Hi! We’re Katy Perry and Morgan McLachlan, the co-founders of De Soi. And we teamed up to make a more considered choice for happy hour.
As creative professionals and busy moms with a shared love for a spritz, we wanted a drink that was bubbly and delicious, but that didn’t get in the way of early mornings and long nights. A drink that was truly fun to sip on, and still allowed us to feel present and engaged while taking the lead. A drink that married our passion for plants and better-for-you ingredients with big, bold flavor and feel-good adaptogens.
So we created De Soi, a range of non-alcoholic apéritifs, as a way to find pleasure without the proof. It’s an apéritif made for moments you don't want to forget, whether you’re laughing with friends over dinner or indulging in a solo toast to yourself. We hope you enjoy it as much as we do.

Great white Burgundy at a great price!
A blend of Chardonnay and Aligoté of which most is matured in stainless steel. It has a great Burgundy nose with a touch of minerality that comes from the Aligote. Great flavors of tart apples and a steely acidity finishes off this great wine. Highly recommended and very limited production
Nice pale robe, the nose is discreet yet intense with hints of white flower and honey. The wine expresses minerality and length on the palate with a nice balance of acidity on the finish.
This wine is a free blend of the two main white varietals of Burgundy: Chardonnay and Aligoté. The berries are sourced from different parts of the Burgundy region characterized by a large variety of different soils. Both grapes are vinified separately and blended before bottling, which gives them more control on the typicity of this wine.  This is a great aperitif wine but it also pairs well with pasta, cured meats, pork, chicken, rich fish like salmon and tuna as well as soft, mild cheeses.

An almost unique distillery in its absence of a mash tun, Teaninich is one of Diageo's giant workhorses, producing malt whisky for its range of blends.
In 2000 a hammer mill and mash filter – the only one operational in a Scottish malt distillery – was installed at Teaninich. The use of the technology, which removes the need for a mash tun, was to produce ultra-clear wort, giving a clue as to the Teaninich distillery character: a fragrant exotic grassiness that brings to mind Japanese green tea and coumarin-rich bison grass. Fat stills also add a distinct oiliness to the texture while not blunting any of its penetrating acidity.

Do Ferreiro Orujo de Galicia retains all of the subtle aromatics of white flowers and herbs that we associate with their exceptional albariño. The low yields of these incredibly old grapevines naturally limit the annual production. Do Ferreiro double distills their pomace in an alquitara, a primitive still most often used in Spanish brandy production.

Tasting Notes: This Orujo de Galicia is something of a wild child, full of flavor and nearly impossible to pin down. The vinous quality is clear, but presents in a way that feels distinctly Galician: mineral, verdant, and laced with iodine. Blooms of white flowers and orange peel in the finish are reminiscent of the Cepas Vellas albariño itself.

Pairing Notes: Orujo is traditionally served chilled as a digestif, but is also common in a carajillo, a hot coffee cocktail with orujo, espresso, and a hint of sugar (we like it with Ethiopian beans or other vegetal styles). In cocktails, Orujo pairs well with gin, dry vermouth, fino sherry, and Jacoulot Crème de Pêche.

The low yields of these incredibly old grapevines naturally limit the annual production.
