San Marzano Tomatoes - the real deal.

Not all tomatoes are the same.  Be careful when you buy "San Marzano" tomatoes, you might not be getting San Marzano tomatoes.

Look for cans that have the "DOP" designation.  If it does not have this on the can, you are not getting San Marzano Tomoatoes!

What are DOP tomatoes? 
DOP  "Denominazione d' Origine Protetta"
According to Wikipedia, the purpose of the DOP mark (or Protected Designation of Origin [PDO] in English) "is to protect the reputation of the regional foods and eliminate the unfair competition and misleading of consumers by non-genuine products, which may be of inferior quality or of different flavor."

Why bother? Imagine you're a tomato producer (or wine- or cheese-maker): There's a significant economic benefit in trumpeting the unique qualities and flavors of your product — and therefore in protecting the very notion of what defines that product.

In the case of DOP tomatoes, the regulations that define them designate, among others:

  • What strain of tomato they are
  • Where in Italy they can be grown
  • How they are to be grown
  • The size, shape, and color when harvested
  • That they be harvested by hand
  • That they are peeled when packed

As we celebrate the 15 year anniversary of Oskar Blues Grill & Brew we begin canning our home brewed Root Beer we’ve been serving in our funky little restaurant locations for years. The Root Beer is named in tribute to Brian Stiff, a Lyons local and father of two who unexpectedly passed away on February 11th, 2012. “He was one of our bike riding buddies,” Katechis said. “He lived up in Lyons, and it’s just an awful, awful story.” Stiff died unexpectedly earlier this year at age 41. Since then, Katechis said our friends in Lyons have been looking for ways to help his widow, Julie, and two young children (Kevin and Brandon) and canning the root beer, with a portion of the proceeds going to the family, is our way to do that.

This will go through the BRC, it will be about half as many bottles as the Merci.  So it is much more limited.

Our Barleywine was brewed with American malts and hops, but fermented with a strong English Ale strain. So far, 14% ABV Barleywine has been aging for ?? months in a Wine and Cheese Place Blanton's barrel. Rich mahogany in color with tawny port aromatics and smooth vanilla, graham cracker finish.

Rodolphe Le Meunier "the Jimmy Page of the cheese world"




"Rodolphe Le Meunier, as we have mentioned, may be the Jimmy Page of the cheese world, a third-generation affineur who won the title of Meilleur Ouvrier de France, which is kind of like the Olympic gold medal for French cheesemongers and other craftspeople, at an age where most of his peers were still learning the difference between a Langres and a Saint-Marcellin." - The L.A. In 2007, he was named both the best cheesemonger in France and the world’s best cheesemonger by different organizations. Rodolphe Le Meunier is an expert cheesemonger that purchases young cheese from quality producers when the cheese is only about 2 weeks old.  He then takes the cheese back to his facility in the Loire Valley and ages the cheese to his specifications.  He then releases them when he thinks they are ready.

Tome Des Pictons Morbier
This is a delicious cheese aged by Rodolphe Le Meunier in is Loire Valley facility.    The cheese is from Jura and would go great with an Arbois from Jura or a great Cru Beaujolais.

Le Jeune Autize "Goats Milk Morbier"
"Visual drama is what first attracted me to Le Jeune Autize; it reminded me of a marble slab, with its black, cinematic vein of ash creeping through the lily-white flesh. Fashioned similarly to Morbier, only with goat's milk, Le Jeune Autize batted its eyelashes at me from across the room, its kohl eyeliner promising mystery behind those amazing contours.

I asked for a taste, and my first impressions were smooth and silky, with a nicely semi-firm body that gave easily under my bite. Oilier than most goat cheeses, Le Jeune Autize plays across the tongue joyfully without being overly capricious. There's a good taste of salt there, with a lightly funky layer that won't overpower those not into strong cheeses. The followup is decidedly sweet, and the rind has a pleasantly dusty, mushroomy flavor that smacks faintly of grass and fresh tobacco.

If you find this lovely lady in your local cheese shop, I highly recommend taking her for a stroll. And if they don't carry it, put in a request! I guarantee you won't regret a few minutes alone with this little beauty." -- Serious Eats


Meadow Creek Dairy - Virginia



Meadow Creek Grayson Cheese is back at our Forsyth Location - come in for a taste


Meadow Creek Dairy is a family farm in the mountains of southwest Virginia. At an elevation of 2800ft, the combination of pure water, clean air and deep soils produce an ideal environment for growing diverse, mineral-rich pastures. We have worked closely with our Jersey herd to give them the best care, develop the genetics best adapted to our farm, and in the process produce the highest quality milk.

