Beer of mixed fermentation, the Stout Rullquin is obtained from a blending of 7/8 of Rulles Brune (Stout de Gaume) and 1/8 of a blend of 1 year old lambics, which has matured for 8 months on oak barrels. Unfiltered and unpasteurized, this beer is refermented for 6 months in the bottle.

Appearance: Pale amber.
Aroma: A relatively closed nose; clean and fresh, with traces of linen and herbal fabric freshener. Laura Ashley? After a while a light, spicy prickle emerges, topping a fruity/doughy note: apple dumpling, made with suet and dusted with nutmeg. With a drop of water the paper note advances, joined by warm leatherette and a trace of steam.
Taste: Smooth texture, sweet taste and a surprising amount of smoke in the finish – more coal smoke/steam engine than peat smoke. An unusual, antique taste, which holds up well with a drop of water, although the smoky element is reduced.
Comment: Interesting and vaguely ‘old fashioned’, especially without water.

Appearance: Pale gold. Lemon lights.
Aroma: Sweet malt in the foreground, rapidly followed by fruity notes – tinned pears – with traces of spun honey. The sweet cereal now in the background as sweet biscuit. Water introduces hemp rope and wet cardboard, but still with a fruity top-note.
Taste: Sweet to taste at bottled strength, with considerable spice across the tongue and a warming, medium-length finish. At reduced strength it is less sweet and less spicy, but remains fruity, with a trace of apple sponge and vanilla.
Comment: Pleasantly sweet and spicy, with the ‘hemp rope’ an old fashioned scent.

Our Cult of Islay pays homage to the island’s undeniably messianic spirit, with its huge following. Equal amounts of Islay malt whisky and single grain whisky, both aged for at least 32 years, creates a bewitching balance of alluring spirits. These are original Murray McDavid casks selected and married personally by Jim McEwan.
The adored spirit of Islay flows through this sensational dram. This is a blend of bourbon and Oloroso Sherry casks, displaying serious maturity and styles rarely seen in today’s world of whisky. Bottles of Scotch whisky are time capsules. Even more than single malts, blends can reflect the production methods and philosophies that prevailed in Scotland during specific eras. Scotch is constantly evolving, and blends aggregate these trends and adaptations.
Fashions change, and formulae follow suit. Blended whiskies of the 1970s, '80s and '90s are very different to today’s versions, even when the brand name remains the same. The Extinct Blends Quartet reimagines four of our favourite blended Scotches from yesteryear, using some of our rarest and most idiosyncratic stocks of whisky.
For our third release in the Extinct Blends Quartet, Metropolis, we step into the throng of a striving city through the ages. Blended Scotch began in the metropolis, with blending vats in Glasgow and Edinburgh producing bottles for urban jungles around the world. The soul of blended Scotch continues to reside in the city.
Vanilla arrives first on the nose, followed by a medley of different honeys. Fudge, apricot and pineapple lead to fresh fig. A rich and very complex palate with sultana, apricot again and hints of smoky woodiness. A long and sweet finish, with a pleasing weight.

The NV Amontillado 51-1A VORS, from a solera created in 1830 has a bright amber color. Intensely aromatic, with a nose full of balsamic notes (rosemary, thyme) intermixed with some smoke, spices, noble woods and hazelnuts. The intense, complex and complete palate shows great elegance and finesse, with a bitter orange and saline finish that makes it very tasty. Extremely long. Only 600 bottles are filled each year. This bottle would last, age and improve, probably for many years. Drink 2013-2020.

The NV Sibarita Oloroso VORS is produced with Palomino grapes, balanced with 2% of Pedro Ximenez, something quite common to polish the edges of very old wines, in a solera created in 1792. It has a dark mahogany color, and the nose shows some toffee notes intermixed with roasted coffee, tar, ash and incense. The palate shows good depth, strong acidity, well compensated by the sweetness, and a slightly bitter finish. It stands apart from other Olorosos, with a unique range of aromas and flavors. 1,500 bottles are filled each year. Drink 2013-2020.

2017 Zuccardi Finca Piedra Infinita Altamira Malbec...$155.99
They use some specific soils for the 2017 Finca Piedra Infinita, up to eight different plots, but not all plots contribute to the wine every vintage; in general, the zones with 20 to 60 centimeters of soil and then large stones with calcium carbonate are reflected in the wines. So, they deconstruct the vineyard, and then they build the blend with the plots they like for each wine, up to eight here but only a specific one for the Supercal and Gravascal. There's a little more ripeness and exuberance here within the general austerity of the whole Piedra Infinita range, especially when compared with the 2018s. They harvested 15 to 20 days earlier than in 2018 (or in 2016) and they had to run, but the separation they have by soil helped them to harvest earlier the earlier-ripening parts of the vineyard. That gave them a great advantage and they produced very good 2017s, but the condition of the year, a shorter cycle and a more hurried year was what it was. This 2017 is not as long as the 2018, and there is a strong chalkiness in the finish. 7,300 bottles were filled in August 2018.

The 2020 Suduiraut, 100% Sémillon in this vintage, is a dense, tightly wound wine that is going to need a number of years to come around. Passionfruit, ginger, spice, mint, apricot and tangerine peel build nicely in the glass. The 2020 is a blend of four picks from mid-September to early November. All the elements are so nicely balanced. The 2020 is simply exquisite.

2018 Torbreck Barossa Valle RunRig....$199.99
Torbreck's 2018 RunRig needs a bit of air right now, as the nose and palate truly open up and expand after a while in the glass. Unlike some vintages, it's rather tight and cedary upon first pour, then relaxes to reveal hints of stone fruit, blueberries, cherries, pastry crust and baking spices. In the mouth, it's full-bodied and concentrated, richly textured and marked by ripe tannins, which leave behind a velvety, mouth-coating finish tinged with licorice and dark berries. While approachable now—and even damn enjoyable—it deserves another several years in the cellar. Drink the 2018 Descendant while waiting.

At Found North, we structure our blends around one component whisky. When you see “Maturation” on our bottles we are referring to the aging regimen for that component, our keystone in the arch of the whisky. Sometimes it makes up 50% of the blend and sometimes it makes up 5% of the blend, but it is always the foundational piece of the whisky. In the case of Batch 008, we used a vibrant 18 year old rye barrel in an ex-Madeira cask. This component makes up 4% of the blend, but it dominates the profile, releasing blackberry and fig puree on the nose, and a wild-grain, earthtone on the palate.  The ex-Madeira aged rye was unruly and vivacious, requiring four separate corn components to round out the profile and give the whisky its shockingly creamy texture. To accomplish this, we blended in a 22 year corn component in new wood, a 23 year corn component in new wood, a 23 year corn component in ex-Bourbon, and our favorite, a 26 year corn component in Hungarian oak. Lastly, we used a 19 year Hungarian oak aged rye to provide Batch 008 with the spicy backbone and texture on the finish.
