In the early 1800s, our Woodford County Distillery, thanks to owner Oscar Pepper and Master Distiller James Crow, was the site for landmark discoveries and innovative techniques in bourbon-making.

Pepper and Crow are credited with refining and defining key processes such as sour mashing, yeast propagation, copper pot distillation and the maturing of whiskey in new, charred oak casks. Their work defined bourbon and subsequently rye whiskey as we know them today.

Adnams Broadside...$3.99 / pint
Adnams Broadside was brewed to commemorate the Battle of Sole Bay in 1672, in which the British fought the Dutch off of the coast of Southwold. Brewed with Pale Ale malt and First Gold hops, Broadside is a dark ruby red beer rich in fruitcake aromas, almonds and conserved fruit. It’s a fine heart-warming English beer, rich in flavours of malt and hops which enjoys a special place in many people’s hearts. It was voted England’s ‘Best Strong Bitter’ in 2011
Those lucky enough to live near one of the better beer bars in the country may find Broadside poured from a traditional English beer engine. The cask version, at 4.7% alcohol, will make you believe you’re back in England.



Adnams Explorer...$3.99 / pint
In the Spring of 2012, the folks at Shelton Brothers home office started getting an incredible amount of requests for Adnams Explorer. We were scheduled to import it, but that was months away, the necessary paperwork had not even been filed yet. Our surprise and confusion was finally abated when we learned that the beer had been mentioned in a new book. No, not a beer book, but Fifty Shades Darker, the second entry in E.L. James’ erotic Fifty Shades Trilogy. For those who don’t know what that is, you should probably get out a little more often, the books have sold over 65 million copies . In Darker the lead character, Christian Grey, orders two Explorers at a bar in Seattle, Washington. It is a work of fiction, so I suppose we can overlook the fact that the beer was not available anywhere in the U.S. When asked about their inclusion in the book, a brewery spokesperson replied, “There are no plans to rename the beer Sexplorer,”…”but it’s good to be name-checked in an international bestseller.”

OK, let’s get back to the beer. Adnams Explorer was inspired by the brewer’s interest in hoppy American beers. While certainly not over-hopped like so many American beers, Explorer will appeal to hop lovers as well as those who just want a proper pint of real ale. The hops are beautifully balanced by the fabled English malts that Adnams employs and by an intriguing, slightly-sulfury yeast character.

“An absolutely outstanding beer. Explorer is light and refreshing, suffused with the aromas of a grapefruit grove. The citrus attack will burst on your palate as the hops deliver their fruity bitterness.

Our Winter seasonal beer is here! Originally brewed in September of 1992 at the request of three bartenders/managers (who have since gone on to great fame and glory) Big Man I.P.A. has been a favorite seasonal brew at Cambridge Brewing Company ever since. Legend has it that the grist weight of Big Man I.P.A. was their combined total weight –
770 pounds of malt for 10 barrels of beer!

Deep copper-colored and unfiltered (as are all of CBC’s beers), it boasts a full body complemented by strong, robust flavors. Its rich notes of malt and caramel are offset by very aggressive hopping—it is kettle-hopped with Columbus, Cascade and Amarillo hops and further dry-hopped with even more Cascades and Amarillo.
These hop varieties lend a fruity, citrusy character to this big malty beer, in the style of a “winter-ized” I.P.A.

We just call it the Big Man.

Cambridge Brewing Red God...$7.99 / 22oz
Blessed be! Our ridiculously big, ultra-hoppy imperial red ale, RED GOD returns to the exaltations of worshippers far and near. From his celestial perch, he commands this rapturous union of malt and hops and prophesizes our inescapable bitter finish! Since its inaugural brew many years ago, both the malt and the hop content have been increased with each successive batch, yielding what today is an absurd 9.0% hop monster.

Red God features 7 different hop varieties showcasing, in particular, Chinook, Amarillo, Simcoe, and Centennial. These varieties combine for a strong herbal, spicy, citrusy character, which dominates the palate.
Hopping rate is quite aggressive at nearly five pounds per barrel with 80+ IBU, yet balance prevails! American pale and Belgian caramel malts provide a rich and malty, deep red pedestal upon which this hop fest rides until its long, lingering, hop-bittered finish.
Beware this vengeful God!





Cambridge Brewing Tripel Threat...$6.99 / 22oz
The tripels are generally the strongest specialty ales made by the Belgian and Dutch Trappist monastic breweries. Pale in color with a very distinct palate, they are painstakingly created as beers to be consumed on holidays and religious festivals. The Westmalle monastery originated this style in the 1920’s and continues to make the benchmark example. However, many secular breweries make a similar type. These are called abbey beers, as the term trappist is a legal appellation. The name tripel refers to the strongest offering in a range of three beers: single, double (or dubbel), and tripel (trippel). The name does not refer to triple fermentation, or the number of malt types or yeast strains used.

