Getting more than one exclamation in the notes, the 2016 ChĂ¢teauneuf-du-Pape CuvĂ©e de Mon AĂ¯eul is a deep, rich yet vibrant red that offers a kaleidoscope of kirsch liqueur, garrigue, crushed flowers, Asian spices, and cured meats. It's more opulent and sexier than the 2010, fresher and purer than the 2007, has deep, full-bodied aromas and flavors, and a huge finish. It's a sensational, heavenly ChĂ¢teauneuf-du-Pape that tops out my scale. This cuvĂ©e is 100% Grenache that was not destemmed and was aged in 20% demi-muids and the balance in concrete tanks.

All Grenache, all whole cluster and from parcels in the lieux-dits of La Guigasse, Le Crau and Les Serres, the 2016 Chateauneuf du Pape Cuvee de Mon Aieul has evolved beautifully since I tasted it last year, showing vibrant floral and tea-like notes, raspberry fruit and hints of licorice. It's full-bodied, rich and velvety, with overtones of spice cake on the long, crisp finish. Tasting it, I was surprised to find out what the alcohol level was, because it showed no obvious heat—a testament to how much else is going on here.

What followed was left to the imaginative and creative spirt among the collaborators. Violet Underground represents a partnership between The Wild Beer Co. and Firestone Walker Brewing Co. A cuvĂ©e was born from Somerset Wild, a newly minted Golden and Sunrise Raspberry ale, and Barrelwork’s blending warhouse, Cowbell. Proprietary yeast from both sides of the Atlantic, fresh local California fruit and French candied violet petals went into the cauldron. The resulting potion is bursting with ripe fresh fruit, a hint of violet petals and anchored by a funky yeast foundation. A quenching acidity and lively carbonation rounds out the collaboration. It was originally created by farmers from the ComtĂ© region who did not have enough milk to make a big cheese (Comte is about 100 lbs per wheel). They came up with the idea to dust the curd with a light layer of ash while waiting for the next milking, so as to prevent the cheese from spoiling. Thus, they protected and preserved the cheese. A second layer of cheese was then applied to the previous layer, leaving the black ash line in the middle.   So traditionally is was made with morning milk, a layer of ash, and then the evening milk.
