Based loosely on Snow & Tell and inspired by our love of Rye on Rye, Scotch On Scotch, a new Smokestack Series Limited Release beer,
Stylistically speaking, Scotch on Scotch is an Imperial Scotch Ale aged on Scotch barrel chips. A massive malt presence is created by layering caramel and amber malts with just a touch of peat smoked malt for additional complexity. Brief resting on oak chips following primary fermentation allows Scotch On Scotch to coax rich woody, char and vanilla notes along with the essence of Scotch whisky into a hearty, warming beer, 
a liquid fireplace of sorts. Hopping with Magnum, Chinook and Northern Brewer hops contributes a spicy earthiness 
to Scotch On Scotch. Scotch whisky barrel chips were suspended in the aging tank in porous bags.

Pouring deep chestnut brown, Scotch on Scotch opens with aromas of fig and raisin punctuated by subtle oak and whisky character. A combination of caramel malts is accented by an addition of dark brown sugar during the boil resulting in suggestions of toffee and molasses and a slightly sticky mouthfeel. Aging on Scotch whisky barrel chips lends complexity and structure to Scotch on Scotch as it tapers to a rich, lingering finish featuring spicy/earthy notes provided by Northern Brewer hops.

At 9.6 ABV and 24 IBUs, Scotch on Scotch is a perfect accompaniment to strong aged cheeses, heavy meat dishes, bread pudding and a fine cigar in your favorite chair.

Boulevard Show Me Sour

Originally brewed as a collaboration between Boulevard’s Brewmaster Steven Pauwels and Side Project’s Cory King for Boulevardia 2015, Show Me Sour was inspired by their mutual admiration for low ABV, Belgian table beers.

Composed of a malt bill featuring our two-row pale malt, Maris Otter, Amber 50, malted wheat and Midnight Wheat, Show Me Sour was acidified using a process known as brewhouse souring. Brewhouse souring allows us to have precise control over the level of acidity in the wort, resulting in a final beer that’s exactly as sour as intended. Following primary fermentation, Show Me Sour was transferred to second use whiskey barrels for a minimum of two months, enough time to extract char, vanilla and oak characteristics with just a touch of spirit character.

After aging, Show Me Sour was pulled from the whiskey barrels and blended back with fresh beer to achieve balance in a unique offering that’s our play on a whiskey sour.
At 4.3% ABV and 12 IBUs, Show Me Sour is pleasantly puckering and an excellent choice alongside burnt ends, rum cake, salads with acidic dressings and soft cheeses.

We first brewed Liberty Ale in 1975 to celebrate the 200th anniversary of Paul Revere’s midnight ride. This revolutionary forerunner of the modern IPA introduced America to the Cascade hop and the nearly lost art of dry-hopping, a steeping process to infuse beer with bold hop aromas.

The wines are amazingly complex and while most will need a number of years in bottle to show their true colors yet each had it's own personality and flavor profile shining through in it's youth.
