One of the most famous washed rind cheeses is Epoisses de Bourgogne.  It is made in the tiny village of Epoisse which is located in the department of Côte-d’Or in eastern France. The 2012 Quella (from a steep 9-acre vineyard in the eastern Vaca hillsides) has an opaque purple color, a gorgeous nose of white flowers, sweet blackberry and cassis fruit, and a touch of vanilla and graphite. Full-bodied, like its siblings, with great fruit extract, terrific purity and richness, and high but velvety tannins, this wine should also benefit from another 3-5 years of cellaring and keep for 30+ years.

2012 Bond Pluribus....$459.99
From a 7-acre parcel on Spring Mountain, the 2012 Pluribus Proprietary Red Wine exhibits the white flowers (acacia?), blueberry and black raspberry fruit that comes from this high elevation site. It is full-bodied but very tannic, backward, coiled and relatively tight, behaving in that sense more like a 2013 than a 2012. This wine is set for a long life of 30+ years. Forget it for another 4 or 5 years, then consume it over the following three decades.

From a 7-acre hillside vineyard overlooking Lake Hennessey, the 2012 Melbury, like its siblings, is 100% Cabernet Sauvignon aged in 100% new oak for a minimum of 24 to 28 months, then bottled unfiltered. The wine displays beautiful blackberry fruit, some charcoal, loamy soil undertones, forest notes, lots of spice, a full-bodied, multi-dimensional mouthfeel, and a super finish of 45+ seconds. Even in a vintage like 2012, this wine ideally needs 3-5 years of bottle age and should keep for 30+ years.

Ingredients
SERVINGS: MAKES 4
Béchamel
¼ cup (½ stick) unsalted butter
¼ cup all-purpose flour
1½ cups whole milk
2 tablespoons whole grain mustard   *** Try are new LocalFolks Stoneground Mustard
½ teaspoon freshly grated nutmeg or ¼ ground nutmeg
Kosher salt



Assembly
8 slices ½”-thick country-style bread
6 oz. ham, preferably Paris ham (about 8 slices)  *** Try our new Rosemary Ham
3 oz. Gruyère, grated (about 1½ cups)   ***
1 teaspoon herbes de Provence

Preparation

Béchamel
Melt butter in a medium saucepan over medium heat until foamy. Add flour and cook, stirring, until mixture is pale and foamy, about 3 minutes. Gradually add milk, stirring until mixture is smooth. Cook, stirring, until sauce is thick and somewhat elastic, about 4 minutes. Remove from heat and whisk in mustard and nutmeg; season with salt.
Do Ahead: Béchamel can be made 1 day ahead. Let cool; press plastic wrap directly onto surface and chill.

Assembly
Preheat oven to 425°. Spread bread slices with béchamel, dividing evenly and extending all the way to the edges. Place 4 slices of bread, béchamel side up, on a parchment-lined baking sheet; top with ham and half of cheese. Top with remaining slices of bread, béchamel side up, then top with remaining cheese and sprinkle with herbes de Provence. Bake until cheese is brown and bubbling, 10–15 minutes.
Do Ahead: Sandwiches can be made (but not baked) 1 day ahead. Cover; chill.

In approximately 1400 the brewery, Beguinage, and the “crankenhuys” (hospital) occupied one third of the city. As both a debut and a grand finale, it is a truly special bottling commemorating a 30 year career that involved making many acclaimed wines for exceptional producers, namely: Araujo, Dalla Valle, Etude, Viader, Shafer and Spottswoode. More than a piece of vinous memorabilia, this wine makes a parting statement about what Napa Cabernet can be, what it was and what it has meant to this acknowledged master of the craft. Both the 2007 and 2006 vintages are represented in this bottling, where the blend of both years together simply made for the most compelling wine.
Only 900 cases produced.

Took some time to get it ready, but we are ready now.

Yes, you can be a member of both (or just one or the other).  If you are a member of the Beer Club - you still need to sign up for the Whiskey (you will still use your same account number, we just need to add you to the whiskey club) (click here)


We have been using a Beer Reward Club for awhile and due to many requests we are now forming a Whiskey Reward Club also to allocate rare bourbon and whiskeys.    This will be the only way to receive Pappy Van Winkle, the Orphan Barrels, Four Roses Limited Releases, Buffalo Trace Experimental, Buffalo Trace Antique Collection,  Laphroaig limited releases, Balvenie Tun, limited Japanese Whiskey, and so on with other rare whiskeys.

Your phone number without the area code will be your account number.  After you sign up, you must give your phone number without the area code 
 (or last name) every time you check out at any of our stores.  Your name will appear on your receipt at the bottom.  If your name is not on the receipt you are not getting credit for the purchase.  Tell the checker immediately if your name is not on your receipt (or the wrong name is on your receipt)   

Here is how we will allocate Whiskey
We will eventually base the the allocation on the running previous 6 months sales.   We feel 6 months is a good amount of time to reward regular customers.  We also feel that is a good amount of time to let new people sign up and eventually get in on the allocations. 
  • It will be based on your total purchases: wine, liquor, beer, cheese, nuts...everything in the store.
  • The releases will still be a raffle method.  But it will be a weighted raffle.  The more you spend the better chance you will have as you will get more raffle tickets for each release.  Right now we print the report for the top 100, top 200, or the top 300.  It depends on how many bottles we receive.  We do a weighted raffle from those lists.  This is subject to change.
When will the system start:
  • Your previous purchases before the start of the program cannot be added to the club.  It would not be possible to add everyone's previous purchases.
  • Now is the time to start signing up.  Please sign up online.  We have noticed that if we do it in store, email addresses and phone numbers get messed up as it is hard to read people's handwriting.   And then we have trouble contacting people when they get allocated a rare whiskey.
  • We will let people accumulate purchases for at least 2 months before we start using the system.    We project that we will start using the system to release Bourbon/Whiskey August 1st.  This will give us plenty of time to work out any issues before the big fall releases like Pappy Van Winkle and the Antique Collection.
  • Once we get to December, we will allocate whiskeys on a rolling 6 months basis. 
Another way to get bourbons if you join
  • We will still put random rare whiskey out on the shelf for shoppers to find as we do now.
  • New feature:  Our new POS system allows us to  randomly select a Reward member -- when you check out, a message will pop up on our screen saying something like "you have been allocated a bottle of [insert super rare whiskey name here].  Again, as a way of rewarding people for shopping in the store.  This will be totally random and we will not know until you actually go to purchase something and this note will pop up.  This has been very successful in our Beer Reward Club.   You will only be allowed to win once every 6 months, then it will reset again.
More important information:
  • We will post updates when whiskey is coming and when allocation emails have been sent.  Follow us on Twitter, our blog, facebook for updates.
  • You will get an email if you get an allocated whiskey, you have 7 days to pick up or we will draw another name.
  • There is no fee to sign up, it is free to join.
  • VERY IMPORTANT:  After you sign up, make sure you give your phone number each time you check out. This is how your purchases will be tracked. Sometimes when it gets busy the checker might forget ask you. Just tell them when you are checking out you are a member of the one of our reward clubs.  You do not need to mention if it is beer or whiskey.   Plus,  we will have some holiday help that will be working at the register that might not ask as they will be part time and new. Your name should appear on your receipt, if it does not, tell the checker immediately because that means your purchases are not being tracked. 
  • You can join if you shop our online store also.
  • You can be a member of both of our reward clubs.  Beer Reward Club and Whiskey Reward Club - you can "order" free memberships to both online
