A portion of the proceeds from Brave Noise will be donated to our friends at Safe Connections, an incredible St. Louis based organization whose mission is to reduce the impact and incidence of relationship violence and sexual assault through education, crisis intervention, counseling and support services. Stout aged in a blend of Blanton’s and Willett Bourbon barrels with strawberries. This bottle is the result of trials in the utilization of specific fruit in barrel-aged stout. The barrels we chose were aged between 13-16 months and represented a lower ABV base stout that we initially intended for future barrel blends. After trials on strawberries, we went with what we felt best represented the marriage between stout, barrels, and strawberries, leading to the strict use of this specific barrel base due to its already natural bright strawberry like notes with a light vanilla like oak background. This stout is sweet but does NOT contain lactose.

Grape: Cabernet Franc
Cabernet Franc is a black-skinned French grape variety grown in most wine producing nations. The variety is most famously known as the third grape of Bordeaux and can be found in many of the world’s top Bordeaux blend wines. Cabernet Franc most commonly appears in blended red wines, where it adds herbaceous accents of tobacco and dark spice.

Cabernet Franc is commonly compared to Cabernet Sauvignon, which is not without justification; the Cabernet Sauvignon variety is the result of a cross between Cabernet Franc and Sauvignon Blanc. (Recent DNA profiling has also shown that Cabernet Franc is also one of Merlot's parents). But in the vineyard, Cabernet Franc ripens at least a week earlier than Cabernet Sauvignon

Cabernet Franc prefers cool, inland climates such as the Loire Valley. The towns of Chinon and Saumur-Champigny are important historical bastions of varietal Cabernet Franc wines, which are prized for their ripe berry and spice elements. Lighter examples from these appellations generally exhibit graphite and red licorice notes, with darker wines showing more cigar and leather aromas.

Luccianus is the name of Gallo-Roman origin designating the town of Lussac and its vineyard dating from the 4th century. This 100% Cabernet Franc is produced from the estate oldest vines of 100 years of age and is a return to ancestral aging techniques. The amphora aging gives out a very expressive wine with a superb aromatic radiance and very silky tannins all without a woody note.
The wine shows a beautiful deep purple color. The nose is complex and rich with intense notes of fruits and spices. The palate is round and powerful with silky tannins.

WINEMAKING: Manual harvest in the morning to preserve the freshness of the fruit. Maceration at 8 ° C for 5 days to extract the fruit without moving the harvest. Short maceration and fermentation in indigenous yeasts at 24-26 ° C with very little intervention on the wine. 20% whole clusters.
TASTING: On the nose there is a mixture of fresh red fruit, mint and violet. The wine expresses the liveliness of Cabernet Franc, both ripe and fresh from the Bordeaux clay-limestone terroir. On the palate, there is a good acidity which gives length to balance the sweetness and the roundness of the fruit.  The estate will be full organic status in 2022 and biodynamics by 2023

The elegant, spicy, peppery and floral 2018 Cabernet Franc contains 10% Malbec, as these varietal bottling are rarely 100% varietal. It has intense and pungent flavors reminiscent of freshly cracked black peppercorns and wild herbs. The ripeness is contained, and the wine has a surprisingly low pH that provides very good freshness and a vibrant palate, more so given the very fine tannins and the tasty flavors that lift up the finish. Superb Cabernet Franc at an unbeatable price. 26,000 bottles produced. It was bottled in July 2019 after 15 months in centenary oak foudres.

Ron Colón’s Salvadoreño RUMRYE

Ron Colón’s Salvadoreño’s journey started in 2018 with founders Thurman Wise and Pepijn Janssens. The idea to create their own rum brand had been part of their conversations for over a year. During 2018, their job took them on a 22-day, 16-country barhop across Latin America, and it was during this trip that El Salvador captured their attention. El Salvador is the smallest country in Central America, famous for magnificent volcanoes, world-class surf spots, beautiful coffee and fine sugar cane. And so, the story began, a rum passion project with origins in El Salvador and the ambition to create a high-proof rum designed with bartenders in mind.

