A.D. Laws Whiskey House is a grain-to-glass distillery in Denver, Colorado that applies a “there are no shortcuts” philosophy to each batch of whiskey produced. Each batch is milled, cooked, fermented, distilled, and aged on-site, utilizing heirloom grains from family-owned Colorado farms. The practice of open air, on-grain fermentation captures the essence of Colorado’s terroir while the copper pot- column still produces a robust, grain-forward style of whiskey that is aged in 53 gallon charred oak barrels for a minimum of three years.

The 2013 Brunello di Montalcino opens to a gorgeous garnet color that is both luminous and sultry. The bouquet takes a minute or two to reach cruising altitude. Once it does, it reveals wild cherry, rose hip, blanched almond and sassy licorice or spice. It is aged in large oak casks for 38 months, and the fruit is farmed organically. This is an absolute breakout vintage for Le Chiuse, and the wine already shows the textural richness for prolonged aging. Bravo!

Ed Kohl, Managing Director of ImpEx Beverages, Inc. has been invited to enter the esteemed Keepers of the Quaich Society. The induction ceremony took place on April 23, 2012, during the Keeper’s banquet at Blair Castle of Atholl Estates in the Highland region of Scotland. The Keepers of the Quaich is a Scotch Whisky society with membership by invitation only, founded to acknowledge those who have contributed to the Scotch Whisky industry. This prestigious honor was given to Ed Kohl in recognition of 17+ years of contributions to the industry. Kohl was chosen specifically for his ability to blend the old with the new. He has enhanced scotch awareness with his non-stop national tasting seminars, sharing his palate with connoisseurs and recently discovered scotch lovers. He uses modern social media venues such as Facebook and Twitter to keep regular fans posted on announcements and upcoming events. His use of social media venues also serves to attract a different demographic from the “traditional” scotch lovers and cultivates passion for whisky in a variety of age groups.

The tradition of keeping an infinity bottle is well known to whiskey collectors and aficionados around the world. Take the last ounces of each whisk(e)y bottle as you finish it, and pour them into a bottle you’ve set aside. Barrell Craft Spirits is honoring the Infinity bottle tradition in our own way by introducing the Infinite Barrel Project.


THE INTENT OF THIS PROJECT is to create an ever-changing whiskey blended from barrels of mature whisk(e)y. We began by selecting barrels for their flavor contribution and complexity and blending them in a larger single, or "Infinite" vessel.
AT EACH BOTTLING we’ll remove a portion of that whiskey and replace it with other barrels that will complement the remaining blend. We'll then repeat the process - bottling a portion and adding newly selected whiskeys each time.


HOW IS THIS DIFFERENT FROM THE SOLERA PROCESS?The Infinite Barrel contains fractions of many whiskey barrels in a single blend, while a solera ends up with fractions of the original whiskey in many barrels. Our objective is to create a unique blend for every bottling. The solera process, however, is designed to create a consistent product every time.

At its most basic, the solera process starts with a single barrel or group of barrels of a specific age. A fraction of the first group of barrels is put it in the second group of barrels, a fraction of that second group is put in the third group and so on. The solera process is designed and symmetrical. We think of our Infinite Barrel Project as a solera in reverse. It's unpredictable and asymmetrical, constantly evolving - even whimsical. We're certainly having fun blending it.
