GROWLERS --

As you know, Missouri has been trying to pass a growler law. It finally became legal August 28th. You might be wondering why you have not seen growler stations all over yet? There was a little wrinkle in the law that if you have a "retail liquor by the drink" license, you cannot sell growlers. Well, the "by the drink" license is the most common license and most stores in St. Louis have a by the drink license as we have had one for 30 plus years. That is how places like the grocery stores, Lucky's, and Whole Foods are able to sell you a beer or a glass of wine to drink while you shop, they have a "by the drink" license. We decided to get rid of our "by the drink" license so that we can sell growlers. The law states that either you can sell glasses of beer ("by the drink on premise") or growlers of beer to go - you cannot do both. Eventually this might get changed.


We have the system set up at our Forsyth location. We are waiting for the new license to arrive and we will be ready to go. We will have both 32oz and 64oz growlers for sale.
We will update when we are able to sell growlers here in the next few weeks.


We have a keg of Civil Life American Brown set up to taste - come in for a taste.  We had to make sure the system works somehow? right?

What type of beers would you like to see?
Our obvious plan is getting beers that we cannot get in package already.   Get some local breweries that are not bottling yet like Civil Life and others.





We are hoping to be ready to sell growlers at the end of next week?  Fingers crossed.

It is much tougher to decide what to put on tap now than I thought.  Initially we thought we would be able to sell both growlers and beer by the glass.  Because of the law, we can only sell growlers (not both).  I am wondering will people want to buy high ABV beers in a 32oz or 64oz growler?  Or do you want lower alcohol beer?   For example, should I be begging my distributor for a keg of Goose Island BCS in November or is that too much to sell in a 32oz growler?

One of the two flagship cuvées, the 2013 Cabernet Sauvignon Private Reserve Georges de Latour is a fabulous wine. Obviously, this is the one wine that received the most meticulous attention from their outside consultant Michel Rolland. A great effort in 2013, as one might expect in this vintage, this wine needs 5-6 years and seems capable of lasting 30-40 or more, given the history of the great BV Private Reserves. Inky purple to the rim, with an extraordinary nose of créme de cassis and kirsch, licorice, cedarwood, and a touch of underbrush, the wine hits the palate with a full-bodied, powerful, concentrated, dense style, has great acidity, moderately sweet tannin, and a long, long finish. This wine is young and still slightly unformed, but loaded with potential and upside. Forget it for 5-6 years and drink it over the following half-century.

It was just a matter of time, in this case, time in a barrel, before these came your way. Del Maguey Single Village Mezcal is pure liquid art, the true expression of each of the palenqueros from their individual Zapotec villages in the remote mountains of Oaxaca. Del Maguey will never waiver from this, and will never alter in any way the art of the distiller. That said…. in our world there are many different and personal palates, each with his or her own desires, and that opens up a multitude of possibilities.
Of course, there is no tradition of oak aging in Oaxaca, and as such, we would never deign to refer to these Mezcals as traditional. That said, we have this amazing liquid art, and we just happen to have friends that work with, and therefore provide us access to, some of the most beautiful barrels in the world.
We will always remain true to the Single Village concept. Never would we blend the villages. Never would we think that we might make the Mezcals “better” by blending villages or by aging…but perhaps they could be different?
What if we could actually enhance the terroir?

We then procured eight WL Weller barrels that previously held Old Rip Van Winkle for ten years. We filled four with Chichicapa and four with Santo Domingo, and will soon be releasing a three to thirteen-month-old Chichicapa, and a three to sixteen-month-old Santa Domingo Albarradas. All that and we are still allowing a barrel of Santo Domingo Albarradas and a barrel of Chichicapa continue to age.


Make no mistake, this liquid art will always remain Mezcal, and will always remain true to the village terroir. Never will we allow the oak to dominate. They will always be Mezcal forward, with the barrel adding texture and layers of flavor, nuances perhaps, but always Single Village Mezcal with the character of the village, as you know it and love it, being the focal point. As Ron says, “We will never make a Reposado or an Añejo, but I reserve the right to experiment.” Every Mezcal will be a Single Village Mezcal, in keeping with our 20 year history of celebrating the traditional art of the palenquero. But perhaps we will allow some oak influence, with every label stating the source of the aging, and the hours the Mezcal spent within that vessel. We would never tell our palenqueros how to distill, or even what to distill, nor have we tried to somehow improve upon their art form. Quite the contrary, we believe that they are all brilliant artists, and their art is nothing short of genius. In this project, we have just chosen to surround this art form with a beautiful oak frame, possibly complementing with additional texture, structure, or complexity, because we know that beauty is always in the eye of the beholder.

