This rye whiskey is highly unusual because it was aged in used oak barrels. Almost all American whiskey is aged in new oak and sold as a "straight" whiskey. Used barrels result in a taste profile less influenced by the wood, allowing the more delicate flavors of the rye distillate to prevail. A truly sophisticated sipping whiskey. 

We named these "Rocky Mountain Rye" for the whiskey that saloons imported to quench the thirst of the mining boomtowns in the Mountain West. As a modern day saloon, High West is doing the same while patiently waiting for High West's own whiskey to age. 

At the end of a meal or the end of a hard day, forget about single malts or cognac, have this 21 instead. Try it with a dessert that pairs well with an American rye's spice, caramel and vanilla like Créme Brulee, fine chocolate, or an apple tart.

The 36th Vote™ commemorates Utah's role as the deciding vote to end Prohibition. In fact, the Utah delegation WANTED to cast the final vote. "No other state shall take away this glory from Utah" proclaimed the leader of the state delegation and president of the Utah League for Prohibition Repeal. On December 5th 1933 at 5:32 PM EST, satisfied that the thirty-fifth state (Pennsylvania) had ratified, Utah delegate S.R. Thurman cast the last ballot for Utah and the 18th amendment's fate was sealed. High West Distillery chose the Manhattan for this celebration because of its classic appeal and timelessness - it's also our favorite mixed drink! We used the pre-Prohibition recipe of two parts rye whiskey to one part sweet vermouth and two dashes of bitters. We then married the mixture in the rye whiskey's American white oak barrel for 90 days, allowing the flavors to integrate in a well-balanced harmony of the rye's spiciness, the vermouth's herbs, and the bitters' complexity. We hope you take time to celebrate Repeal Day and thank Utah for its role in ending the Noble Experiment. 

The High West Barreled Manhattan is made from two parts of High West's Double Rye! Whiskey, one part sweet red vermouth, and two dashes of Angostura bitters for every 2.5 ounce serving.   It was then aged in a 2-year-old rye whiskey barrel for 120 days. The addition of the vermouth lowers the pH and the percent alcohol by volume - both increasing the break down of the oak's hemi-cellulose, increasing the wood sugars that dissolve into the "cocktail" inside. Because a barrel "breaths", there's also some oxidation of the "cocktail." This mellows out the sharpness of the bitters and vermouth, making what we think is a darn fine elixir. We hope you enjoy tasting this as much as we did making it

Allow us to present you with the Stone Old Guardian Barley Wine, in all its unadulterated glory. We make small adjustments to the recipe every year, just a little bit...as it provides an opportunity to try some different hops or malts. For the 2012 release, we made a deliberate effort to move away from the English hop influence of the past few years, taking out the East Kent Golding hops, subbing in a blend of American Chinook, Calypso and Cascade. Yes, that's right, Cascade. This is the first use of Cascade in one of our beers, and we really enjoyed the hints of grapefruit and pine it contributed to the aroma and flavor. We also bumped up the Maris Otter crystal malt by a mere 0.5%, and it's amazing how much of a difference it made in the color and the upfront body. All in all, it's resulted in a well-rounded beer that is ready to drink now, or can be aged at cellar temperatures for many years. (If you can wait that long.)

We are very proud to release the first in our series of Barrel Aged Beers.  This is a very unique program where we supply local breweries with a Bourbon Barrel and they age a beer in it for 6 months or more and bottle the beer exclusively for The Wine and Cheese Place.   To our knowledge, this is the first and only program like this in the country to have a retailer buy a full barrel of Bourbon to sell and then re-use the barrel to have our own full barrel of beer to sell!!!  These are one of a kind, very rare and limited beers.

The Wine and Cheese Place Barrel Aged Beer Collaboration #1


The Wine and Cheese Place is extremely excited and proud to announce the first release in an amazing series of barrel aged collaboration beers with local Missouri breweries....

We have recently been selecting and purchasing our own barrels of Bourbon.   We taste through a number of barrel samples and then choose which barrel we like the best.   The Bourbon distillery then bottles the Bourbon for us with our own label and normally would clean and ship the barrel to us for display.  But, we thought, why waste this perfect vessel for display purposes, why not use it to age a delicious beer?  We asked the Bourbon distilleries if they would not wash, clean, or do anything to the barrel and just ship it to us as is -- they all said yes!   The Wine and Cheese Place Barrel Aged Collaboration Series was born.


The first in the series is with Schlafly -- St. Louis' original craft brewery....


