I still remember the first time I was able to taste Etude Cabernet, it was the release of the 1997 Vintage and while we were only allocated 6 bottles, it was on my early wine drinking bucket list, so as the newly installed Wine Buyer at what was then just “The Cheese Place” on Forsyth I made the executive decision to sell myself a bottle. Needless to say the wine left an impression and having tasted the 2014 this past week, it seems they haven't missed a beat. This is seriously good Napa Cabernet--Aaron

The deep garnet-purple colored, the 2014 Cabernet Sauvignon Napa Valley is intense, expressive and open for business with exuberant blackberry and blueberry notes plus hints of cedar, dried herbs, violets, pencil shavings and menthol. Medium to full-bodied, the palate has a soft, rich decadence about it, with nice smooth tannins and just enough freshness, finishing with satisfying toasty notes.

Compass Box The Circle
The Circle is based around a parcel of fruity and creamy single malt from the Tamdhu Distillery in Speyside. This is supported by malt whisky from the Clynelish Distillery. A touch of peated malt whisky from an Orkney distillery and a small proportion of a French oak-finished blended malt whisky complete the recipe.

Compass Box Affinity
We have been blending Calvados with Scotch whisky at home and in our blending room for years. The flavour combination is classic: apples and spice riffing off dried fruits and vanilla. When we were able to source Calvados of the right quality, and in enough quantities, we decided to share our private experiments with the world.

This is a very unique rye whiskey that tastes like the flavors of Christmas.
The name is a play on Shakespeare’s A Midsummer Nights Dream. When we first tasted this special whiskey, it seemed perfect for a really cold night, hence, A Midwinter Night’s Dram.

100% Malted Barley aged 3 Years in Scotland and then sent to Jerez, Spain at 63% full proof and then aged 4 years in Spain.
The Overseas Malt line is comprised of a total of 8 casks, with one release per year. This first release is a single cask, cask #12, bottled unfiltered and undiluted in 2017.

Equipo Navazos and Nicolas Palazzi, in their quest to offer the spirits connoisseurs a chance to taste exceptional distillates, present "Oversees" Malt Whisky Navazzos-Palazzi. This whisky is made from malt grown and distilled in Scotland and has spent almost all its life in Spain, aging in casks that once contained Palo Cortado Sherry. It is bottled straight from "bota #12", a single cask, at cask strength.

It was 10 Years old at bottling, distilled in Spain from Spanish Malt. This 2017 bottling is sourced from the same batch of casks as Navazos Palazzi's previous Spanish malt releases. The spirit is rested at full proof in freshly emptied Oloroso Sherry Casks. This is the "Bota Punta", the cask at the beginning of the bottom row of barrels. The casks ages in a special way: due to its location it is often subjected to more air and light than the other casks in the solera. As well, it is more aerated, as the Bota Punta is the cask most often used to sample distillery guests. This 2017 release is one of 900 bottles, unfiltered, undiluted, and cask strength.

Crafted from neutral grain spirit distilled in Piedmont, Italy. The fresh spirit is then sent to Belgium, where it 's married with Spanish botanicals sourced by Navazos-Palazzi: Juniper berries, coriander, angelica, lemon peel, sweet orange peel and bitter orange peel. The spirit's proof is gently brought to roughly 60 before going into four single casks, which previously held first fino sherry, and then brandy de Jerez. After four years of rest, the first of these casks, Cask #55 has been bottled unfiltered for release in 2017

An opaque core with a red amethyst rim, the wine opens with ripe raspberry and blackberry, dark plum preserves and hints of black pepper and clove. An entry of heft, the palate is packed with blueberry and sweet black cherry along with touch of fresh herbs—thyme, savory and tarragon. Long on the finish, the ripe tannins, a dash of ash, and notes of black tea round out the wine.

One of our favorite Barolo's is back. We are excited to have scored 5 cases of the 2015 Massolino Barolo Serralunga.

It is rare indeed to find a top flight young Barolo that is ready to drink, but the Massolino Barolo d' Serralunga is just that. Sourced from 5 different Vineyard sites throughout Serralunga this wine shows the beauty of the vintage in its youth.



2015 Massolino Barolo d' Serralunga...$44.99
This is the bread-and-butter wine for the folks at Massolino, and great care is taken to make sure they get it right year after year. The 2015 Barolo is almost all fruit from Serralunga d'Alba (this township makes up 99% of the blend), with a tiny part from Castiglione Falletto. Fruit comes from five vineyard sites, including Briccolina, Collaretto, Broglio and Le Turne, all in Serralunga d'Alba. The tiny part of Castiglione Falletto fruit comes from the Parussi cru. The complex nature of the blend represents old-school Barolo tradition, and it works beautifully in a warm vintage such as this. (That Serralunga d'Alba's rich marlstone soil keeps the moisture of the vintage locked within.) This is a full and exuberant expression with a well-defined profile of spice, rusty nail, potting soil and truffle. Overall, this vintage is accessible, soft and delicious from the start.

Switzerland
The production of Appenzeller is highly regulated and has been produced for over 700 years!  The are only 4 cantons in northeaster Switzerland that can produce Appenzeller.  What makes Appenzeller different from other cheeses from Switzerland is that the rind is rubbed with an herbal brine before it starts to age.   The brine includes wine and may different herbs that are kept a secret.   Classic cheese that is great for melting and using in fondue also!

Fontina Fontal 
Italy - Lombardy region
Mild buttery cheese from Northern Italy.  One of the best melting cheeses as it does not separate when you melt it.  It was originally made in France and called Fontina but they were forced to changed the name to Fontal to protect the Italian Fontina Val'Aosta cheese.  Now Fontal is also produced in Italy.

This Bruichladdich Bere Barley was distilled in 2010 from a 2009 harvest, brought home by Peter, John, Magnus, Sydney and Duncan on the Orkney Islands.

Our barley must take its turn in a seven year farm cycle that also produces organic cattle, sheep, oats, beans, grass, carrots, market gardening and a megawatt of green electricity.
