Kilchoman Single Farm Islay 100% Islay 2018 Edition

Kilchoman Single Farm Islay 100% Islay 2018 Edition...$89.99
Islay’s only Single Farm Single Malt

The latest instalment of our 100% Islay range is to launch on Monday the 10th of September. Released in limited runs annually, the 100% Islay range is our only expression distilled solely from barley grown and malted here at the distillery.

This, the 8th Edition, is a vatting of 23 bourbon barrels and 7 oloroso sherry butts filled between 2008 and 2012, bottled at 50% ABV. A total of 12,000 bottles have been released worldwide, hitting shelves from the 10th of September.

The 8th Edition can trace its origins to the fertile soil of the Kilchoman barley fields. It was here that we harvested Optic barley between 2007 and 2011. Once harvested the barley was hand malted, peated and distilled before being matured in a combination of bourbon and sherry casks. The combination of cask types allowing for an elegant balance of rich spices, citrus sweetness and earthy peat smoke.

Bottled on site, the 100% Islay 8th Edition is without colouring or chill-filtration, standing alone as Islay’s only Single Farm Single Malt, 100% Islay – from barley to bottle.

Though the name might suggest a heavier peating level than our standard 50ppm offerings; Machir Bay, Sanaig and others, the 100% Islay range is in fact peated to a lower level of roughly 20ppm. Although this is not an exact measurement as the small batches and old-style techniques make it almost impossible to peat each batch to exactly the same level.

The key difference between this and previous batches of the 100% Islay is the addition of sherry cask maturation. The seven oloroso sherry casks included in the vatting give the whisky added depth and richness compared to the fresh fruits and vanilla of previous editions.

Anthony Wills Kilchoman Founder and MD, “The 100% Islay range was the reason we built Kilchoman, we wanted to take whisky-making back to the grass root traditions of the industry, where we had the ability to influence each stage of the process to maximise the character of our whisky. Part of that is barley; how it’s grown, malted and peated, part of that is slow steady hand distillation and part of it is casks; filling casks that pair well with your spirit and selecting the right balance of casks when they reach maturity. Great whiskies are not a result of a single part of the process, they’re the outcome of time and passion invested at every stage of the process”

Virginia Distillery Courage and Conviction Single Malt Whiskey

Virginia Distillery Courage and Conviction Single Malt Whiskey....$65.99
The late Dr. George G. Moore had a great passion for single malt whisky and his adopted home in Virginia. A native Irishman, George came to the U.S. in the 1970’s to seek new opportunities. In 2011, after many years of building successful businesses in both the U.S. and Ireland, George finally had the chance to combine his two passions when he started Virginia Distillery Company. Today, George’s wife, Angela Moore and their son, Gareth Moore, along with his wife, Maggie Moore, have taken the helm to continue building George’s dream. “Have the courage of your convictions,” was a saying George often repeated to friends and family. His credo became our core principle and the name of our newest American Single Malt whisky line, Courage & Conviction

WHAT MAKES IT SPECIAL
• Made with 100% malted barley. • Aged for a minimum of 3.5 to 4 years in Bourbon, Sherry, and Cuvée casks. • We are one of only a handful of distilleries in the world to use these unique Cuvée casks, a profile developed by the late Dr. Jim Swan. • The hot summers and cool winters of Virginia make this American Single Malt incredibly distinct. • The wildly varied climate allows our whisky to age at a faster rate than our counterparts in Scotland.

TASTING NOTES • With notes of caramel and butterscotch, our flagship American Single Malt evolves on the palate with hints of dark dried fruit, raspberry, cocoa, barrel spice and vanilla. • Its finish is creamy and exceptionally smooth.

Tahwahkaro Texas Rye Malt Whiskey...$58.99
52.5% ABV
Then we set out to make our Tah Texas Rye Malt Whiskey, we didn’t know quite where it would lead us, but knew we wanted to bring something special to a category we already loved. Beginning with the same rye malt we use in our bourbon, we waited as the rye aged and revealed this explosion of unexpected flavors. The first sip is like a deep vanilla toffee mingled with pepper and spice but as it leaves, there’s this lingering taste of chocolate and buttered toast. We loved it from the beginning to end, and we hope you do too.

2017 Frog's Leap Cabernet

A 95 Cabernet from a Rutherford Original
2017 Frog's Leap Estate Grown Cabernet Sauvignon $58.99

The 2017 Cabernet Sauvignon is such a gorgeous wine. In 2017, the Frog's Leap Cabernet has a bit more depth and richness, as it often does in warmer years. Cedar, tobacco, mint and sweet red cherry are all pushed forward in a succulent Cabernet with tons of character that still retains its super-classic, mid-weight feel. Time in the glass brings out the wine's aromatic nuance and silkiness. The Frog's Leap Cabernet remains an under the radar gem in today's Napa Valley.

