    The second expression of Derrumbes is an elegant combination of Michoacán’s iconic Chino and Alto agaves and its unique ancestral distillation technique. Chino (Cupreata) brings mature fruit notes while Alto (Ineaquidens) complements with a delicate herbaceous character that resembles the pine forests that surround it. It is fermented under the red clay floor of the taberna in pinewood lined pits to protect it from low temperatures to be then distilled in Michoacán’s own Philippine-style stills made of wood staves and copper over direct flame. What you will experience is a fresh, nimble, nicely balanced spirit with a hint of melon flavor.

Firm and slightly oily with light lime, cucumber, sea salt, and herbal aromas and flavors; slightly bitter, leafy finish. (Santé)

Appearance
: Dark amber color in the bottle. If it was maple syrup, it would be a medium amber. It is a beautiful thing! On swirling, it leaves a very light coating on the glass which belies its viscosity. Sitting in the glass, it looks like a small puddle of sap or nectar.

First Impression: Very smoky and more understated than the others. Smells like a tin of just opened sobranie tobacco, with strong Phenol and smoke.

Taste: Dry and sweet at the same time somehow, with lime, leather, oil, and smoke, and a suggestion of mint. Resinous on the tongue, and mouth feel. It whispers down the throat, and then leaves a rather delicate burn considering the 80 proof, with a smoky spicy aftertaste like a really good tobacco and spicy notes.

Raicilla Mexicat

    Mexicat is the brainchild of Jorge Alvarez, who discovered raicilla while working in the tequila industry. He sees raicilla as the highest form of spirits distilled from agave.

    Mexicat raicilla is 100% agave Maximiliana, a large silvestran agave of unusual deep flavor, specifically a local variety known as lechugilla tipica (there are three main Maximiliana varieties: típica, pencas caidas, and pico de aguilar). Maximiliana looks like a giant cousin of the famous tobalá: they share a reputation for complexity.

    Mexicat has started a massive sustainability program with the Maximiliana. Its major fields are now 4-5 years old. Mexicat raicilla is now 80% wild agaves; that percentage will be reduced as the cultivated fields come on line.

    Every bottle has an individual hand-made huichol bead mask; people collect them. From Mascota in the Sierra Madre Occidental, double-distilled in copper at the destilería of 4th-generation José and Benito Salceda, agronomist brothers and raicilla pioneers deeply engaged in a large sustainability project cultivating agave Maximiliana (called lechuguilla). Flavorful and soft. Double distillation tends to show a smoother side of raicilla, and the 40% abv nicely balances the intensity of the wild Maximiliana. 40% abv

    This Ensamble is crafted from four agave plants; the Arroqueno, the Coyote, the Barril, and the Cuishe. The banana nose is balanced out by a dry, fatty mouth feel with intense flavors of pineapple, roasted agave and vanilla. The finish is a dark caramel with sprinkles of pepper and salt.

This is the masterpiece of which I am most proud, as is one of my sons after whom it is named. What makes this traditional kriek special is that it is brewed with whole cherries. Since real Schaerbeek cherries are scarce, Lindemans Brewery has found their perfect equivalence elsewhere in Europe. It is deep red in colour and its foam head is slightly pink. Very refreshing, this beverage is a perfect thirst-quencher which, thanks to its fizzy and tangy flavour, is ideal as an aperitif.

"My family was in the distilling business in St. Louis from the 1880s until Prohibition put them out of business in 1919. They sold whiskey they made under the name Blue Wing Whiskey. We found a copy of the original front label on the internet and my brother, who is an artist, was able to recreate it for use today.  C.H. Wittenberg Distilling Co. made both a bourbon and a rye. We focused on a rye. This whiskey is a blend of 60% rye, 15% caramelized rye and 25% smoked barley malt. I am collaborating with a small local distillery that makes several other fine spirits, Square One Distillery in Lafayette Square, to make the whiskey. 2018 Comte de Langeron Cote de Brouilly...$21.99
The appellation of Côte de Brouilly sits on the high slopes of the extinct volcano Mont Brouilly and is surrounded by the larger appellation of Brouilly. Cote de Brouilly is bigger and riper than regular Brouilly.
Gorgeous nose of rose petals, violets and a hint of dark roast coffee. On the palate, it has great body with a deep and generous core blueberries and ripe cherries. Drinks very well now but will age 4-8 more years. Very small production.
