Casa Castillo Las Gravas Jumilla




2020 Casa Castillo Las Gravas Jumilla...$73.99
The phenomenal 2020 Las Gravas was produced with 92% Monastrell from 30- to 40-year-old vines on north-facing gravel soils (hence its name) complemented with 8% Garnacha. It fermented with 30% full clusters and indigenous yeasts in underground stone lagares and matured in a combination of 500-liter barrel and 5,000-liter foudres for 16 months. It has classical parameters, 14.5% alcohol, a pH of 3.47 and 4.87 grams of acidity per liter. The wine is super perfumed and floral, really showy, elegant, nuanced and refined, with the notes of pine needles and wet soil much subtler than in the 2019. There is an ethereal character to the 2020s that I haven't found in any previous vintage here, but at the same time, the wines are very mineral and have lots of energy and light. There is precision, cleanliness, definition and elegance like I hadn't seen before and refined tannins with a pungent mineral sensation in the textured finish. This is an incredible wine for the price asked. 35,500 bottles produced. There was a single bottling in February 2022.

Dunkes Bier is a German Style Pilsner made from the authentic, 188-years old, Schönberger family recipe from Millstadt’s Sister City, Gross-Bieberau, Germany located in the Odenwald region and founded in 787. The Schönberger family founded their bierbraurie in 1835 but closed it many years ago. The Oldenwald region has its own ancient dialect, “Odenwälder” and in that dialect the friendly word for a person from Gross-Bieberau is a “Dunkes”.
We named this beer in honor of that deep tradition because Millstadt was founded in 1836 about the time the ancestors of many current Millstadt residents immigrated here from Gross-Bieberau. We brew Dunkes Bier to preserve the cultural bier heritage of Gross-Bieberau and honor our own ancestry. Crisp, refreshing light-bodied pils with crackery malt and an elegant, floral-herbal hop character.

There are dozens of methods that can be used while making a Tie-Dye shirt, it’s literally a science. In case you’re wondering how we became Tie-Dye Scientists, we can explain. For the last year or so, every Friday, our production and packaging team has dressed in Tie-Dye to mark the end of the week. It’s a thing around here.
Tie-Dye Science starts off with a nice base of oats and wheat before a T90 and Lupomax Citra and Mosaic hop bill for both the whirlpool and dry hop.
Aromas and flavors of orange slices, papaya, pink starburst, lime gummies lead into a bright juicy finish with a touch of hoppy bitterness all wrapped up in a creamy mouthfeel. Perfect to welcome you into the weekend.

We started with oats and white wheat for a base before adding Simcoe and Mosaic to the whirlpool. To get some berry medley notes going we dry hopped with Mosaic and Citra at a 2:1 ratio. Wavelength pours bright yellow with aromas of citrus and stone fruit with crushable flavors of mango and berry with a light refreshing finish.

Display of Clarity (West Coast Style DIPA) is named after the clarity technique of imaging used to analyze the brain. With 86 billion neurons assembled into very complex circuit, the clarity technique was a breakthrough in scientific imaging making brain imaging more efficient and less evasive, protecting the brain tissue and structure.
We altered our water profile, upped the bitterness, extended the cold crashing, and left out all the soft and fluffy grains to let the simple grain bill and Simcoe with a touch of Citra shine with clarity. We get flavors of pine, lemon rind, floral citrus, and resinous earth with a clean pop of hoppy bitterness and a crisp finish.

This bourbon features the bold, sweet and spicy notes that are the hallmark of FEW, while boasting notes of rose water, sandalwood, caramel, vanilla and black tea. We will be showing off the stunning newly released 2019 Brunello and Brunello Pianrosso along with a couple of vintages of Ciacci’s most prized and rare bottling, the Brunello Santa Caterina D’Oro Riserva. Along with these stunning wines we will have a sampling of the Ciacci Estate Olive Oil paired with bread from Union Loafers.


2019 Ciacci Piccolomini d'Aragona - Brunello di Montalcino....$63.99
There's no mistaking this wine for anything but Brunello. The Ciacci Piccolomini d'Aragona 2019 Brunello di Montalcino shows beautiful continuity, crescendoing on the nose and palate in synchronicity. There are aromas of grilled watermelon, red cherry, garden herb and violet, and there is a charred note that recalls the toasted oak. The bouquet balances out beautifully, but you do get considerably more power on the palate thanks to the oomph of 15% alcohol and young tannins that get under your gums. Give this wine a few more years of bottle age.

The Ciacci Piccolomini d'Aragona 2019 Brunello di Montalcino Pianrosso opens to a wide and all-encompassing bouquet with dried cherry or cherry pie with the crust, plum tart and rose potpourri. There are evident oak tones, but they fold into underbrush, grilled herb and the generous texture of this wine. Likewise, the 15% alcohol content also neatly disappears into the wine's fleshy fruit consistency. For sure, this is a wine that needs more bottle evolution in order to hone in on the silkiness and pretty freshness of such an important Sangiovese. Exactly 43,054 bottles were made along with about 1,000 larger formats.

2012 Ciacci Piccolomini d’Aragona Brunello di Montalcino Vinga di Pianrosso Santa Caterina d'Oro Riserva....$229.99
Some glossy oak warmth across the ripe red cherry and raspberry aromas on the nose. With walnuts, blonde tobacco, sweet brown spices and earthy nuances too. The palate has a level of power and energy that really sets it apart. Shows a very succulent and vibrant core of red fruits and light earthy notes through the finish. Great balance here. Try from 2022.
