The 2010 Pinot Noir Sierra Mar is ripe, juicy and explosive. Layers of dark red fruit, gorgeous fragrance and freshly cut flowers are some of the notes that flow from this generous, fleshy Pinot. Silky tannins frame the exceptionally elegant, polished finish. This is a stunning wine from Adam and Dianna Lee. This is only the third vintage for Sierra Mar, but based on what I have tasted so far, this certainly seems like a superb spot for Pinot. The predominant clones are 943, 777, 23 and Pommard. Anticipated maturity: 2012-2020.

In 2003, we had a massive 37-inch snowstorm over two days in Fort Collins. Everything shut down for a couple days – no work, no school, no cars. The only way you could get around was by ski or toboggan. When we began brewing Snow Day, we looked to this one storm for inspiration. The dark characters of the malt bill reflect the dark stormy sky at the beginning of the snowfall. But on the third day, the sun broke through and everything was glorious! The name Snow Day evoked joyful freedom. Everyone remembers waiting for the school report as little kids. When you heard your school was closed, you suddenly had all day to play in the transformed, white landscape. Well, that’s the kind of emotion we put into this beer.

Pleasantly hoppy, Snow Day carries the subtle chocolate and caramel flavors of a new brewing malt known as Midnight Wheat. The Styrian Golding, Centennial and Cascade hops bring the backbone of hoppy bitterness to complement the roasty undertones. This beer is the deep garnet of a roasted walnut and presents a creamy tan head, floating artfully atop. Snow Day is bold and hoppy, drinkable and strong.

Our Coffee Stout is a classic combination of a traditional stout and premium French roast coffee from St. Louis roaster, Kaldi’s Coffee. Roasted barley and coffee dominate the aroma, with the sweetness from the stout balancing the acidity of the coffee. We use a unique cold toddy extraction process to brew a less acidic coffee for the beer.

In the 1990’s, Kaldi’s staff started visiting the Schlafly Tap Room, asking for a pint of stout and a shot of espresso. Both Schlafly and Kaldi’s realized this was a match made in beer heaven, and soon started working together to find the perfect coffee blend to mix with our Oatmeal Stout. The Saison was the first beer of the brewery.Saison is a blonde beer brewed according to the ancient Saison tradition of the province of Hainaut. The French sounding name of the beer clearly refers to this.

Saison d’ Erpe-Mere is brewed exclusively with natural ingredients: artesian water, barley and wheat malts, liquid sugar, hops and yeast.
The result is a dry, hoppy, fruity and slightly veiled beer with 7.5 % alc. vol.

"Canaster, a subtle Winter Scotch, is the third beer from the brewery. This beer is only available from November till February. Yet it was a definite choice to avoid any clear reference to Christmas or New Year in the name. On the other hand the name Canaster clearly refers to an ancient brewing tradition of Aalst. Centuries ago Canaster was brewed in the Carmelite convent in Aalst. The archeological site was recently uncovered and is the subject of an historical investigation. Canaster now relives as a Winter Scotch, a beer for the long, cold winter evenings. Here the same natural ingredients are used as in the two other products of the brewery, including the Hallertau hop from the Aalst area.This beer with a 9.5 % alc. vol. owes its warm aroma and its full-bodied taste to the use of fine, dark malts (caramel). The same 25.4 oz. bottles are used but the wrapper is white, red and green. The brewery offers a special winter glass for this beer. "Jan De Lichte is the fourth and the latest beer of brewery De Glazen Toren. Again the name refers to local history. In the 18th century Jan De Lichte was the leader of an infamous gang of robbers in the region of Aalst – Zottegem. He was executed in Aalst at the age of 25.The beer was developed only very recently (May 2005). As it is brand new it has not got a wrapper yet. It was first introduced to the public during a two-day beer Festival in West-Flanders in early June 2005.Jan De Lichte is a wit beer. But following ancient tradition we are using four grains beer: Barley and wheat are used of course, but there is also oats and buckwheat.Jan De Lichte is the only Glazen Toren beer to which spices are added, following the Belgian tradition of wheat beer brewing. The use of coriander and curaçoa makes for the extremely fresh, citrus-like taste. The rather high alcohol percentage (7.5 %) indicates that it is more than just a thirst quencher. Quite like Jan De Lichte himself some 250 years ago, the beer is not innocuous." -- importer

2009 Dragonette Pinot Noir Fiddlestix Vineyard...$46.99

"The wine was aged in French oak barrels, 33% new, for 18 months without racking and was bottled unfined and unfiltered. 175 Cases Produced.