According to Michael Jackson (the British one, aka The Beer Hunter), CBC was the first American brewery to create and produce a Belgian-style beer. Our tripel went on to win our first ever Gold Medal at the Great American Beer Festival, in 1991, before there was even a category for “Belgian Ales.”

Tripel Threat is fermented with our proprietary Belgian yeast strain and brewed using imported Continental malts, hopped with Spalt and Goldings, and very lightly spiced with freshly toasted and ground coriander.

It is deep gold in color, full-bodied, fruity, and quite strong. Aromas of barley malt, orange blossoms and Asian pear, and a hint of coriander first greet the nose, then carry through to the palate. A warming sensation then takes over, and blends into a complex finish of bread dough, spices, citrus, estery alcohol, and hops.

We serve Tripel Threat on draft in a tulip glass with a 14 oz. pour, a traditional manner of serving which should impress upon the consumer the unique and very special nature of this wondrous beverage.

For the first time ever and as part of CBC’s Bottling Project, Tripel Threat is also available in 22oz. bottles for takeaway at CBC and at better beer stores throughout the Commonwealth. Our label pays homage to CBC’s first Head Brewer, Darryl Goss, who developed Tripel Threat. Proceeds from bottle sales of Tripel Threat will benefit research for a cure for ALS, also known as Lou Gehrig’s Disease.

Real change is here! No longer will American beer lovers be forced to choose between those quirky, eccentric beers of Belgium or the explosively flavorful IPAs of the United States.
We have brewed the change we have been waiting for!

Liberally hopped to an audacious degree, our Belgian Double IPA reaches across the aisle to bridge the seemingly contradictory brewing philosophies of the old world and new. Our beer uses generous portions of Pilsner and Vienna malts to give it its hazy golden color and rocky white head. Two independent dry hop additions of Simcoe, Chinook, Amarillo, Hallertauer, and Spalt put aside their differences to form a delicious coalition. Floral grassiness dominates the nose with fruity hints of bright citrus well represented. Its subtle spicy flavor comes from a Belgian yeast as well as generous doses of German hops in the kettle. These aggressive flavors are complemented by a determined bitterness and a full but dry finish.

All of these characteristics come together in a nonpartisan spirit of cooperation to form a beer that is both righteously flavorful and drinkable.

Founders Sweet Repute...$15.99 / 750ml

We plan to introduce Sweet Repute, a wheat wine aged in maple syrup bourbon barrels, this December to mark the eighth installment in our Backstage Series. Like all Backstage Series beers, Sweet Repute will be sold in 750ml bottles.

Our brewing team painstakingly choreographed each layer of this beer’s characteristics, starting with a healthy wheat and roasted malt base and adding clean, fragrant hops. It’s one hundred percent barrel-aged in maple syrup bourbon barrels and bourbon barrels over the course of sixteen months, then blended using carefully calculated ratios for the ultimate final product. The resulting 12.6% ABV liquid pours a bright warm russet with a stubborn ivory head and an intoxicatingly sweet nutty aroma. We put Sweet Repute in a larger bottle with sharing in mind.

“We’re excited about this one,” said Co-Founder and Vice President of Brand & Education Dave Engbers. “Every sample we’ve pulled from the barrels down in the caves has been incredible.”

The most expensive offering (a whopping $15 a bottle) is the 2010 Solanera Vinas Viejas. A blend of 65% Monastrell, 20% Cabernet Sauvignon, and 15% Garnacha Tintorera aged ten months in 80% French and 20% American oak, this is a custom cuvee assembled for Eric Solomon. From 100-year-old vines planted at the highest elevation owned by Bodegas Castano in Yecla, it exhibits notes of roasted herbs, road tar, beef stock, bouquet garni, kirsch and black currants. Lusty, succulent and fleshy, this medium to full-bodied red should drink well for 4-5 years. These are three remarkable values!

Solstice d'hiver (Winter solstice)
Barley Wine - 9% alc./vol."This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer." -- Brewery

Solstice d'hiver is brewed only once a year, at the end of the summer. It is then aged for a few months in order to attain a perfect balance in taste. Then, it is sold starting mid-December of each year, until stocks last.

One day in May 2012, Amager Bryghus had a visit from one of America's most charismatic brewers, Fred Karm from the Brewery Hoppin 'Frog in Akron, Ohio. Fred was on tour in Europe and made ​​a guest brew with us.  The result of this pleasant and rewarding day in good American Company, is the bottle you hold. "Frog Hops Two Amager" is a somewhat rare taype, namely an Imperial Wheat Stout, brewed with 8 different malts, two of which are wheat .  And then it would not do for us if it was not hopped strongly so we have given the beer a solid game of Tomahawk and Chinook.  You will find and intense and aromatic hopping beer, which is perhaps a little softer and not so heavy as other Imperial Stouts.  Hope you can enjoy the results of this transatlantic cooperation!