Douglas Laing's Timorous Beastie, immortalised in Robert Burns' famous Scots poem "To a Mouse", was a timid, little field mouse. Echoing our national bard's wit, ours is most certainly not for the fainthearted! This non coloured, non-chill-filtered Small Batch bottling is a marriage of appropriately aged and selected Highland Malts - including, amongst others, those distilled at Glen Garioch, Dalmore and Glengoyne distilleries. Incredibly sweet on the nose, with light floral and spicy honey tones. The palate is spicy, and sugary, carrying notes of raisin fudge, with a sweet yet subtle finish.
Overridingly sweet on the nose, then warming to floral, light barley & spicy honeyed tones. The palate opens in a spicy style - fructiferous, mellow, with sugary vanilla. The finish is at first subtle, but runs to a sweet character that carries an oaky quality plus a late meringue style.

Douglas Laing's Scallywag is a Small Batch bottling created using only the finest Speyside Malts including - amongst others - Mortlach, Macallan and Glenrothes. Bottled at 46% alcohol strength and non chill-filtered, this Small Batch bottling has a distinct rich, dark colour - extracted from the many fine Spanish Sherry Butts used during maturation. In fact, we use 40% first-fill Sherry butts in the mix, and the result is a truly charming Malt with a richly spiced character, fused with vanilla (from the bourbon casks used), sweet stewed fruit, Christmas pudding, dark chocolate, zesty orange and sweet tobacco.

Paying homage the sea, Douglas Laing's Rock Oyster is a Small Batch bottling created using the finest maritime Malts including those distilled on the esteemed Islands of Jura, Islay, Arran and Orkney. Bottled at 46.8% alcohol strength and traditionally without colouring or chill-filtration, this Small Batch bottling has a truly maritime and oceanic character of sea-salt, sweet peat, smoke, honey and pepper from its Islay Malts, and softened somewhat by the sweeter, barley-based impact from Arran, Jura and Orkney.

Wave soaked rocks and a salty oceanic fresh influence on the nose, running to an initially subtle palate that carries soft and rather sweet peat paralleled with smoke, honey, damp ash, liquorice and late pepper. All of what went before is neatly replicated in the moreish finish.

Douglas Laing's Big Peat is a feisty Islay character with a sweet side. This is a small batch bottling, without colouring or chill-filtration and only contains Islay Malt Whiskies, including Ardbeg, Caol Ila, Bowmore and (even the now closed) Port Ellen to name but a few! Big Peat is fresh, salty and clean on the nose, with notes of sweet malts dried over peat. Typically Islay in flavour, the palate carries notes of ash, sweet tar, smoking chimneys and a subtle salty beach quality, with a long and lingering phenolic finish.

2013 Joseph Phelps Insignia...$199.98
The flagship wine of the estate in reds is their Insignia, which has been one of the great Bordeaux blends made in California since the debut vintage in 1974. It usually has 30+ years aging potential, even in lighter vintages, of which the 2012, 2013 and 2014 are decidedly not. The 2013 Proprietary Red Insignia was scheduled for bottling after my visit. A blend of 88% Cabernet Sauvignon and the rest smaller proportions of Petit Verdot, Merlot, Malbec and Cabernet Franc, this is a smaller cuvée of about 12,300 cases. This could turn out even better than the 2012, although the final judgment will have to take place from bottle. An amazing, inky purple color offers up notes of pen ink, white flowers, blueberry and blackberry liqueur. Nicely coiled, its tense, but rich and extracted palate is full-bodied with layers of concentrated fruit, well-integrated wood, acidity and tannin, and a finish of a good 40-45 seconds. This stunner should hit its prime in 5-6 years and last 30-40 years.

The Grande Noirceur (Great Darkness) is an intense and dense black beer with strong roasted flavours. Its imposing bitterness is balanced by the presence of malted, caramel notes. The high alcohol content is well integrated and discreet, well suited to this beer’s complex nature.

This stout style, high in alcohol and bitterness in order to favour preservation, was originally brewed to support the long and arduous voyage necessary to export the beer from England to Russia. The word Imperial comes from the fact that the beer was specially brewed for the Russian tsar’s court.
The name of this beer refers to the Prime minister Duplessis political era (1945-1960) when the Quebec government was under the strong influence of the church and willingly kept the inhabitants into ignorance and away from progress.
