white flowers, freshly baked bread, iodine and honeyed yellow apple. On the palate, the wine is full-bodied, powerful and vinous, with a deep and multidimensional core, broad structural shoulders and considerable concentration, girdled by tangy acids and displaying a youthfully frothy but incipiently fine mousse. The finish is long and intense. This is a terrific rendition of this reliably superb cuvée and well worth seeking out.

"Real Soy Sauce"

Fantastic artisanal Soy Sauce
Kishibori Shoyu Soy Sauce...$16.99 / 12oz
"The best stuff we’ve found is Kishibori Shoyu. "Commodity" soy sauce tastes like salt and not much else – but this soy sauce tastes like something you wouldn’t mind eating all on its own. When you pour it onto a spoon you can see that it has a much higher viscosity than the commercial stuff, along with a beautiful amber hue. The scent is floral with a nice bit of earthy porcini funk. Kishibori Shoyu is rich and brothy on the palate, with a saltiness that supports rather than overwhelms its many layers of flavor. It has a meatiness (read: umami) that’s reminiscent of the crust on a well-seared steak.

Kishibori Shoyu is produced by the Takesan Company which was founded by Yoshiji Takebe in at the turn of the 19th century. He chose the small island of Shodoshima for his shoyu company not only because of the ideal temperate climate for fermentation, but also for the regions long history of sea salt production. Today other Shoyu producers have followed suit, and Shodoshima Island has become Japan’s third largest Shoyu producing region.

The Takesan Company still makes their shoyu artisanally, using only the highest quality whole soybeans, toasted wheat, and artisanal sea salt from the surrounding Seto Inland Sea. The production of Kishibori Shoyu is similar to that of the legendary Balsamic vinegar, in that the Takesan Company uses American white oak barrels (some of which from when Yoshiji first started the company!) to age their shoyu. After the three ingredients go through the “mashing” phase, they are allowed to slowly ferment in the oak barrels for a year. The slow fermentation process creates organic acids that heighten the flavor of the soy sauce, and eliminate the need for the artificial preservatives and alcohols found in the commercial stuff. After a year of aging in the oak barrels, Kishibori shoyu is filtered, pasteurized, and bottled.

Because this soy sauce is so special, it should be treated a little bit differently. We’d recommend using it to finish a dish, or as a great dipping sauce with fresh chives and a bit of extra virgin sesame oil. It would take the super simple dinner of rice with a fried egg on top to the next level. We taste so many Cotes de Gascogne and most are just boring and insipid. Horgeuls is exciting and vibrant!
The estate is run now by Yoan Le Menn, his son. Yoan represents the younger generation of oenologists who work tirelessly to combine modernity and experience. The biggest task is preserving of the aromas by limiting, as much as possible, all forms of oxidation of the “must” and the wines. For this reason the grapes are harvested early in the morning – from 3am to 11 am – in order to take advantage of the cool air. On the other hand, the carbon dioxide from the alcoholic fermentation is recuperated to protect the newly pressed juice. From the grape to the bottling process, everything is designed to preserve the fruity flavors and freshness of our wines.

This appellation, Coteaux Bourguignons, was created in 2011 covers red, white, and rosé wines, grown over four départements. The Coteaux Bourguignons appellation covers wines that can be blended or come from a single varietal, and which can use some more old-fashioned varietals. Production of white is very small from this area and most of them do not leave France. We are excited to bring this one in to Missouri!
A blend of Chardonnay and Aligoté of which most is matured in stainless steel. It has a great Burgundy nose with a touch of minerality that comes from the Aligote. Great flavors of tart apples and a steely acidity finishes off this great wine. Highly recommended and very limited production

The appellation of Côte de Brouilly sits on the high slopes of the extinct volcano Mont Brouilly and is surrounded by the larger appellation of Brouilly. Cote de Brouilly is bigger and riper than regular Brouilly.
Gorgeous nose of rose petals, violets and a hint of dark roast coffee. On the palate, it has great body with a deep and generous core blueberries and ripe cherries. Drinks very well now but will age 4-8 more years. Very small production.

Alexia farms with respect for the environment, in harmony with the climate and soils. Since the 19th century, we have produced a broad range of Burgundy and Beaujolais appellations, part from family owned vineyards and the rest as vinificators.

2017 Comte de Langeron Cote de Brouilly...$19.99
The appellation of Côte de Brouilly sits on the high slopes of the extinct volcano Mont Brouilly and is surrounded by the larger appellation of Brouilly. Cote de Brouilly is bigger and riper than regular Brouilly.
Gorgeous nose of rose petals, violets and a hint of dark roast coffee.   On the palate, it has great body with a deep and generous core blueberries and ripe cherries. Drinks very well now but will age 4-8 more years.  Very small production.

Great white Burgundy at a great price!
This appellation, Coteaux Bourguignons, was created in 2011 covers red, white, and rosé wines, grown over four départements. The Coteaux Bourguignons appellation covers wines that can be blended or come from a single varietal, and which can use some more old-fashioned varietals.  Production of white is very small from this area and most of them do not leave France.  We are excited to bring this one in to Missouri!
  
A blend of Chardonnay and Aligoté of which most is matured in stainless steel.   It has a great Burgundy nose with a touch of minerality that comes from the Aligote.    Great flavors of tart apples and a steely acidity finishes off this great wine.  Highly recommended and very limited production
