Found North Batch 009 Whisky 19 Year Old...$149.99
Batch 009 is a celebration of age. The common dichotomy in whisky is that either age is the be-all-end-all or does not matter. The truth, unsurprisingly, is more nuanced. Old whisky does not necessarily equal good whisky, but old whisky often presents flavors and textures that are unavailable within younger barrels of maturing whisky.
Batch 009 is our oldest Batch to date. While the cornerstone of this blend is a 19 year old rye finished for over a year in Ruby Port hogsheads, the foundation is a triplet of 23 year old corn components, two of which were aged in New American Oak and one in Bourbon barrels. We used two additional 19 year old whiskies, one corn and one rye, as well as a 22 year old corn and a 26 year old corn component to round out the rest of this 8-whisky tapestry. The resulting blend is dynamic and fragrant and easily the thickest whisky we have ever made.

Introducing the Theodore Rex Ozark Highlands Whiskey Series. The Wine & Cheese Place is proud to introduce a first of its kind project in partnership with Demetrius Cain and Nobletons Distilling House. The Theodore Rex Ozark Highlands Whiskey Series is an annual selection of four single barrel whiskeys released to coincide with the changing seasons, and a fifth barreling comprising a blend of the four seasonal single barrels. The annual lineup will include: “Planting Season” (Spring), “Summer Solstice” (Summer), “The Harvester” (Autumn), “Orion’s Journey” (Winter) and “Celebration” (Holiday Blend). Ozark Highlands whiskeys have been distilled in Missouri for over 200 years, and finally won official designation in 2022 in an effort led by Demetrius. The Theodore Rex series honors the rich legacy this historic American spirit by allowing our patrons to taste its nuances through different barrelings and mash bills over the span of years.

This limited release starts with our Four Grain Straight Bourbon. We migrate this bourbon to various-sized French oak casks, adding flavors from the wood and spirit previously held in these vessels. After secondary maturation, this whiskey is married in a 50-year-old, 1,600 gallon former Cognac foeder for tertiary finishing. Every year we harvest just a portion of the whiskey, immediately topping up the foeder with new Four Grain Bourbon finished in Cognac Casks. This solera-style cycle creates a complex spirit with our signature Four Grain flavor followed by nuanced notes of stewed fruit, raisin, and black tea with a luxurious finish.

Pulque is the pre-Colonial agave-based drink that is made by fermenting the agave sap (known in Mexico as aguamiel)Mention of Mezcal de Pulque in Diccionario Universal de Historia y de Geografia, 1855
There is not much historical writing on the early years of mezcal production or those of other agave spirits leaving some speculation and debate on the origins and possible earliest dates for destilados de pulque. Some claim it as an obvious precursor to mezcal as it would be logical for a creative and entrepreneurial alchemist to try to distill a fermented product with a high concentration of sugars such as pulque to see what the resultant spirit would be like. Others claim it came later as a way for producers to capitalize on pulque that is about to go over-ferment and go bad. Instead of throwing the product away, it would be returned to the haciendas pulqueras to be distilled and resold as destilado de pulque.One thing all agree on is that the destilados de pulque went into obscurity with the decline of pulque itself in the early 20th century due to the rise and popularity of beer.

GALIPETTE BRUT is where it all began, our first cider. Delightfully dry to medium-dry, it strikes a perfect balance between acidity and tannins, dryness and sweetness, and between ciders old and new.
The unique assemblage balances all four styles of cider apple: bitter, bitter-sweet, sweet, and sharp, in varieties such as Marie Ménard, Kermerrien and Judor. They come from traditional apple orchards near the river Rance in northern Brittany’s Côtes-d’Armor; this is a cider true to its roots, and ours.

The unique assemblage balances all four styles of cider apple: bitter, bitter-sweet, sweet, and sharp, in varieties such as Marie Ménard, Kermerrien and Judor. They come from traditional apple orchards near the river Rance in northern Brittany’s Côtes-d’Armor; this is a cider true to its roots, and ours.
Slow fermented for medium strength, it has a lovely harmony of earthy aromas and vibrant tastes. Enjoy this zingy unwinder just as it is or discover its food-friendly nature with lightly spicy food.