We practice sustainable farming methods, managing the land and cattle for health rather than high production. Our primary tool to achieve this goal is intensive grazing management. This involves giving our cattle fresh grass every day; they are not allowed back on the pasture already grazed, allowing the grass to regrow and preventing overgrazing. We use no herbicides or pesticides on our land. Our only crop is grass. We are therefore able to provide excellent nutrition for the dairy herd while improving the health and fertility of our land.



Meadow Creek Dairy Grayson Cheese
Named after the county we live in, Grayson was originally inspired by our visit to Wales and Ireland in 2000. As soon as we made the Grayson, we realized how deeply suitable a washed rind style was to our rich seasonal milk – and how key the affinage was to its unique flavor. It took years of trial and error, several more trips to Europe, and the building of a new cellar before the Grayson came fully into its own, but the result has been more than worth it: a cheese that both complements our milk and reflects the terroir of our cellars.
Tasting Notes: Made as a square wheel, Surface ripened at least sixty days in our cellar, Grayson finishes with a reddish-orange rind and a golden paste. The texture is supple and fudgy, becoming silky as it warms; the rich, beefy paste is slightly sweet, with grassy or nutty notes and a solid earthy undertone.
Related Cheeses: Livarot, Taleggio, Reblochon
Serving Suggestions: Grayson is a very flavorful cheese which stands well on its own but is also excellent with bread or dried fruit. It pairs well with a full bodied white and is assertive enough for a medium red, but we feel Grayson is at its most excellent served with beer.

Flavor profile: Rich, lemony, fresh
Skyr is an Icelandic cultured dairy product, similar to strained yogurt. It has been a part of Icelandic cuisine for over a thousand years. While Greek yogurt derives its thick texture from being strained; Skyr is thickened with a few drops of rennet, which puts Skyr somewhere between a cheese and a yogurt. Traditionally, Icelandic Skyr was made with sheep milk, although with the modernization of Iceland’s dairy industry, most skyr is now made from Cow milk. Fortunatly, the Icelandic sheep at Star Thrower Farm were up for task!

Star Thrower Farm is home to a flock of pasture raised, purebred Icelandic sheep and their guardian llamas. Pastures are a combination of native grasses, wildflowers and alfalfa. Icelandic sheep do not give a large quantity of milk but do produce a very high quality milk that is excellent for cheesemaking.

While our beers are many and diverse, yet unified by overarching boldness, India pale ales are our undeniable bread and butter. We’ve brewed many over the past 18 years, from double-down bitter bombs to piney session sippers. Whether it’s big IBUs or a precise ABV, there’s usually a target we’re shooting for. The same is true of this, our latest IPA, but we gave zero thought to any acronyms. This one was all about packing as much unique and, you guessed it, delicious flavor into a glass as humanly possible, regardless of oomph or octane. This intensely citrusy, beautifully bitter beer is worthy of the simple-yet-lordly title of Stone Delicious IPA. Lemondrop and El Dorado hops combine to bring on a magnificent lemon candy-like flavor that’s balanced by hop spice. It’s unlike anything we’ve tasted in nearly two decades of IPA experimentation, and another lupulin-laced creation we’re excited to introduce to hopheads everywhere.

The Story:
As a young boy growing up in Northern New Jersey, I distinctly remember hanging out after school with my friends at our favorite local pizzeria. Unfortunately for me, there was one recipe the restaurant wouldn’t share: the one for their famous “Italian gravy,” that rich, hauntingly delicious tomato gravy that made everything it touched special. I would never forget its taste, but it would be decades before I learned its secrets.

After spending many years as an executive in the corporate world, I decided to swap my tie for an apron, and purchased that same legendary pizzeria, gravy recipe and all! I then soon realized that I was on to the next best thing…Jersey Italian Gravy! That’s when my wife chimed in and said, “Why don’t we jar and sell this stuff?” Good idea honey!

Today, I am happy to share with you that same Italian gravy I fell in love with years ago. Open a jar and I’m sure you’ll smell the freshness, taste the difference, and create some legendary dishes of your own!