The Wine and Cheese Place Collaboration #1 with Schlafly  
The St. Louis Brewery, Schlafly, paved the way for craft breweries in St. Louis.  Without Schlafly, the booming St. Louis Craft beer scene that we are currently experiencing would not be happening right now.   When this Collaboration Series first germinated, I approached Dan Kopman of Schlafly first because of everything they have done for us and for St. Louis beer scene.  Dan and Schlafly were on board and the wheels were in motion on the collaboration series.






The Life of Buffalo Trace Barrel No.15
Here is the barrel the day it arrived to The Wine and Cheese Place in Clayton, MO on August 5, 2011.  We also got in 22 cases of Buffalo Trace Bourbon that were aged in this very barrel we hand picked after tasting through 5 barrels.   This is barrel  Lot 03 A 06 - Barrel #15. 
We will officially call it Barrel #15

Barrel #15 only enjoyed the comforts of our Clayton store for a few hours (and a few photos) as I loaded it in my truck and delivered it directly to Schlafly's Tap Room downtown because we did not want the barrel to dry out at all.

Stone has always been at the heart of the making of Glenmorangie Single Malt Scotch Whisky. Glenmorangie has its own unique hard water source – the Tarlogie Spring – which slowly filters through layers of limestone, adding rich minerals that eventually give Glenmorangie its complex fruity aromas. Stone also plays a more symbolic role for Glenmorangie. Located on grounds near the Glenmorangie distillery is the Hilton of Cadbol Stone, an 8th century Pictish artifact, rich in ancient intricate carvings. This treasure became the inspiration for Glenmorangie’s iconic emblem, The Signet.

Dr. Bill Lumsden, Glenmorangie’s Head of Distilling & Whisky Creation, is renowned for pioneering the innovative approach of extra maturing whisky in ex-wine casks. He has long felt a strong affinity with the innovative ‘Super Tuscan’ wine producers who are justly celebrated for breaking with established Italian wine making traditions. The rugged Tuscan coastal hills, located on stony ground, seem an improbable area for establishing vineyards, yet the stone plays an important role in the taste of these special wines. The vines are forced to take root deep into the soil for nourishment and as a result the grapes ripen with the intense flavor of this unique terrain.

Dr. Lumsden comments, “Wine is one of my huge passions and I was fascinated by the role the stony ground played in the flavor profile of the famous ‘Super-Tuscan’ wines. I was inspired to experiment with extra maturing Glenmorangie in these wine casks and was thrilled with the result: a rich, outstandingly fragrant whisky — quite literally born of stone.”

Glenmorangie Artein started its maturation in American white oak ex-bourbon casks before spending a period of extra maturation in Super Tuscan wine casks. On the nose, Glenmorangie Artein recalls a sweet and heady bouquet of ripe red berries, honeysuckle and fresh mint. On the palate, one can taste sun-soaked baked fruits such as ripe apricots, peaches and plums which harmonize fluidly with hints of spearmint and cherries in milk chocolate. A whisky of great length, bottled at a strength of 46% alcohol by volume, Glenmorangie Artein finishes with high notes of zesty, lemon sherbet and a flourish of creamy cappuccino.



Glenmorangie Artein is the latest addition to the ongoing Private Edition range, which consists of rare and interesting limited edition whiskies selected from “the cabinet of curiosities” of Dr. Bill Lumsden. Released on an annual basis, this range comprises the highly esteemed Sonnalta PX and Finealta. Each batch starts with 800 pounds of grain which is ground at the distillery, cooked and fermented, then distilled twice. It is aged in our signature small barrels. DISTILLING AT TUTHILLTOWN
Before Prohibition more than 1,000 farm distillers produced alcohol from New York grains and fruits. Tuthilltown distillers are bringing back traditional batch-distilled spirits.
For 220 years Tuthilltown Gristmill, listed on the National Register of Historic Places, used waterpower to render local grains to flour. In 2001 Ralph Erenzo and Vicki Morgan acquired the property and with the help of partner Brian Lee, they converted one of the mill granaries to a micro-distillery.The partners worked tirelessly to teach themselves the craft of small-batch distillation while navigating the legal and administrative aspects of building the company.
Two and a half years later Tuthilltown Spirits produced their first batches of vodka from scraps they collected at a local apple slicing plant. Now the distillers use fresh cider from nearby orchards. Production includes vodkas, whiskeys, rum, eau de vie, brandy, and infusions. New York's first Bourbon is HUDSON BABY BOURBON, distilled from 100% New York corn. Tuthilltown whiskeys are the only legally distilled and aged grain spirits produced in New York since Prohibition.
In 2007 Gable Erenzo, joined the team and the distillery sent off the first international shipment to Paris.
