1. What are your mash bills?
The percentages are as follows…
DHD Reserve Bourbon – 80% Corn, 20% Rye
DHD Reunion Rye – 100% Rye
Long Shot White Whiskey – 51% Corn, 49% Wheat
Rider Vodka – 100% Wheat

2. What is the age of your whiskies?
Our barrel aged whiskeys are drawn at 20-22 months. We test the flavor, color and proof at around 8-10 months, then at certain times after to ensure the quality is getting where we want it – color, flavor and proof.

3. What is the term of "Finished with wood pieces" mean on the back of your barrel aged whiskies?
We do a finishing process after the whiskey is drawn by smoking chunks of applewood and cherrywood to round the whiskey out. This process is not uncommon with a lot of distilleries, small batch and industrial. Some use spirals or even cut staves placed in the barrel for more wood exposure and to maximize flavors.

4. We make everything…
We mill all of our grains that are sourced between Missouri and Kansas for our corn and wheat, North Dakota, Minnesota for our rye because of the climate that it needs, more of a colder grain. Here is the breakdown:
1000 lbs. of grain --> 500 gallon mash tun --> 500 gallon fermentation tank (we have 10 of them) --> 500 gallon still (hybrid copper pot column still)


We are truly a grain to glass distillery.

5. Hand bottle and label all of our spirits. We also sign all of our bottles by batch number, bottle number and by Head Distiller Patrick Garcia.
The term batch on the bottle refers to the blending of a certain ratio of barrels based on duration, size and flavor to create the batch number you see on the bottle.

Laying there, staring up at the ceiling, head pounding, last night was a dim recollection. How did he get home? Was he alone? Looking to the left and right, the answer was yes, maybe. His head was full of ’rag water, bitters, and the blue ruin’.   His teeth felt like he’d been chewing aluminum and his breath smelled like a burning tractor tire. There was a wrenching knot somewhere between his liver and East St. Louis and he couldn’t be sure whether or not he’d wet himself. A yellow sine wave rang in his ears so loud it made his teeth itch and he was sure that if he touched his skin anywhere it would induce a rhythmic retching jag. Even in the face of all that, he found himself smiling at the realization that today represented the fresh breast of a new year- an undiscovered country- and also there was still one warm, half-full, flat redolent Hairy Eyeball on the nightstand. Yes-there is a God.

Sweet Sophie Granola Recipe
This was sent to me from Brian B. that many of you know worked at the store and sold wine to us for years.  

2 Tbsp Vegetable Oil
4oz TWCP Sweet Sophie Bourbon Barrel Aged Maple Syrup  ***
2 Tbsp Honey  
***
1 tsp Pure Vanila Extract  
***
11/4 c Rolled Oats
1/4c hulled Sunflower Seeds
4 Tbsp Sesame Seeds
1/3 c Pepitas    
***
1/2 c Almonds Roughly Chopped   
***
1/2 c Dried Fruit (Raisins, Cherries, Cranberries, Chopped Apricots, etc)
1/4 c Coconut Flakes

Pre-heat oven to 300.
Mix oil, syrup, honey and vanilla in large bowl.
Add all ingredients, EXCEPT Fruit and Coconut, and mix well.
Spread over 2 baking sheets and bake for 15 minutes.
Evenly distribute fruit and coconut over both sheets and stir to combine.
Bake for an additional 10-15 minutes until it is golden brown and crisp.
Spread to cool on Parchment paper and store in airtight container.