Upright produces four year round "numbered" beers with a similar theme, all of which incorporate regionally grown and malted grains, hops from the Annen Brothers farm in Mt. Angel, and a special saison yeast perfectly suited to our open fermentation vessels. These beers are named after their starting gravity (density, or pre-fermentation sugar content) in Belgian brewing degrees. This method is a nod to the days when breweries solely distributed to their respective neighborhoods with nothing but a number on the cap to distinguish the beers – a time before the overly branded products of today. We hope that you appreciate the absence of gimmicks at Upright and enjoy the beers in the same sincere fashion that they are made.

Four is a wheat beer embodying the spirit of country-style French & Belgian ales. It's light but nuanced with floral and herbal aromas and flavors, capped by a dry and mildly tart finish.
Malts: pale, wheat, vienna
Hops: santiam
4.5%, 18 IBU's

Upright Six....$11.99 / 750ml
Six is a rye beer displaying the great spicy notes the grain is known for along with a deep caramel core and delicate bubblegum note rooted in its open fermentation. Despite being dark in color, the beer finishes quite dry and refreshing.
Malts: pale, caramel, rye
Other: roast barley
Hops: magnum
6.7%, 25 IBU's

Upright Five...$11.99 / 750ml
Five blends three hop varieties with pale caramel malt to create full flavors. Subtle pale fruit aromas produced during the fermentation brighten the profile and provide contrast to its bitterness.
Malts: pale, caramel
Other: rolled barley
Hops: willamette, liberty, perle
5.5%, 37 IBU's

Upright Seven...$11.99 / 750ml
Seven is the most Belgian-esque of the numbered beers, where the house yeast is fully expressed with a big fruitiness while the hops provide spicy and herbal elements. The beer has some heft mid-palate but finishes dry.
Malts: pale, pilsener, vienna
Hops: magnum, mt.hood, columbia
8%, 23 IBU's




The brewers at Upright thoroughly enjoy developing different styles of beer ranging from old German and English styles to individualistic brews that only borrow a bit from tradition. These beers typically revolve around seasonal ingredients, barrel aging, or unusual yeasts and bacteria that make their time of release somewhat variable each year. Always produced in small batches, the seasonals come and go quickly with very limited distribution, but as the brewery continues to find room for oak barrels expect to see more new beers down the road.

Ale Brewed w/ Anaheim & Marash Chilies
We’re about to light up Florida with this Cigar City collaborative brew. Our Belgian yeast tangos with Anaheim and Marash peppers along with loads of citrusy hops to create an ale full of spice. Aged on Spanish Cedar to salute our mutual love for wood!

BEER FACTS
Body: Fun and full-bodied.
ABV: 8.5%
IBU: 50

Hops: Target, Centennial, Cascade, Pacific Jade, Wakatu, Simcoe
Malts: Pale, Carastan

Aroma: Fruity, citrus combo from hops, spice and yeast aromas. Slight herbal, cedar note.
Mouthfeel: What a wild ride. Coating, wide start that immediately turns the corner to astringent, sweet-warming then lingering spicy peppery woody long finish.
Flavor: Starts sweet, then a little tangy tartness but quickly turns to bitter, spicy, tannic. Great complexity.
Visual: Deep orange, slightly hazy.

Wild2 Dubbel ale, our mahogany-hued autumn ale spiced with schisandra, opens with the floral, earthy notes of fall itself. Schisandra berries, known as “five-flavor fruit,” possess all five flavors: salty, sweet, sour, spicy and bitter. This malt-forward dubbel ale is fermented with a Trappist yeast and finishes dry and slightly sour with a touch of bretta. Lasso a bottle!

Body: Full body. Luscious but finishes dry so it feels medium. You can drink the whole thing and still want another.
ABV: 8%

Hops: Target, Goldinas, Liberty
Malts: Pale, Munich, Carmel 80, Special-B, Wheat, Chpcolate Wheat, Oats
Yeast: Trappist Ale Yeast
Fruits/Spice: Shisandra
Aroma: Banana bubblegum and smoky clove- quintessential trappist yeast strain notes. The roasted malt bill brings to mind toffee, caramel, brown sugar, sarsaparilla and bittersweet chocolate. The bretta funkiness kicks the phenols into high gear along with more tropical fruits.
Mouthfeel: The beer opens sweet and creamy finishes warm and peppery herbal tongue-number. Full, clean finish.
Flavor: Deep rich and malty with peppery-like finish and dark fruits, wild musty pineapple, cellar-like flavor.
Visual: Deep ruby brown, bretta haze, medium tawny foam.
