Aventinus ageing in the Ice cellar

"Historical Ice cellar of the Weisse Brauhaus, Kelheim, Bavaria, now used for the aging and maturing of our special "Vintage Aventinus" (250 cases per year started in early spring of 1999)" -- importer

"The Schneider brewery was established in 1872 when Georg Schneider purchased the right to brew wheat beer by King Ludwig II. Up to that point wheat beer could only be brewed by the Bavarian royal family in one of their "Weisses Brauhaus" (wheat beer brewpub). He purchased and brewed in the Weisses Brauhaus im Tal/Munich and the Weisses Brauhaus in Kelheim. This second brewery has been used to brew wheat beer since 1607 and is therefore the oldest continually operating Weisse Beer brewery in the world." -- Importer

The next great deal from Cameron Hughes

2007 Cameron Hughes Lot 115 Russian River Chardonnay....$8.99
Taste: The richest of our latest Russian River Valley Chardonnays, this wine features a brilliant gold hue and equally pretty nose of spicy apple, honey, and pears. Deliciously round from oak ageing, yet sprightly with great overall structure and balance. Finishes with pretty fruit and sweet oak notes. Absolutely delicious.

Cameron Confidential: A famous Sonoma winery approached us late last summer with an opportunity: They had contracted two ranches for additional growth but had been unable as yet to use the fruit. Rather than break the contracts they wanted to make the wines for us. With supply tightening on Chardonnay we leaped at the opportunity.

The house style of this producer is to produce a brighter RRV Chardonnay, with judicious use of oak and no malolactic fermentation. These wines are built to pair well with food, and this is evidenced by the producer's huge presence on US wine lists. This winery's production processes are second to none with hand-sorting, whole cluster pressing, and top-quality French oak barrel fermentations. 85% of this blend was fermented and aged 6 months in new French oak barrels and is one of three blends we assembled from the numerous blocks harvested from two Russian River Valley ranches. Compare at $25 – $30, which is where this producer's RRV Chard is priced.

Liederkranz is back!!!

In stock at Forsyth, come in for taste,

Liederkranz is back in stock again at Forsyth
We got it for the first time in 25 years last year -- now it is back again!!!!
Come taste this truly original American cheese today!!

Liederkranz is an American cheese that was created in the "Limburger style". After being sold a few times and problems with fire and other things, the production of Liederkranz ceased in 1985. I started at the store back in 1987 and never had a chance to try the cheese. But for years after I started, I had a million requests for this cheese that was no longer being produced. I am very excited to announce that Liederkranz is being made again and is now available in limited quantities around the midwest and at The Wine and Cheese Place.

Here is the full story:
Liederkranz is an American recreation of Limburger cheese, made subtly different by the use of a different bacterial culture for ripening....cow's milk cheese, with an edible pale yellow-orange tan crust, and a semisoft, pale interior with a mildly pungent flavor and distinct aroma....Liederkranz was created in 1891 by Emil Frey (1867–1951), a young Swiss cheesemaker in Monroe, New York....Frey named the cheese after a local singing society, a Liederkranz Club ("wreath of song"), perhaps the famous one in New York, or perhaps really just on a whim for its Germanic sound.

The Monroe Cheese Company, the original source of Liederkranz, passed to new ownership, but Emil Frey stayed on and followed Liederkranz production to Van Wert, Ohio, in 1926. In 1929 the company was sold to the Borden Company. Frey retired in 1938." -- Wikipedia

After changing hands a few more times, fire at the plant, and bacterial contamination, the last batch of Liederkranz was produced in 1985.

On March 24, 2010, DCI Cheese Company announced the company was reintroducing Liederkranz cheese to the market. The cheese is available at specialty retailers across the Midwest.

New Southern Tier

Southern Tier Farmer's Tan...22oz
Imperial Pale Lager
the hallmark of hard work
Neolithic humans evolved from nomadic hunters into a more settled agricultural society, changing life forever. The ‘founder’ crops they raised included wheat & barley. It is little surprise that the first examples of brewing appeared during this age.

Brewers owe much to that epoch. Similarly, we thank our farmer friends of today for cultivating the ingredients that are responsible for the beers we now enjoy. Their laborious days spent outdoors under the hot sun earn them respect, as well as a mark of distinction: the farmer’s tan. Yes, the inevitable red & white hallmark of hard work.

So, roll up your sleeves and turn the soil. Just be sure to chill a bottle of Farmer’s Tan to enjoy after work.

Salumi Artisan Cured Meats

These are some of the best salamis in the country....Salumi Artisan Cured Meats....come in ask for taste.

"Salumi Artisan Cured Meats in Seattle is the semi-retirement project of the father of TV chef Mario Batali. With a mission to cure meats like salami in the traditional Italian way - with more than a dash of innovation - Batali is doing for the salami industry what many artisanal American cheese producers have done for good stinky cheese: He's creating a great domestic artisanal product in a niche where really excellent offerings traditionally came from abroad." -- Jessica Thompson

A new load just arrived....
Come in and asked for a taste, all sliced fresh to order.

A couple of new ones arrived this time...
Da Vino Salami
Salami with Wine added
Salumi Pepperoni

Plus some of the old favorites....