Do Ferreiro Albarino

2018 Do Ferreiro Albarino Dous Ferrados....$49.99
The only Albariño where they use any wood is the 2018 Dous Ferrados, which ferments and matures in barrel for nine months with lees. The idea is to go back to the wines from yesteryear, fermenting in large-volume oak casks (500 liters here) with the intention that the wood is in the background and does not interfere with the aromatics of the variety but aid the micro-oxygenation of the wine. The grapes are sourced from the same soils as the Adina, on red slate soils, a different source than the old "barrica" bottling that was from Meaño. The wine needed a little bit of time to open up in the glass; funnily enough, it felt more reductive/blurry than any of its siblings. The palate is saline and mineral, with marked granite sensations in the grainy texture, and finishes long and dry. 1,300 bottles were filled in September 2019.
Rated 93/100 The Wine Advocate

2018 Do Ferreiro Albarino Lourido....$49.99
The sharper 2018 Lourido is the most delicate of their three single-vineyard bottlings, from a place very close to the sea on decomposed granite (sand) where the influence of the sea comes with the fog, not with the proximity to the sea, but here they get a very mineral wine, with lots of dry extract (power) and very fresh acidity. It was kept 11 months with lees, and they are thinking even longer with lees could be good for it. This is a mini cepas vellas, from 60- to 65-year-old vines. This is a profile I like very much; it pretty much showcases the style of Salnés. This is only the third vintage of this wine. 1,300 bottles were filled in September 2019. This is approachable, and I think it's also going to age magnificently.
Rated 94/100 The Wine Advocate

2018 Do Ferreiro Albarino Adina....$49.99
The 2018 Adina comes from the southernmost vineyard they work, a parish close to Portonovo, a zone with influence from the fog (which brings saltiness) and completely different soils, as it's on red slate. The nose feels more austere, a little more closed. This is a wine that has good light and burns more malic acid, and the wine feels more citrusy, giving it a different kind of freshness. It's harmonious and serious, subtle; there is a lot of complexity, really elegant. There are 2,000 bottles of this. It was bottled in September 2019.
Rated 94+/100 The Wine Advocate

2018 Do Ferreiro Albarino Cepas Vellas....$54.99
The 2018 Albariño Cepas Vellas has to be one of the finest vintages of this old-vine (reaaaaally old vine!) cuvée, in a vintage where the wine reached levels of elegance and harmony that I don't remember before. After having the wine in the glass for almost two hours, the nose was explosive, and the palate felt like bottled electricity, with effervescent acidity that makes you salivate, and it had incredible depth and concentration. They now tell me they think the vines could have been planted in 1785, in a property that had been a granite quarry, so I don't need to tell you what the soils are like here. This is a zone with a lot of fog, and that brings intense salinity to the wines. I need to dig out some bottles of 2010 I have somewhere in my cellar and check the evolution, because they tell me, and I agree, that this is a modern version of the 2010. There are 8,000 bottles of this wine. It was bottled in September 2019.

Padro & Co. Vermouth

Padro & Co. Vermouth Blanco Reserva..$29.99
This vermouth was inspired by our desire to make a vermouth enhanced with the Mediterranean citrus aromas that are so intrinsic to the area around our winery.

VINIFICATION
We blend an infusion of aromatic herbs with the peel of several different citrus fruits. After several months of maceration, we add an aged white mistela (sweet wine) that we keep especially for this vermouth.

TASTING NOTES
Nose: Aromatically intense and very pleasant. Memories of sweet herbs such as star anise, lemon verbena, quina and angelica. Both well-balanced and complex.

Mouth: An elegant, smooth, refined and well-rounded palate with a slight sweetness, and also a certain bitterness. An elegant and citrus fruit finish ensures freshness and a superb aftertaste giving this vermouth a gourmet touch.

The making and selling of vermouth in Catalonia, has been documented since the second half of the nineteenth century. At that time, the export of wine and local brandies from the area around Tarragona was really taking off and parallel to this positive industrial and commercial climate, vermouth was able to take root there as a new wine product.

Padro & Co. Vermouth Reserva Especial..$33.99
At the end of the 19th century, wines from Tarragona enjoyed great prestige internationally. At that time, our Padró ancestors were making liqueur wines in the style of the “great wines” of the time: Port, Sherry or Sauternes, among others. In 1947, these fortified wines were the first to be regulated within the Tarragona Denominación de Origen or Appellation and were given the name Tarragona Clásicos.

VINIFICATION
We wanted to make a vermouth using a sweet Tarragona Clásico-style liqueur wine aged for 5 years in 7,000-litre oak vats and which we have been using at the winery for generations. We add a small amount of this wine to the solera wine in the final vermouth coupage together, of course, with our special touch of vermouth herbs.

TASTING NOTES
Nose: Intense and striking. Powerful aromas from the prolonged ageing: dried figs, roasted hazelnuts and green walnuts

Mouth: Warm and rich at the beginning, giving way to liquorice and medicinal herbs, encased in sweet notes, and a bitter tang.

Padro & Co. Vermouth Rojo Classico..$26.99
Our Padró & Co. Rojo Clásico is a tribute to the vermouth which was sold originally from wine cellars or enjoyed religiously every Sunday at noon. We want to evoke those herby and slightly medicinal aromas which can transport you back, even now, to the atmosphere inside those local bars and cafés.

VINIFICATION
The base wine is made with Macabeo and Xarel·lo grapes from the Padró family’s own vines. After the first winter, we add our special red vermouth herb formula to make a base coupage which we then leave to rest and evolve in barrels for between nine and twelve months. These barrels originally contained sherry, after which they were used for a time to transport wine and we have now adapted them for vermouth storage.

TASTING NOTES
Nose: Aromas of sweet spices, cinnamon and clove, in particular, as well as tones of candied fruits.

Mouth: A creamy and fresh palate followed by memories of slightly bitter Mediterranean herbs.