Our Tasting Note: The nose is a fascinating combination of high-toned, ripe red fruits including cranberry and raspberry (from the clone 113), deep black cherry with cola (from the 115) and signature Fiddlestix baking spices, such as cinnamon, nutmeg, and pumpkin pie. Partial whole cluster fermentation adds complicating notes of pine, fresh bay leaf and nori (seaweed). On the palate this medium bodied wine gives substantial but measured amounts of fully ripe fruit (jammy raspberry, pomegranate, and cherries) and hints of vanilla, The solid acidity and ripe tannins provide ideal structure for a long (yet velvety) finish and a long life ahead." -- winery

2008 Dragonette MJM...$52.99

"2008 MJM is comprised of Syrah grapes from several cooler climate vineyards: Los Tres Burros in Los Alamos Valley, Shadow Canyon Vineyard in York Mountain, and Paderewski vineyard in West Paso Robles. These spectacular, ultra low-yielding vineyards produced grapes of incredible depth and intensity. Due the incredible intensity of these grapes we felt it appropriate to age them for an extended period in a significant percentage (approx. 86%) of new French oak barrels and Puncheons (coopers: Sylvain, Ermitage, Radoux, Seguin Moreau). Each lot was fermented and aged separately for 22 months before being selected for the MJM blend. The wines were then blended (including additional varietals) and aged 4 additional months before bottling without fining or filtration. 175 Cases produced.

Our Tasting Note: On the nose, the wine demonstrates its serious purpose, displaying deep and serious, yet wildly exuberant and large-scaled aromas of dark black and blue berries, complimented by fresh vanilla, cacao, cedar and other lighter, toasted wood spices and hints of raw meat and black olives. The wine is full in the mouth, delivering a torrent of fresh and dried blackberries, blueberry and kirsch, spiced with vanilla. The finish is long, creamy and substantial, lingering on the palate due to the solid but ripe tannins and round acidity." -- winery

2008 Dragonette Syrah...$34.99

2008 SyrahThe 2008 Syrah is comprised of grapes from several cooler climate vineyards: Watch Hill and Los Tres Burros in Los Alamos Valley and Shadow Canyon Vineyard in York Mountain, west of Paso Robles. 2008 was marked by a punishing early frost which lowered yields significantly. The vintage was generally quite cool with only short periods of intense heat and a long cool September. Our low yield philosophy was extremely helpful in 2008 as ripening less fruit is critical in cool years. The grapes for the 2008 Syrah were hand harvested and sorted in the cool early morning hours throughout late September and mid October, fermented separately, and aged on its less in barrel (30% new) for 22 months prior to bottling on August 20, 2010. 325 cases Produced.

Our Tasting Note: The wine delivers intense aromas of black and blue berries, vanilla, cedar and toasted wood spices intermixed with dried and raw meat notes. The wine is full in the mouth, unleashing a torrent of fresh blackberries, blueberry, and kirsch, with solid depth and concentration. A young wine, the tannins are present, but ripe and with fresh round acidity, they provide a positive structure, leading to a long finish. The Syrah would be best served with strongly flavored dishes of beef or game (venison comes to mind), with or without sauces (peppercorn or strong blue cheese). It’s good on its own too." --  winery

Steve Crider of 2nd Shift Brewing has agreed to do our fourth Collaboration

2nd Shift Brewing opened up late last year, but just recently announced that it would start bottling small batches of its beer.    We are very excited to announce that they will barrel age our fourth beer in the series.    And to add a little more fun to our Barrel Aged Beer Series, Steve of 2nd Shift Brewing wants you to pick which beer he puts in the Buffalo Trace Bourbon Barrel.    He has narrowed it down to three great choices (see descriptions below before voting)

2nd Shift Brewing Cat Spit Stout

Heres what I've been goofin around with for a while. I love belgian wits on hot summer days (or freezin your butt off days). Anyway I took a witbier and threw in a bunch of hibiscus flowers from Egypt and made the stuff even better. 5.2%

2nd Shift Brewing El Gato Grande 
EGG is another IPA that we came up with.
All you need to know is over 3 lbs. per barrel of Columbus, Amarillo and Citra.

Again, you have to be patient, we will not see this beer until sometime in 2012.   Expect to see some other bottled beers from 2nd Shift Brewing at The Wine and Cheese Place before then.