WITH RUMRYE WE BRIDGE THE HISTORICAL WORLD OF RUM AND RYE WHISKEY
There was a time when rum was the most popular spirit in America. However, when new heavy taxes on molasses were introduced in the mid 1700s it caused almost immediate decline in the rum industry. The gap that rum left gave space for a new spirit of choice. By the late 1700s there were thousands of small whiskey distilleries in Pennsylvania, Maryland and the surrounding states. Rye was the grain of choice and rye whiskey rapidly grew in popularity. Our aim is to blend these two worlds with RUMRYE, creating a spirit that is a 50/50 split between rum and rye whiskey, showcasing both spirits side by side and creating a new category.

The INGREDIENTS
Ron Colón Salvadoreño Dark Aged Rum
Ron Colón Salvadoreño rum is made from a special blend, creating a complex flavour palate. The blend includes a 6-year-old Salvadoran rum from Licorera Cihuatán, aged and unaged pot-distilled rums from Worthy Park Estate, Monymusk and Hampden distilleries in Jamaica. By combining column-distilled and pot-distilled rums, the overall flavour offers contrasting characteristics that interact to create something quite unique.
2017 American Straight 100% Rye Whiskey 
A 4-year old straight whiskey produced from 100% rye to showcase the warm and rich spice of the grain. Aged in a charred new oak container, barrel char level was #4 Char on the Staves and #2 Char on the heads. The overall flavour is bold with distinctive honey like texture, fresh mint and floral notes.
TASTING NOTES
Nose
Tropical fruit with sticky banana, pineapple, fresh mint and warm honey and a hint of spice. 
Palate
The palate is bold, with notes a candied fruit, orange blossom, rich, bright and distinctive spice of a classic rye balanced with the natural sweetness in the rum. The finish is dry, with notes of citrus and soft mint.

All the grapes are harvested by hand, to preserve all the aromatic richness, purity and freshness of the grape variety. This Gewurztraminer expressess the typicity of the grape variety. Gewurztraminer is the most aromatic of Alsace wines. With its aromas of rose, lychee and spices, and covers the palate. Soft, it goes well with foie gras, a fruit-based dessert. It goes well with spicy dishes or full-bodied cheeses.
2021 Château Virgile Costières de Nîmes Rosé...$12.99 / 750ml
Grenache 80%, Syrah 20%
The grapes are hand-harvested at night to preserve their freshness, and are then de-stemmed before undergoing a short 12-hour maceration in temperature-controlled stainless steel tanks. Beginning in 2009 Serge and Thierry have progressively increased the percentage of Grenache from 60% to 80%. The result is dramatic. Though they have always made elegant, balanced rosés, the wines have become increasingly perfumed and silky.
Tasting Notes: Delicate aromas of wild strawberry and red cherry dominate the nose of this beautiful rosé. The wine is bright pink with a magenta tinge in the glass. The strawberry and cherry notes carry through to the mouth, where they are complemented with hints of red raspberry and refreshing minerality. Château Virgile produces a very versatile rosé, crisp enough to drink on its own, but flavorful enough for a meal.
2020 Château Virgile Costières de Nîmes Rouge...$11.99 / 750ml
Syrah 50%, Grenache 30%, Mourvèdre 10%, Marselan 10%
Tasting Notes: Château Virgile is a lush and concentrated example of a Costières de Nîmes. The nose is intense with black fruit aromas complimented with hints of garrigue spice. In the mouth the wine is dominated by dense black cherry flavors from the Syrah. The Syrah is complemented by hints of black pepper and red cherry notes from the Grenache. The Mourvèdre helps to provide the ripe tannins that give this wine its structure. Now, for the first time, the addition of Marselan, softens the wine, giving it a lush, juicy character. This wine is ideal for barbeque, grilled meats, or simply burgers on the grill. Enjoy
