Grape: Altesse


Altesse: Grown primarily in the Roussette de Savoie region of France, bordering Switzerland and Italy, the Altesse grape produces wines of incredible character and purity. Highly aromatic and possesing wonderful acidity Altesse is a perfect foil for full flavored chesses and spicy dishes. Due to small yields and a fickle nature Altesse is relatively unknown in the American market place, but it sure to please if stumbled upon.

The excellent 2011 Les Rocailles Roussette de Savoie comes from an indigenous grape varietal called Altesse. It offers up notes of fresh wheat thins, honeyed citrus and spring flowers that are followed by a well-textured, lush, succulent, dry white that is bigger and richer than the Apremont. Drink it over the next 1-2 years.

This is the very limited release from St. Louis' own Perennial Artisan Ales.   We always debate on how to do these limited releases.  So we are going keep mixing it up a bit.   More people ask for a way to reward those that shop at the store, so we will try this method.   For this release starting Monday April 8th through Friday, April 19th at 4:30, for each bottle of Perennial beer you purchase at our stores, you can put your name in the pot for the drawing.  On Friday April 19th at 4:30 (during our normal beer tasting) we will draw 11 names and they can purchase 1 bottle at $22.99.  The 12th bottle we will released at our Beer Fest on May 11 the same way we did the Goose Island and Cantillon at our New Ballas Grand opening.

Nothing is more evocative of summer than the beautiful aroma of flowers, and the favored flowers of brewers are hops. Our brand new summer ale, Fleur de Houblon (Hop Flowers), is brewed to bring the many elements of summer into a refreshing and easy-to-drink Belgian-style ale.

Fleur de Houblon is a rich gold color with distinct floral hops in the aroma that follow through in the taste. Whole-cone Bravo hops are used to impart their earthy, fruity, and floral aromas and flavors. The body and flavor are clean and dry, with pleasing complexity and spicy notes from both primary and secondary fermentation with our unique Ommegang house yeast.

2009 Domaine de l'Edre Carrement Cotes du Roussilon Villages...$29.99

While the bitter elements in the 2009 Carrement white were a bit too accentuated by heat from 14.5% alcohol, the tank-raised red l'Edre 2009 Cotes du Roussillon Villages Carrement - around half Syrah, but now including a significant amount of Mourvedre as well as Grenache and Carignan - gives an impressive account of itself. Dark berries, bitter dark chocolate, and a gaminess that diminishes with aeration are joined by licorice, vanilla, cherry pit, and black pepper on a plush, texturally-polished, glycerin-rice, seamlessly-ripe palate. While there is faint finishing warmth here, there is also an exuberant persistence of juicy, fresh black fruits such as one too-seldom encounters in this vintage. I would plan to enjoy this over the next 2-3 years.

2009 Domaine de l'Edre Cotes du Roussillon Villages...$44.99

More than half Syrah, along with Grenache, Carignan and now Mourvedre, a portion of the 2009 Cotes du Roussillon Villages L'Edre was vinified in upright, new demi-muids, and the entirety was aged in older barriques. Vivid black raspberry and dark cherry inform the nose and a seamlessly ripe, dense, glycerin-rich palate. Ultra-fine tannins do nothing to disrupt a liqueur-like sense of richness, kissed in the finish by dark chocolate, iodine, and brown spices. This should merit following for at least 6-8 years. Castany and Dieunidou, incidentally, class it with their 2005 as the best exemplar of this cuvee that they have yet bottled.

2008 Domaine de l'Edre Cotes du Roussillon Villages...$44.99

More pungently spicy and with, if anything, a yet finer edge than its 2009 counterpart, the 2008 Cotes du Roussillon Villages L'Edre - roughly two-thirds Syrah, with Grenache and Carignan - is flamboyantly ripe in its evocations of dark cherry and black raspberry preserves. Pungent ginger and smoky black tea, along with tart berry skin and piquant fruit pit, make for tactile energy and invigoration in superbly sustained finish. Unlike its authors, I give this the edge over its 2009 counterpart, largely on account of its sense of dynamic and its sheer juiciness. But it will be fascinating to track the two of them over the next 6-8 years.

Dry Dock Farm Heritage Breed Farm Fresh Eggs...$4.99 / per dozen

What is Heritage Breed? Basically many of these "heritage" breeds of chickens (and other animals) were becoming threatened because the large egg producers were favoring chickens that produced a quantity of eggs and not quality. To quote The American Livestock Breeds Conservancy (ALBC), "Modern food production now favors the use of a few highly specialized breeds selected for maximum output in a controlled environment. Many traditional livestock breeds have lost popularity and are threatened with extinction. These traditional breeds are an essential part of the American agricultural inheritance." Some of the Heritage breeds that Dry Dock has includes: Ameraucana Chickens - "Easter Egg Chicken" -- produces blue and green eggs Barred Plymouth Rock Chickens -- Brown Eggs - pre-World War II - this was the most popular and most likely the eggs being eaten. Rhode Island Red Chicken -- Light to Dark Brown Eggs New Hampshire Chicken (see picture from Wikipedia above) -- Light brown eggs "Dry Dock Farm is 3 acres of rich river bottom land near the village of Silex, Missouri. They are fed a vegetarian diet, to provide you with the best tasting farm fresh eggs. Recipe of the Week


Fried Cheese Curds
Lets face it if an appetizer has it’s own Domaine Name (friedcheesecurds.com) it’s gotta be good. Here is my favorite version (adapted from friedcheesecurds.com)

Ingredients:

  • 2 cups Panko bread crumbs  ***
  • 2 teaspoons cornstarch
  • 1 teaspoon ground cayenne pepper(use only if you want your curds slightly spicy)
  • 1 teaspoon smoked paprika   ***
  • 1/2 tablespoon chopped fresh thyme 
  • 1 cup all-purpose flour
  • 4 eggs, well beaten    ***
  • 1 pound cheese curds   ***
  • Oil for deep frying

Directions: 
Combine bread crumbs, cornstarch, cayenne pepper, smoked paprika and chopped thyme in food processor. Process until bread crumbs are finely ground. Place in a pie plate. Place beaten eggs in another pie plate and flour in a third pie plate. Dredge the cheese curds in the flour, then the egg and lastly the bread crumb mixture. Place battered curds on a baking sheet. Set in the freezer for 20 minutes. Heat 3 inches of oil to 365°F to 375°F. Fry the cheese curds in batches until they are crisp and warmed all the way through. Season with salt and pepper. Serve immediately.
I love to use the Stonewall Kitchen Horseradish Aioli as a dipping sauce.