The Revival is the first expression released from Glenglassaugh distillery after being mothballed for more than 20 years. The Glenglassaugh Revival has been matured in a balanced mix of ex-red wine and fresh bourbon casks, vatted and re-racked for double maturation in rich sherry casks. Bottled at 46%, non chill filtered and of natural colour, Revival is a stunning Highland single malt with a coastal charm.

Colour: Copper
Nose: Sweet caramel and toffee with notes of nutty sherry, milk chocolate and honey. Ripe plums, red berries and oranges. Caramelised sugar and earthy, charred oak.
Palate: Sweet, rounded and creamy. Oranges, plums, cherry and walnuts, chocolate, honey-mead, sherry and soft, spiced oak.

Horizons – the 12 year old, triple distilled BenRiach, is one of the most unique whiskies to be released by The BenRiach Distillery Company. Traditionally most single malt Scotch whiskies are distilled twice, however during the late ‘90s BenRiach experimented with some limited production runs of Triple Distilled whisky, and we have allowed the whisky to mature for a minimum of 12 years before giving you the opportunity to the sample the fruits of our labour.
TASTING NOTES
Nose: Roasted almonds and Brazil nuts. Hot, freshly buttered scones smothered in clotted cream. Sweet heather honey adds an extra luxurious contribution.
Colour: Bright lemon gold.
Taste:  Vibrant and wonderfully fresh. Huge nutty characteristics right from the start including peanuts, Brazil nuts and hazelnuts. A slice of sweet creamy oak and honey brings balance to the equation.

Second Edition
Heavily Peated / Port FinishUnusually for a Speyside distillery, we distill whisky from both styles of malted barley, non peated and peated, enabling us to capture the defining taste and aroma of peat reek in a few of our special bottlings.   Just like the original Solstice release, this BenRiach has been distilled from heavily peated malted barley, then matured in ex-bourbon casks before finally being finished in Tawny Port casks. This new malt is a superb marriage of peat and fruit, a worthy successor to our 15-year old edition.
The bottling strength for the Solstice 17 year old 'Second Edition' is 50%.
Tasting notes
Nose:  Fabulous aroma of stewed summer berries including strawberries, blackcurrants and red currants. The berry component is richly locked together by a muscular peaty blast. Latter traces of fortified wine and grape like qualities become apparent.
Colour:  Impressive colour spectrum, showing distinct rose characteristics, with a bright copper crest.
Taste:   Initial, dry roasted nutty notes flow over the palate. This advances to become a heavy peaty affair. Subtle notes of dried raisins, and candied fruit. Clean and very enticing with the dominant peat flavours lingering on the palate. Smooth and very long.

Galaxy Dry Hopped Pilsner
An evolution of the 'single hop' phenomenon. While Galaxy is featured on the label, the concept here is to showcase this headliner in it's greatest form possible, and if you ask me every hop is better when supported by others. So accents of Centennial & Sterling to widen the frequency and crank up the volume of bright tangerine, grapefruit, and fresh grass.

Label Design Notes: Because Mono showcases a primary hop and is centered on synesthesia, the typographic design ensures color dominates the eye. The word "mono" is hyphenated to acknowledge the dual nature of synesthesia - taste and color. The shade of orange used for this Galaxy edition is an homage to Massimo Vignelli. Mono is set in Futura Medium

India Pale Ale

Stillwater IPA?? WTF, right? Well truth be told we love a good IPA just as much as the next guy and besides, what's more contemporary then a American IPA? The lean base of Pilsner malt with the lightest touch of caramel support this high definition blend of 6 intricately layered hops gathered from around the world. Bright citrus, stone fruit, pine, earth, dank, crisp & fucking delicious.

Label Design Notes: Stereo's geometric pattern is reminiscent of early speaker covers and is also influenced by the textiles of Alexander Girard. The type is set in Helvetica Neue LT Std so that we could maximize the area used for the pattern on the label without compromising legibility of the mandatory text.

Label Design Notes: Surround's geometric pattern is based on a piece of tape used by an early analog computer that may have been used in multi-track music production during the 1960s. The type is set in Helvetica Neue LT Std so that we can maximize the area used for the pattern on the label without compromising legibility of the mandatory text.

The brew’s signature tartness comes from the fruit of the prickly pear, a cactus native to our brewery’s landscape that’s hearty, rugged and unmistakably unique - qualities we surely appreciate.
