2011 Monastero Suori Cistercensi Coenobium....$25.99
Recently, at the Armani/Ristorante, inside the Armani store on Manhattan's Fifth Avenue, I had a revelatory glass of wine. As revelations tend to be few and far between on lists of wines by the glass, I believe this one's for sharing: Monastero Suori Cistercensi Coenobium 2009, a trebbiano-verdicchio-malvasia-grechetto blend made by — get this — nuns, at a monastery just north of Rome. Unfiltered and organic, this hazy, strawberry-blonde wine is part of a growing group of so-called "orange wines." These wines are vinified essentially like red wine: left in much longer contact with the grape skins than is normally the case with white wines, so that the fermenting grape juice takes on a slightly tannic and dry, delicious, cider-like quality. Stylish and rustic, citric and earthy all at once, my glass of Coenobium paired perfectly with Armani/Ristorante chef Roberto Deiaco's custardy leek flan with decadent gorgonzola sauce, and his ricotta and quail egg yolk ravioli dressed in black truffle shavings. And it will go with any rich, creamy, cheesy dish that you make at home." -- Saveur Magazine

Glenfiddich Cask of Dreams 2012....$94.99

"Glenfiddich is beginning to develop an amazing track record for their special releases. Their last special release, Glenfiddich Snow Phoenix Scotch Whisky, was a phenomenal whisky that delivered a drinking experience far superior to the standard Glenfiddich line. Glenfiddich has done it again with another extremely limited release, the Glenfiddich Cask of Dreams Whisky.

In celebration of their 125th anniversary, Glenfiddich brought 11 new American oak barrels to a number of cities across America. They encouraged whisky fans, new and old, to sign the casks and write down their dreams and inspirations. It was a fantastic campaign that helped reinforce the reality that Scotch whisky isn’t an elitist drink, that it has appeal and accessibility to everyone.

The signed casks were brought back to Glenfiddich and then filled with a blend of Scotch whisky, 14 years and older. The practice of finishing Scotch whisky in new American oak is becoming popular. Laphroaig has had great success with their Laphroaig Quarter Cask and Ardbeg has developed quite a following for theirArdbeg Alligator. Scotch whisky has long been aged in second-use bourbon barrels, but the new trend towards using new American oak gives scotch whisky makers yet another tool in their tool belt to add new flavors and textures to their whisky.

Glenfiddich Cask of Dreams Scotch Whisky ($99, 48.8%) – dark yellow-brown in color, this whisky has clearly picked up some color from its time in American oak. The nose on the Cask of Dreams is slightly fruity and sweet with golden raisin, dried apricot, and soft vanilla. In the center of the nose is a solid oak spice along with a subtle undertone of malted barley. The way the nose presents is very well integrated and inviting; it’s the kind of nose you’re going to spend some time with before diving right into the spirit.

When you do finally dive in, you’re met with an explosion of flavor that takes off the moment the whisky hits your mouth. Like the nose, the entry starts off more sweet and fruity, with dried apricot, golden raisin, and vanilla leading things off. It quickly transitions in the mid palate from fruity and sweet to savory and spicy. The oak notes begin to really emerge along with ginger and black pepper. There’s also a nice salinity in the mid palate along with a subtle char note and a flash of rancio. The spice really ramps up at the end of the mid palate and leads to a very long, very spicy finish.

Glenfiddich Cask of Dreams is an exceptional whisky that’s packed with flavor and spice. It’s clear the folks at Glenfiddich wanted to produce something really special, and they have. The hint of rancio (an elusive flavor that comes through the aging process) in the mid palate shows they’ve been extremely selective about the malts they used for this release and have included a few gems in there. The new American oak finish is truly transformative, adding a level of spice and intensity of flavor that makes Cask of Dreams the kind of whisky that you dig through and spend time with. The only downside with this whisky is that it’s in limited supply and, like the Snow Pheonix, when it’s gone, it’s gone. We can’t wait to see what Glenfiddich does next!"

Recipe of the Week: Lemony Orzo Pasta Salad with White Cucumber and Feta


We just received some great locally grown produce from Dry Dark Farms (our egg supplier) and we have chosen a recipe that revolves around two of the product. 

This recipe is fresh and tasty!