Hot Sopressata
"A spicy pork salame with garlic. Intense color and slight bite." -- Salumi

Finocchiona Salami
"A traditional Tuscan Salami flavored with fennel with a rough texture from the hand-mixed pork. This is the customer favorite at Batali's store in Seattle" -- Batali

Mole Salami
''We developed the mole because we have a large Spanish community here, but also because I wanted something totally different, broken away from Italian custom with the same concept of curing but a whole distinct new level of flavor. The dark-colored mole salami has the same homemade texture as the others, only with a deep hint of chocolate."-- Batali

House Salami
"Our house signature salame with a touch of ginger. Mild with a slight tartness at the end." -- Salumi

$6 Chardonnay!!!!!!!!!!!!!

AMAZING BARGAIN!!!!  Just got in a great closeout.

2008 Milton Park Chardonnay....$5.99

Compare to $13 on The Wine Advocate

"BEST OF TASTING" - "VERY GOOD"- The Wall Street Journal (July 09) "
"The color is a rich vibrant green. The nose shows lifted clean, sweet fruit of apricot and peach. The palate is medium to full bodied and exhibits predominantly peach and nectarine flavours, with cloves and cardamom evident from the use of a small amount of French oak. The wine finishes full and long with a nice balance of sweet fruit and creaminess." -- Importer

"For less than $20, we are not looking for a wine that will change our lives, but simply something that we’ll enjoy sipping. There were far too few of these, but there were some—our best of tasting, Milton Park, for instance. This truly tasted like fine Chardonnay, with a little bit of the oily texture that gives Chardonnay its velvety and sometimes sexy feel. For about $11, it’s a steal."

Sam Adams Utopia coming to The Wine and Cheese Place

gone

.
Info from Sam Adams website:
Sweet fire, with a rich malt and wood complexity.

Truly the epitome of brewing's two thousand year evolution, Samuel Adams Utopias® offers a flavor not just unlike any other beer but unlike any other beverage in the world. The 2009 release is a blend of batches, some having been aged up to 16 years in the barrel room of our Boston Brewery, in a variety of woods. We aged a portion of the beer in hand-selected, single-use bourbon casks from the award-winning Buffalo Trace Distillery. The latest batch also spent time in Portuguese muscatel finishing casks, as well as sherry, brandy and Cognac casks. This flavorful, slightly fruity brew has a sweet, malty flavor that is reminiscent of a deep, rich vintage port, fine cognac or aged sherry.

The history of Samuel Adams Utopias comes from the extreme beers of Triple Bock and Millenium that came before it. With those brews we began the exploration of aging beer in barrels for a different flavor contribution. With Utopias, we took that process to another level by introducing a variety of casks that the beer was aged in, each offering their own unique flavor. We also experimented with blending different vintages of beer to create its final character. The idea of aging in casks and blending was inspired by the techniques of whiskey makers in how they were able to craft the taste of their liquid from several of these elements. We expanded that notion to include casks of different origins. Applying these techniques to beer not only led to a completely unique beer, but also to a new taste experience.

The latest in our strong brews, Samuel Adams Utopias has been brewed in three small limited batches to date, growing stronger with each batch. The first batch which was released in 2001 topped out at 24%ABV, for the fourth batch in 2009 we reached 27%ABV. Each batch was only released once in limited quantities.

Samuel Adams Utopias was brewed at a very high gravity using a wide variety of malted barley and a touch of maple syrup. It was then aged in a blend of scotch, bourbon, port and cognac casks for up to 10 years.

Flavor: A unique flavor of vintage port, old sherry and fine cognac. Layers of dark fruit, wood and vanilla.
Color: Ruby black
Original Gravity: 40° Plato
Alcohol by Vol/Wt: 27% ABV - 21.31%ABW

Salvador Dali....

Salvador Dali labels.....

2004 Bodegas Altanza Lealtanza Rioja Reserva Miro...$61.99 / bottle
3 different labels
"The 2004 Lealtanza Reserva Spanish Artist Collection features a gorgeous Salvador Dali painting on the label attached to the heavy, custom-made bottle. As with last year’s Miro label, the wine stands up to the quality of the art work. The Tempranillo grapes were sourced from 75+-year-old estate vineyards and aged for 18 months in new Allier French oak. Opaque purple-colored, the wine features a splendid perfume of wood smoke, vanilla, fresh road tar, mineral, spice box, black cherry, and blackberry liqueur. On the palate the wine is obviously youthful yet elegant. There are layers of spicy black fruits, ripe tannin, excellent balance, and a long finish. Give it 5-7 years in the cellar and drink it through 2030."
Rated 93/100 The Wine Advocate

Torre Galatea Perelada Rose Cava "Salvadar Dali"...$28.99
"Visitors to Salvador Dalรญ’s visitors house in Port Lligat were always greeted with a glass of Castilla Perelada Rosado cava. Castillo Perelada has joined forces with the Fundaciรณn Gala-Salvador Dalรญ to create a cava to commemorate this fact. The Torre Galatea that gives its name to this cava is one of the most identifiable images in Dali’s universe. Dalรญ and Miguel Mateu, founder of our bodega, were prolific correspondents over the years, and the Dali-style typography used on the label originates in these letters." -- importer

"After it had been baptised and decorated by Salvador Dali, Torre Galatea was to become the painter's last residence and, later, part of the museum and the foundation that bear his name.  The enigmatic ants which run over so many of the surrealist genius masterpieces now also surround the bottle of Cava Brut Rosado Torre Galatea" -- bottle.
