In 1605, the Duke of Estrees entrusted the Carthusians with a manuscript bearing a mysterious recipe made up of 130 plants that could give rise to an "Elixir of long life". For more than a century and a half, the Carthusians will develop this recipe which will give birth, thanks in particular to Brother Jérôme Maubec, to a final product fixed in 1764 called "Plant Elixir of the Grande Chartreuse". It was quickly distributed as a care product to local populations, especially during the cholera crisis of 1832. Brother Charles was the first to market it in local markets, descending on a donkey from the monastery. Since 1764, the recipe for the Elixir has remained unchanged.

What is the difference?

  • Originally created as a medicinal elixir in 1605.  More Bitter than regular Chartreuse
  • It's often referred to as the "Elixir Végétal."
  • Higher alcohol 138 proof
• "Regular" Green Chartreuse:
  • A liqueur formulated for enjoyment as a drink.
  • Its recipe is based on the Elixir Végétal but adjusted to make it palatable as a beverage.  Sweeter than the Vegetal

Vanilla, as an ingredient, has made an appearance in Bourbon County lineups over the years, but the 2024 Bourbon County Brand Vanilla Rye Stout is a new take on our 2014 Vanilla Rye release. This year’s release showcases rye and the complexity it delivers by starting with a rye imperial stout and aging it in freshly emptied rye whiskey barrels. After aging in barrels for a full year, the stout is then finished with incredibly aromatic madagascar vanilla beans. Bourbon County Vanilla Rye Stout has the beloved attributes of the vanilla variants before it–with a new characteristically rich spice character from aging in the rye whiskey barrels.

That’s why, when crafting this year’s 2024 Bourbon County Brand Cask Finish Stout, we were thrilled to work with our friends at Bardstown Bourbon Company.
Drawing inspiration from Bardstown’s modern and creative spirit in finished whiskeys, this imperial stout takes the same journey as their Origin Series Rye. We began by aging our imperial stout in Bardstown’s freshly emptied straight rye whiskey barrels. From there, we transferred the beer to “hybrid” oak and cherry wood barrels that finished their rye whiskey. These incredibly expressive barrels deliver a remarkable finish unlike anything seen before in the Bourbon County family. A beautifully balanced beer, Bourbon County Bardstown Cask Finish Stout is deeply expressive with vibrant cherry, toasted oak and a lingering herbal finish.

Aged in Two Separate Oak Barrels
Peerless Toasted Bourbon is aged in two separate oak barrels. It is initially aged in their standard, char level 3, barrel. This process develops the desired flavor profiles of caramel, brown sugar, and toffee. The already barrel-aged whiskey is then placed in a toasted barrel to finish. The toasted barrel adds more complexity with honey, vanilla, toasted spices, and chocolate. The unique aging process allows for an elevated nose and palate.
“We hand-select each barrel for the finishing process. We chose to use a medium toast because it contains less tannins which results in a more aromatic whiskey with warm, sweet, savory character and strong vanilla overtones,” explains Peerless Head Taster John Wadell.

Barrel #1
Toasted Bourbon is aged in our standard char level 3 barrel for 5 years. It takes about 30-35 seconds to achieve the perfect flavor profile with a char level 3. Hemicellulose starts breaking down into wood sugars and the wood caramelizes inside the barrel. This process develops our desired flavor profiles. Think caramel, brown sugar, and toffee.

Barrel #2
The already barrel-aged whiskey is then placed into a toasted barrel to finish. This toasted barrel adds more complexity with honey, vanilla, toasted spices, and chocolate!

Barrell Bourbon Batch 034 is a blend of 6, 8, 10, and 15-year-old barrels. 8-year-old barrels driven by strong hazelnut and dark cherry notes lay a foundation enhanced by high-corn barrels showing browned butter and apricot. St. Feuillien was a 7 th -century monk, an Irishman slain in the wilds of what is now Wallonian Belgium. In 1873 the Friart family, in conjunction with a foundation dedicated to the memory and good works of St. Feuillien, began producing fine Authentic Abbey Ales. Five generations later, the Friart family is still in charge of the brewery and proceeds from each sale go to the Foundation formed in St. Feuillien’s name.

St. Feuillien Cuvée de Noël is a fine top fermented Abbey Ale. Its slightly brown color is the result of the roasted barley. A cross between Cabernet Sauvignon and Grenache, Marselan is a varietal few people know about yet is emblematic of the local viticulture. It is used here to create a very nice rosé with a bright aromatic profile of fresh berries and is smooth & balanced on the palate making it the perfect summer companion! This fruit-forward rosé can accompany an entire meal from pre-dinner drinks through to appetizers like tuna ceviche, main courses like stuffed peppers and with a strawberry tart to finish. The grapes are harvested early September and quickly pressed. The juice is then separated from the skins as early as possible to achieve the perfect pale pink color. This wine is fermented at low temperatures to preserve its aromatic freshness.

Grapes are harvested when it’s cooler, in fully ripe. Wine making : After destemming, berries are macerated during a few hours, and then are slowly pressed. Then, the derived pressed must is put into thermoregulated stainless steel vats, and fermentation will go on for 10 days or so. Once fermentation is over, wine is matured on lees before bottling.
This rosé wine shows a redcurrant colored robe with light reflections. It has very deep fruit aromas including cherry, raspberry and black berry. Well-structured on the palate, this wine is both nicely full-bodied and delightfully fruity. Wine and food pairing : bbq chicken skewers, paella, pizza and much more.