Lemony Orzo Pasta Salad with White Cucumber and Feta

My constant quest for more excuses to use the Yarra Valley Persian Feta lead me to this wonderful pasta salad

Ingredients

  • 1-1/2 cups dry riso pasta   ***
  • 2 tbsp olive oil, or just enough to lightly coat the pasta  ***
  • juice and zest of 1 lemon
  • 1 large White Cucumber, seeded and chopped    ***
  • 1tbsp fresh mint, finely chopped    ***
  • 1 tbsp fresh parsley, finely chopped
  • 1/2 cup Yarra Valley Persian Feta Cheese    ***
  • Fleur de Cel and freshly-ground black pepper, to taste   ***

What to do

Cook the riso al dente according to package directions. Drain the pasta, let cool for a couple of minutes, and toss with the olive oil, lemon juice and zest, cucumber, herbs and feta. Season with salt and pepper, to taste. Serve chilled or at room-temperature. Can be made up to a day in advance and kept in the refrigerator.

Sweden's oldest brand - Carnegie Porter fills 175 years. It is celebrated with an anniversary brew with "extra things" that have been manufactured according to old traditions to mimic Carnegie Porter from the last century.

Carnegie Porter began brewed in 1836 and is one of the oldest svenskbryggda beer - who is also the oldest active trademark with decades become known worldwide. 175th anniversary will be celebrated with an Anniversary Brew, signed by Carlsberg Sweden's master brewer Daniel Eriksson and Brooklyn Breweries brew master Garrett Oliver.

- If I had been a pizza baker, I had described the brew as "extra everything". Unlike regular Carnegie Porter, who is in yeast, we have used both over-and under yeast culture to the anniversary brew. It has made the välhumlad, but fate has reduced bitterness and added flavors of vanilla, coconut and a little bourbon, says Daniel Eriksson.

In April, arrived in American bourbon barrels for Carlsberg brewery in Falkenberg, Sweden. Daniel Eriksson toiled hard with Garrett and his maker from Brooklyn to get all 130 wooden barrels in place and implement the conditioning of the brew. To help them, they had representatives from Porter Drinkers Association and employees from Carlsberg.

During the storage period was played the music for trätunnorna from an open playlist on Spotify where the public was with and influenced the choice of music. They played everything from Cole Porter, Brooklyn songs and classical music to advertising songs from the west coast buddies Pripp Blue and Falcon.

- During storage, became the beer taste richer and stronger, from the planned 6.9 percent to an end product of 8.8 percent. If it was the sound waves that impacted me to say, but the porter was developed fantastically well, says Daniel Eriksson.

- This is a beer for people who enjoy life. We chose a larger bottle with a classic cork seal to mark the anniversary brew. This was the way that beer was originally bottled. We want people to recognize themselves in the traditional and simultaneously highlight the anniversary sentiment, says Daniel Eriksson.

Edelzwicker
Most wines in Alsace are made from a single grape like its long lived Riesling and Gewurztraminer, in fact Alsace was the first appellation in France to put the grape on the label.     But Alsace,  also has a long tradition of field blends. The term Edelzwicker is often used to designate any blended wines of AOC Alsace white grape varietals, without indicating the percentages in the composition. The different grape varieties may be vinified together or separately. Historically, these different varietals came from the same parcel. Originally called “Zwicker” (blend), the prefix Edel (noble) was added to mark the presence of noble grape varieties (in Alsace the noble varietals consist of Riesling, Pinot Gris, Pinot Blanc and  Gewürztraminer) chosen to replace mass-produced grape varieties. Come taste one of our favorite and most versatile white wines.

Tasting Notes: Since understanding what the grape varieties in this blend contribute to this wine greatly helps in its appreciation, here is a breakdown of the grapes, and the general characteristics they add to this wine. Pinot Blanc - is a crisp, bright grape variety that gives the wine a hint of peach and citrus fruit flavors. Pinot Gris - adds structure, body, and richness, it also imparts rich apricot fruit flavors. Sylvaner - is a lighter-bodied grape variety that brings a subtle earthiness to the wine. Gewurztraminer - gives the wine its floral nose, and adds notes of tropical fruit (lychee) and spice to the wine. The Schreyer Edelzwicker is a fun, easy-drinking wine that makes an excellent aperitif. Its wonderful aromatics and bright fruit make it a perfect match for fish, poultry, and Asian cuisine.
