2010 Chateau Virgile Costières de Nîmes Blanc...$11.99
Château Virgile’s white is truly a classic Rhône blend. The Roussanne, with peach and apricot flavors, gives the wine weight, texture, and body. Next, the Marsanne adds lively acidity, a hint of minerality, and citrus fruit flavors. Finally, the Viognier adds tropical fruit flavors to the wine, as well as beautiful, floral aromatics. This is a great wine for just about any type of shellfish, especially seared scallops.

2011 Domaine Charvin Cotes du Rhone Rose…$15.99
Domaine Charvin Cotes du Rhone Rose delivers perfumed notes of cherry blossom, rose petal, and orange rind with medium body, racy acidity, and a clean, dry finish.

2009 Le Plan de Pegau Cotes du Rhone…$17.99
The Plan Pegau Lot 2009 (all from the 2009 vintage) is a blend of Carignan, Merlot, Syrah and Grenache. It exhibits more beef and texture than previous examples, no doubt due to better raw materials. Chewy and heady with lots of garrigue, pepper, lavender, herb and spice characteristics, smelling this wine is like walking through an open air Provencal marketplace.

2010 Domaine de Servans Cotes du Rhone…$12.99
Domaine de Servans produces a truly classic Côtes du Rhône. The nose is perfumed with bright red raspberry, and cherry aromas. In the mouth the wine is dominated by the Grenache which produces dark black cherry flavors, with hints of black pepper and garrigue spices. The finish is balanced and silky with soft velvety tannins. This a fun, versatile wine that is a great match for grilled meats, burgers, back-yard barbeque and even pizza

2008 Chapoutier Bila-Haut Occultum Lapidem Cotes du Roussillon Villages…$19.99
Consistently high-toned evocations of flowers and garrigue herbs as well as a mouthwatering salinity add to the allure and the finish here will leave your tongue delightedly tingling and panting for repeat sips. 2009 Saint Damien Gigondas…$29.99
he 2009 Gigondas Vieilles Vignes (a blend of 80% Grenache and 20% Mourvedre from 40-year-old vines) is a rich, full-bodied Gigondas with notes of crushed rock, boysenberry, black raspberry, camphor, and a hint of pen ink. The wine displays terrific fruit on the attack, a medium to full-bodied mouthfeel with good acid, superb purity, texture, and length.

2009 Anne Gros et Jean-Paul Tollot Minervois "Les Fontanilles"…$29.99
This cuvée is made of 4 grape varieties, coming from soils dominated by Assignan sandstone, which face north and west. These small plots, surrounded by scrubland, pine trees, thyme, rosemary and cistus, comprised of: 20 year old Grenache,, 20 year old Syrah, year old Carignan, 40 year old Cinsault.

2009 Domaine Grand Veneur Chateauneuf du Pape… $39.99
The 2009 Chateauneuf du Pape (a 3,500-case blend of 70% Grenache, 20% Syrah and 10% Mourvedre from nearly 70 year old vines) exhibits abundant notes of sweet cassis, licorice, kirsch, garrigue and tobacco leaf in a full-bodied, layered, opulently textured style. This hedonistic turn-on should continue to drink well for a decade or more.

Pasta recipe with wine suggestions


Pancetta, Onion, Parsley and Pea Pasta Sauce
(Adapted from Marcella Cucina Harper Collins Press)
This is one of my family’s favorite week night pasta sauces and can easily be made the night before. The original recipe does not call for peas, but for those of us with small children it’s nice to have something green you can sneak in with all of that lovely pancetta and onion flavor.

4 ounces Pancetta 
(I prefer the Salumi Pancetta because the intense seasoning of this rolled bacon effectively acts as your salt and pepper for the dish)

3 Tablespoons Extra Virgin Olive Oil  
    *(Available at The Wine and Cheese Place)

4 Medium or 2 Large Onions sliced thin

3 Tablespoons Fresh Chopped Parsley (either flat leaf or curly, preferably what you have in your herb garden)

1 Cup Frozen Peas (if making the sauce ahead add peas while you re-heat do not make the peas the night before)

½ Cup finely grated Parmigiano-Reggiano

Salt and Pepper to taste

Suggested pasta: Penne, Orchietta, or Fusilli (Available at The Wine and Cheese Place) (you want a pasta that will allow the sauce to cling easily so you don’t miss any of the amazing caramelized flavors from the onions and pancetta)

  1. Put the pancetta and olive oil into a medium skillet and turn heat to medium cook for 3-4 minutes turning so the pancetta becomes browned but not too crisp.
  2. Add onions a pinch of salt (to help release the sweet juices of the onion that form the base of this sauce) turn the onions a few times to coat turn the heat on low, cover and cook for 30-40 minutes turning occasionally to evenly caramelize the onions.
  3. *If serving immediately add peas and cook until heated through about 5 minutes.
  4. Stir in parsley.
  5. Drain cooked pasta and toss in the sauce, swirling in the parmesan as you toss.
  6. Plate and serve.

