2015 Puydeval Red Blend
2015 Puydeval Red Blend...$14.99
Puydeval’s fabulous 2015 IGP Pays d’Oc Rouge (56% Cabernet Franc, 30% Syrah and 14% Merlot) is an Old World fruit bomb that has tons of cassis, black raspberry, spice and licorice in a fruit-forward, deliciously quaffable style. From low yields and raised in concrete tanks with oak staves, this plump, sexy Cabernet Franc has tons of appeal and is a terrific value.

Made from 80% Pinot Noir and 20% Chardonnay
Blood orange, red fruit and rhubarb on the floral- and spice-accented nose and on the palate. Taut and linear but fleshes out with air, showing very good intensity and finishing with lingering rose pastille and bitter cherry notes.
Rated 90/100 Vinous Media
Joël makes a small amount of rosé, about 160 cases per year. Joël’s rosé is made by adding aproximately 10% still red wine (100% Pinot Noir) to the blend. Dosage for the rosé is 12 grams per liter (to be called Brut, a Champagne must have less than 15 grams per liter).

GROWER CHAMPAGNE:
Every Champagne label must have a 2 letter code on it. You will find it in very small print followed by some numbers. It is estimated that about 85% of the Champagne are labeled with "NM". Only about 10-15% of Champagne is Grower Champagne.
"RM" or Grower Champagne produces some of the most distinctive and finest Champagnes. There is a sense of "terroir" with these wines. The large Champagne houses buy grapes from all over Champagne to create their "house style" which has nothing to do with where the grapes came from. "RM" Champagnes are the production of a small family operation that takes pride in what they do and represents the land that the grapes are grown on.
Here are the main codes you will see
RM: Récoltant-Manipulant (maker) Known as "Grower Champagne. This is a producer that has control from start to finish. They grow their own grapes and make their own wine. All the grapes are grown on their own estate (they can purchase up to 5% to supplement if needed). These are usually small family producers that do not get a lot of publicity.
NM: Negociant Manipulant (maker) Most of the big Champagne houses fall into this category. This means they purchase grapes from other growers and make their own wine. The also use their own estate grapes in their production. This has been the way Champagne has been made for hundreds of years.
RC: Recoltant Cooperative. Similar to "RM" but they produce their Champagnes with the help of cooperatives. The grower sells his grapes to a cooperative to make the Champagne for them.
CM: Cooperative Manipulant: Basically a group of growers sell their grapes to a cooperative and the Champagne is made there and sold through the cooperative. Sometimes they sell it to the big Champagne houses as grape must or even finished Champagne.

Wichita Brewing Shaven Yak
Wichita Brewing Shaven Yak...$9.99 / 6pk cans
SMOOTH. TOASTED. NUTTINESS.
Shaven Yak is an English Brown Ale that pushes the limits on how big flavors and explosive aromas can fit into a relatively modest strength beer. Carefully bringing together top-quality English malts is what creates the headlining characteristics of this malt-forward, dark-brown, refreshingly drinkable ale. Expect biscuit aromas to erupt from your glass, giving way to an incredibly rich toasted and nutty fullness, and finishing with a light fruity dryness.
There’s nothing hairy about keeping you from enjoying this delicious beer, it’s just a nice and clean Shaven Yak.
Blue Blood Robber's Cave Justifiable Hopicide NEIPA
Blue Blood Robber's Cave Justifiable Hopicide NEIPA...$9.99 / 4pk 16oz
New England Style IPA
When your Cellarman goes on an east coast IPA bender and starts killing hops like a raged mobster in a territory war, well…you better think quick on how to make a hopicide like that justifiable. We did so by disposing of the hop remains in a super juicy, hazy IPA. When you have Mosaic, Citra, Amarillo and Simcoe hop juice on your hands. You rinse it off with wort, dry it up with oats, and bring forward an explosion of grapefruit, mango, lemongrass and orange peel! One lip smacking drink of this IPA and you too will end up with a quick trigger finger, an east coast accent, and a propensity for green chowda!

