Jackie Zykan and Hidden Barn




Most exciting Bourbon news in a long time!
Jackie Zykan and Hidden Barn are arriving.
When we first heard that Jackie Zykan was leaving Old Forester to become the master blender at Hidden Barn, we started contacting Hidden Barn trying to get their bourbon. Well that day has arrived! Hidden Barn is on its way to The Wine and Cheese Place.

Jackie Zykan was the master taster and blender at Old Forester from 2015 until earlier this year when she left to go to Hidden Barn.  During her time at Old Forester,  she helped quadruple their production.

We opted for a high rye mashbill to showcase the multifaceted contribution this flavorful grain brings to a bourbon recipe. Series Two brings together pot still production and generously high rye mashbill, resulting in a flavorful and complex spirit. Barrels were distilled at M.B. Roland. The mash is fermented for three-four days using Christian County, Kentucky water and industry standard yeast. It is then double pot distilled and collected at 110 proof. The undiluted distillate is then matured in wood-fired Kelvin Cooperage American White Oak barrels. Barrels rest on property, and once matured, are filtered only for sediment before bottling. Located in Pembroke, Kentucky, M.B. Roland was the founding distillery of the Kentucky Bourbon Craft Trail.



We hope to have bottles on sale to sell, but the weather has slowed down the delivery to St. Louis. If they make it on time, she will be able to autograph bottles too!

Known for having one of the most respected palates in American Whiskey, Jackie Zykan’s approach to blending looks a lot like her approach to life – focused on balance, structure and celebrating the unique nuances of each blend. A native of St. Louis, and now calling Louisville, Kentucky home, she brings more than 16 years of beverage alcohol industry experience to Hidden Barn.
With degrees in biology and chemistry, and experience in multi-concept beverage directorship, cocktail strategy, category education, product development, and global marketing, her career has taken her to nearly every corner of the industry, giving her both balance and structure that few can match. She’s regarded not only for her technical know-how, but for her personal style of whiskey education, which is relatable and focused.
Most recently, Jackie served as Master Taster for Old Forester where she came to develop her hallmark style of blending and descriptive analysis, while remaining focused on quality, integrity and her signature approachability. For Zykan, it’s not meant to be pretentious – whiskey is meant to be a celebration.

Tsingtao Brewery was founded in 1903 when Augerta brought high-quality German yeast, the soul of any beer, from his home country. Moving to the tiny production 2019 Châteauneuf Du Pape Les Quartz, which is mostly Grenache with around 25% or so of Syrah, it has a rich, full-bodied, dense, and almost backward style to go with powerful black fruits, ground pepper, and violet aromas and flavors. I love its purity of fruit, and it builds nicely with time in the glass, showing more mid-palate depth as well as ripe tannins. It’s a stunning bottle of wine, but patience will be required. Hide bottles for 4-5 years and enjoy over the following two decades.

Deep liquorice and tarragon freshness here, this has a voluptuous texture, very rounded and generous. Ends firms and powerful, it's a wine with plenty of presence and has squished blackberry fruits into the long length. Very well balanced for a powerful wine. Grown half on large pebbles, half on sand in lieu-dit Les Cassanets, destemmed, then fermented mostly in concrete, then matured mostly in demi-muid except for 10% in amphora.

This product is made by taking our Red Line Cask Strength Straight Bourbon and then aging it for an additional period in a second custom made barrel. This second barrel is assembled from 18 month air dried wood and then toasted not charred as your normal bourbon barrel would be. This process allows for the sugars in the wood to be drawn to the interior surface where the bourbon will be making contact, adding amazing flavors to the bourbon. The truly unique and delicious taste this toasted finishing process offers represents a remarkable achievement given that it is Straight Bourbon with nothing extra added or done except the transfer into the toasted barrel.