*If making the sauce the night before add the peas during the re-heating process in order not to over cook and end up with mushy peas.

Tasting Notes: This is a very rich and silky Minervois. The nose is full of briar fruit and spice, with hints of sandalwood and white pepper. In the mouth the wine is lush with black raspberry, cherry, and garrigue notes. In contrast to the rich flavors in the wine, the finish is soft and silky, with extremely ripe tannins. This is a very versatile wine that would be a perfect compliment to most grilled meats, and barbeque dishes.

Tasting Notes:  A light-bodied wine, intensely crisp and vividly fresh, it offers complex aromas of strawberries and red currants, with a hint of quince.  Serve With: As an aperitif it is the perfect warm weather gulper and also pairs well with a wide range of salads, seafoods, lighter dishes and grilled white meats and poultry.

    Frangelic Mountain Brown To Be Founders Brewing Co.’s Second Backstage Series Release in 2012 Grand Rapids, Michigan, April 19, 2012 - Founders Brewing Co.’s Co-Founder and Vice President of Brand & Education, Dave Engbers, announced today that Frangelic Mountain Brown would be the next release in the brewery’s 750mL Backstage Series, with availability beginning in July. 
     Part of what makes Founders Backstage Series so much fun, for both the brewery and consumers, is the period of speculation before the next release is announced. But the purpose of the series is to bring some of Founders’ most sought-after beers, which have been available primarily in the taproom and at a few select events, to a much larger audience. Frangelic Mountain Brown will be the fourth release in the series, joining Blushing Monk and Canadian Breakfast Stout from 2011 and Curmudgeon’s Better Half, which was released in February of this year.
     Frangelic Mountain Brown is the quintessential taproom “one-off” beer: Founders’ brewers created the Mountain Brown series for their taproom in Grand Rapids in 2007. Frangelic Mountain Brown is the 16th iteration in the series of popular brown ales—and it likely won’t be the last. The singular characteristic of this beer comes from the use of hazelnut coffees in the brewing process. The beer has distinct aromatics with sweet and nutty flavors beautifully balanced. Founders is known for its beers made with coffee (i.e., the Breakfast Stout series), but this is both the brewery’s first brown ale and its first beer brewed with hazelnut coffees to be bottled. It clocks in at 9% ABV. 
     “The goal of the Backstage Series is to allow those beer enthusiasts who don’t have the ability to make it to our taproom an opportunity to experience some of the beers that, historically, have been limited to our taproom and a handful of high exposure events,” Engbers said. “Although these beers are not brewed in large volume, it is our intention to distribute them to all of our markets.” 
     The next beer to be released in the series later this year will be a celebration of the brewery’s fifteenth anniversary, though the style is yet-to-be revealed.

This is one of the top rated and one of the few "Highly Recommended" Lump Charcoals by the Naked Whiz's Lump Charcoal Database




"The charcoal is quite easy light, taking 3 sheets in our chimney starter test. This is low compared to other charcoals. There was very little sparking and no popping while the charcoal burned in the chimney starter. The smoke had the classic smell of American hardwood charcoal.


In our maximum temperature test, the charcoal burned at 980 degrees which ranks very high compared to other charcoals. The fire spreads quickly and there was very little sparking and no popping while the charcoal was burning full tilt. When using a MAPP torch to start the charcoal, we did observer moderate sparking AND popping, so you should exercise care in using a torch to start this charcoal.


Finally, in our burn time test, Dragon Breath burned a very long time ranking Very High compared to other charcoals. In fact, it is one of the longest burning charcoals we've encountered. The ash production was Low compared to other charcoals.


In conclusion, we were very impressed with this charcoal. It is easy to light, has that great American hardwood smell, burns hot, burns long, and produces a low amount of ash.