San Lorenzo
A pair of outstanding Zin's from the historic San Lorenzo Vineyard. I think Pete Seghesio is making a couple of California's best Zinfandels from his San Lorenzo Vineyard. Better yet we can actually get the wines, back when Seghesio Winery owned the San Lorenzo Vineyard it all went through their wine club. These Zin's are truly next level.

Carter Cellars Cabernet “Carter”
Super limited!
If you haven't tried Carter Cellars don't pass on this opportunity to grab the 2016 Carter Cabernet. We almost never get enough wine to advertise but we are sure glad to be able to offer this one.
2016 Carter Cellars Cabernet “Carter”....$159.99
(we are the lowest price in the country online)Very deep purple-black in color, the 2016 Cabernet Sauvignon Carter begins just a little closed and youthfully reticent before revealing loads of black fruit and earth-inspired notes, including baked black cherries, cassis, blackberry pie and tilled soil with hints of fungi, underbrush, scorched earth and mossy bark. Full-bodied and densely packed with black fruit and earth layers, it has a firm backbone of grainy tannins and a lively line, finishing long and mineral laced. This needs at least 5-7 years and then should drink for the next 30+ years.

Lead Blender -John Glaser
For this Limited Edition,Tim asked us to create something “...bright, smooth, not smoky...an assemblage perhaps between 12 and 15 years-old...”. We’ve tried to give him all that an much more. This assemblage (we love Tim’s use of this wine word to describe whisky blending) comprises single malt whiskies from four distilleries, each bringing a distinctiveness to the whole.
You’ll find notes of barley sugar, pear drop and vanilla, complemented by an ethereal underlying herbal character. It’s a whisky to be enjoyed with great food and even better company.

Compass Box & Juveniles share a similar approach to good food and drink, seeking out integrity and not taking things too seriously. Both our businesses are obsessed with quality and provenance. Both like to do things in their own way.
These common traits have made Compass Box and Juveniles good friends since the very first meeting between Tim and John years ago. We have collaborated with Tim on Juveniles whiskies several times.
Plantation Xaymaca Pot Still Rum
Plantation Xaymaca Pot Still Rum....$21.99
100% POT STILL JAMAICAN RUMWith Xaymaca Special Dry, Plantation revives the quintessential Jamaican-style, 100% pot still rums of the 19th century with an expression of intense flavors that reveal the traditional, legendary « Rum Funk » : aromas and flavors of black banana and flambéed pineapple, locally called "Hogo," an Anglicization of the French term "Haut Goût" (high taste).
"With Xaymaca Special Dry, I wanted to dive into the iconic culture that is unique to Jamaican rum. I wanted to work with these complex flavors of overripe exotic fruits with an almost "animal intensity". We can still find certain white rums with this famous « rum funk ». I think, however, that this great terroir expresses itself perfectly in an aged rum. That is why we are launching Xaymaca Special Dry, which is a tribute to this ancestral culture of rum" explains Alexandre Gabriel, Master Blender and creator of Plantation Rum.
THE REALIZATION OF A DREAM
Xaymaca evokes the name given to the island by its first inhabitants, the Arawaks. This nectar is a return to the origins of Jamaican rum, in all its complexity and intensity. With its latest investment in the Caribbean, Plantation now owns a third of the mythical "Long Pond" and "Clarendon" Jamaican distilleries. Thanks to these exceptional production tools, Alexandre Gabriel made his dream of blending a 100% pot still Jamaican rum a reality.
"The access to these 2 emblematic distilleries with their retort stills, which look like ancient pachyderms, is the realization of dream. It allowed me to dive into this ancestral tradition and create a rum that I had wanted for a long time."
Xaymaca Special Dry is a blend of rums distilled in the old John Dore pot still at Long Pond and the Vendome at Clarendon. The idea is to boldly assert the powerful and expressive character of these rums.
